About the wine: Jura's Savagnin that taste like baby Vin Jaune! Marl terroir. 20 years old vines. Hand harvested, later than other vineyards. Ageing in 230 liters oak barrels as well as 600 liters demi muid for 3 to 4 years. Not topped up. 

Taste like: Nuts, hazelnuts, salty cheese comte smell and oxidative fino sherry like notes on the noise. On the palate green apple, spices textured, driven, powerfull and fresh with a long mineral finish.

When to drink: Now or in the next 8 years.

Food match: Old 36 months Comté! Chicken curry, rooster with morels mushrooms, or roasted lobster.

Service:  Serving temperature 8 to 10 degree celcuis, decant a few minutes if you can or simply use large Burgundy glass.
