Tim Atkin Master of Wine: Vintage 2016, 93/100.
Category: Dry white
Appellation: AOC Chablis 1er Cru Fourchaume (Burgundy)
Grapes: Chardonnay (100%)
Farming: Organic (non-certified)
About the wine: Powerful 1er Cru Chablis. No oak to better express the place. Top 1er Cru vineyard, planted on rich soils with more alluvial soil. Intense Fourchaume’s wines are often said they should be elevated to the Grand Cru level.
Taste like: Very expressive on the noise, citrus, almond and white flowers. As usual powerful, charming and rich. Texture is delightfull and fleshy while still balanced thanks to the acidity of the wine. Peach, pineapple with a driven mineral finish. We recommend to give the wine a bit or air in your glass.
When to drink: Drink now or in the next 4-6 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Oyster, sushi, goat cheese, shellfish, fish, veal, snails, parsleyed ham, smoked trout and pungent washed-rind cheeses.
