2021 Domaine Louis Chenu & Filles Savigny-Les-Beaune 1er Cru 'Aux Clous'

Appellation: Savigny-Les-Beaune 1er cru ‘Aux Clous’ (Burgundy region)

Colour/Style: Red

Soil: Clous is synonymous with clos. This vineyard is cultivated at mid-slope close to the village and adjoins the cemetery next to 'Les Serpentieres'.  It includes different types of terrain, comprising of deep, red earth on the upper level and stony ground on the remaining three-quarters. The vineyard is perfectly south-facing.)

Grapes: Pinot Noir (100%)

Farming: Organic certified

Aromatics: Lifted and perfumed wines with notes of red fruits, red berries and red cherries. Very floral and elegant 1er Cru, with violet notes and subtle earthiness.

Palate: Medium bodied 1er Cru, red berries, spices, subtle yet deep and nuances wine on the palate. Even if this is probably the lighter and more red fruited of the 1er Cru they make, this is very complex and delicious. Aux Clous is soft, plush, charming and has been one of my personal favorites.

About the wine: 55 years old vines, 10,000 vines per hectare, 35 hl per hectare. An average of 4,000 bottles are produced each year. The grapes are hand harvested and destemmed, traditional vinification with natural yeasts fermentation, 10 days cold maceration. 2 weeks cuvaison. Aging for 12 months in old French oak barrels (20% new oak, cooper: Rousseau) Bottled after at least 10 months aging.

When to drink: Ready to drink now or in the next 6 years after vintage.

Service: 14 degrees, Pinot Noir glass.

Food match: Tartare, roasted chicken or lamb cutlets.
