Appellation: AOC Chablis 1er Cru Montmains (Burgundy region)
Grapes: Chardonnay (100%)
Farming: Organic (not certified)
Aromatics: Complex notes of white flower, lime, ripe apple.

About the wine: The vinification is classic, with grapes pressed with a pneumatic press. Fermentation in stainless steel. No oak to better express the place. Ageing on lees for 12 months.
When to drink: Drink now or in the next 10 years after vintage.
Food match: Plenty of choice for food pairing, try classic matches such as oysters, sushi or goat cheese, or local fare like snails or pungent washed-rind cheeses.
Service: 12 degrees C in large Burgundy glass.
