Farming: Biodynamic (certified)
Aromatics: Vibrant, ripe fruits, including peach, quince, white flower, green apple, fennel and a light smokiness.
Palate: A textured, fleshy wine, with red apple, quince, and nashi pear. Notes of spice with low sulphur added but still clean and complex.
About the wine: Natural winemaking. A ripe Chenin blend from the South, something unique and so delicious! Made partially from an almost extinct grape varietal, Bouyselet, only available from La Colombiere vineyard. Aged in foudre for 18 months. Low sulphur.
When to drink: Drink now or in the next 3-4 years.
Service: 12 to 14 degrees C.
Food match: Pork and apple, veal, smoked salmon, terrine, pâte, triple-cream brie, gruyere.
