About the wine: First vineyard planted by Clotilde in 1992. No one wanted to buy this land in the 90's: it was far too steep! Clotilde knew this place had potential because of the kimmeridgien limestone terroir usually reserved to higher level Chablis AOC. The only reason it's considered Petit Chablis is legally it's northern exposition. However this is truly a unique flavourful Petit Chablis amongs the very best at this level. No oak.
Taste like: On the nose, notes of white flowers (hawthorn, acacia) mixed with citrus and grapefruit with a mineral, flinty edge. The palate is lively, crisp with aromas of peach, white fleshy fruit and lovely roundness. Salty and mineral, this Petit Chablis has length and vibrancy.
When to drink: Drink now or in the next 3-4 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Oyster, sushi, goat cheese, shellfish, fish, veal, snails, parsleyed ham, smoked trout and pungent washed-rind cheeses.
