About the wine: Jura's Chardonnay beautifully aged in barrel with oxidative characters. Ageing in 230 liters oak barrels as well as 600 liters demi muid for 3 years. Never topped off. Inlcuding 1 year under Flor.
Taste like: Textured, complex, saline, nutty characters and green apple. Hipps of minerality, intensity of flavour and lenght.
When to drink: Now or in the next 10 years after vintage.
Service: Serving temperature 10 degree celcuis, decant a few minutes if you can or simply use large Burgundy glass.
Food match: Comté! Otherwise fish quennelle, roasted white fish, chicken curry, rooster with morels mushrooms, or roasted lobster.
