Appellation: AOC Chablis 1er Cru Fourchaume (Burgundy region)
Grapes: Chardonnay (100%)
Farming: Organic (non-certified)
Aromatics: Very expressive and charming on the nose, with notes of citrus, ripe mango, almond and white flowers.
Palate: Powerful and rich, a classic expression of this 1er Cru. The texture is delightful and fleshy, while still balanced thanks to the acidity of the terroir. Peach, pineapple and mango notes with a mineral, driven finish.
About the wine: A powerful 1er Cru Chablis. No oak used in the winery, to better express the place – vines on rich alluvial soil. It’s said that Fourchaume’s wines should be elevated to the Grand Cru level.
When to drink: Drink now or in the next 4-6 years.
Service: 8 to 10 C degrees in large Burgundy glass. We recommend giving the wine a bit of air in your glass.
Food match: Oysters and Chablis are a classic match. Otherwise, sashimi and other fish dishes, or pungent washed-rind cheeses.
