Aromatics: Preserved mango and apricot, pineapple, hint of honey and saffron spices.
Palate: An off-dry wine, with perfectly ripe mango, pineapple and apricot carried through to the palate. Amazing texture and freshness. The finish is minerally and balanced, negs for another sip. The length is incredible with flavour lasting forever.
About the wine: A late harvest (no botrytis) off-dry wine. Au Capceu is one of the best off-dry French wines out there and we believe Jean Marc Grussaute is truly a magician. This wine easily compares to some of the best Sauternes and other sweet wine produced in the world. Au Capceu means “the top of the hill”, and refers to a single vineyard the grown in. After pressing, the wine spends three days on skins, before being aged for eight months on lees in barrel and foudre (5% new oak).
When to drink: Drink now or in the next 50 years.
Service: 10 degrees C. Decant if you can.
Food match: Foie gras with figs, spicy food, Roquefort cheese, pavlova, lemon tart.
