If you like: Jura's Savagnin that taste like baby Vin Jaune! 

 

Taste like: Nuts, hazelnuts, salty cheese comte smell and oxidative fino sherry like notes on the noise. On the palate green apple, spices textured, driven, powerfull and fresh with a long mineral finish.

 

Area: L'Etoile (Jura)

Farming: Organic (non-certified)

Grapes: Savagnin

Vinification: Ageing in 230 liters oak barrels as well as 600 liters demi muid for 3 to 4 years. Mostly topped up. 

Occasion: Don't think twice and simply pull off the cork and share with your friends!

Food match: Old 36 months Comté! Chicken curry, rooster with morels mushrooms, or roasted lobster.

Service:  Serving temperature 8 to 10 degree celcuis, decant a few minutes if you can or simply use large Burgundy glass.

When to drink: Now or cellar up to 2025.
