Appellation: AOC Vin de Savoie

 

Grapes: 50% Mondeuse, 50% Persan

 

Farming: Organic, Biodynamic certified

 

Aromatics: Bright and vibrant ripe red and blackberries with black pepper, whole bunch spice notes and wild strawberries.

 

Palate: Juicy and spicy on the palate with notes of liquorice, red and black fruits, dark cherry, blackberry and strawberry. This lighter bodied red is playful with crunchy tannins, earthy spices and nice savoury finish. 

 

About the wine: This wine is made from 15 year old vines, lieu dit “Conservatoire - Montmelian”, on a limestone terroir. The vineyard is south facing, on a 40% slope with vines planted to a high density of 8000 vines per hectare. The grapes are harvested by hand, and transported to the winery in small boxes to ensure they arrive in optimal condition. Once in the winery, the 100% whole bunch grapes are lightly crushed by foot before being put through cold maceration for 12-24 hours, natural fermentation and winemaking techniques including the addition of low amounts of sulphur. Vatting for 2 to 3 weeks and then aged in 600 litres old oak barrels. 

 

When to drink: Drink now or in the next 10 years.

 

Service: 14 to 16 degrees C.

 

Food match: Mimolette cheese, charcuterie and terrine, barbecued leg of lamb.
