Palate: Structured yet approchable Bordeaux, with juicy tannins and delicious black fruit concentration. Great depth of texture and length.
About the wine: Produced from 35 years old vines, that are then hand harvested and destemmed. In the winery, cool maceration for 3-4 weeks before vinification in tanks and then ageing in 300 and 400 litre old oak barrels for 12 to 14 months. Before bottling the wine stays 4-5 months in concrete tanks. No systematic filtration and only a small amount of added sulphur.
When to drink: Drink now or in the next 6-8 years after vintage.Service: 15 to 16 degrees C. Decant for 30 minutes and enjoy from a Cabernet glass.Food match: Roast lamb, classic steak frites and other meaty deliciousness!
