The grapes are harvested by hand, and transported to the winery in small boxes to ensure they arrive in optimal condition. Once in the winery, the 100% whole bunch grapes are lightly crushed by foot before being put through cold maceration for 12-24 hours, natural fermentation and winemaking techniques including the addition of low amounts of sulphur. Vatting for 2 to 3 weeks and then aged in 600 litres old oak barrels.
