Aromatics: Beguiling black fruits and forest berries with notes of black pepper, subtle whole bunch nods and elegant oak characteristics.

 

Palate: Generous and charming, this savoury medium bodied red is balanced and vibrant. The palate is a lovely mix of black fruits, strawberries and spice with elegant tannins and a long finish. 

 

About the wine: Made from 12 year old vines, lieu dit “Les Chateaux” in the town of Chignin, on a terroir of clay and silt limestone with just 15 cm of dirt before hitting rock! The vineyard is planted to a high density of 8000 vines per hectare, with the grapes harvested by hand and transported in small boxes to ensure they arrive in optimal quality. 

In the winery, the partly whole bunch grapes are slightly crushed by foot and go through cold maceration for 12-24 hours. Natural fermentation follows, alongside natural winemaking techniques, including a very small amount of sulphur, are used to complete the wine. It’s then aged in 600 litre barrels with an annual production of just 1,600 bottles. 

 

When to drink: Drink now or in the next 8 years.

 

Service: 10 to 12 degrees C.

 

Food match: Mimolette cheese, charcuterie and terrine, barbecued leg of lamb.
