Grapes: Folle Blanche (90%), Pinot Noir (10%)

About the wine: Micaschist and microgranites terroir. Hand harvested, 55hl per hectare, sorted twice. Natural first fermentation finshing in the bottle, 6 months on latte before being disgorged. No additon of dosage however their is still 4g/l residual sugar. Light filtration and low sulphur added.


When to drink: Drink now or in the next 2 years.


Service: 10 to 12 degrees C.


Food match: Oysters, mussels, shrimp, salmon in sauce or roasted chicken.
