Its 32 hectares of vines lie in the northern Médoc, bordered by some of Bordeaux’s most revered names: Cos d’Estournel, Montrose, and Haut-Marbuzet. This proximity is no coincidence—the land here shares the same complex geology of gravelly topsoil and clay subsoils, lending structure, intensity and longevity to the wines. Like much of the Médoc’s finest terroirs, the vineyards overlook the Gironde Estuary, which acts as a natural thermal buffer, helping to create balanced wines even in challenging years. The wines of Château Le Crock are classic Saint-Estèphe, yet made with a modern touch. Expect richness, spice and structure, but also suave texture, supple tannins and a core of vibrant fruit. Their ability to charm in youth while ageing gracefully is a hallmark of the estate—a style that has been praised for its consistency and seductive appeal by Revue des Vins de France and Bettane & Desseauve. In 2025, this quality was formally recognised when Le Crock retained its prestigious status as a Cru Bourgeois Exceptionnel. Much of the estate’s success today can be attributed to the thoughtful leadership of Jonathan Servant, Vineyard Manager since 2015. With a deep respect for the land, he began introducing organic practices soon after his arrival, culminating in Ecocert organic certification from the 2025 vintage. Sustainability is not a slogan here—it is a practice woven into daily decisions, from the vine to the bottle. The vines themselves are a major asset. Averaging 50 years in age, with some of the most prized plots planted just before World War II, they produce smaller yields of highly concentrated fruit. This natural reduction in volume is embraced, allowing the estate to focus unreservedly on quality. The vineyard is planted to the classic Médoc quartet: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Blending these varieties offers flexibility and nuance vintage to vintage. For example, the 2019 Grand Vin—a wine that captured our attention for its depth, finesse and balance—was composed of 45% Merlot, 40% Cabernet Sauvignon, 10% Cabernet Franc and 5% Petit Verdot. In the winery, Cellar Master Yoann Lavigne oversees vinification with precision and care. Grapes are sorted and fermented in temperature-controlled stainless steel or concrete vats, allowing for gentle extractions that preserve fruit purity and site expression. Yoann works closely with Isabelle Davin, the respected oenologist at Château Léoville Poyferré, ensuring the same level of expertise and attention to detail found in their Grand Cru Classé wines. Ageing takes place over 12 to 15 months in a combination of French oak barrels—30% of which are new each year—and larger 500-litre casks. Recently, the team has introduced clay amphorae, a nod to innovation and the pursuit of freshness, allowing for greater aromatic precision and fruit clarity. We’ve long believed that Saint-Estèphe deserves more attention for the character, age-worthiness and elegance it can offer. Château Le Crock embodies all of these qualities with confidence and authenticity. From the vineyard's quiet evolution to the polished final blend in bottle, there’s a sense of thoughtfulness and restraint that speaks volumes. Many of the estates Mosaique Wines features have been in the same family for generations, acting as a loving custodian of their lands, passing on the knowledge of these ancient varietals to the winemakers who follow. It is this care and understanding of their terroir that has allowed us to enjoy full expressions of native regional varietals, produced with methods that have been tried and tested over centuries. Domaine Marius Bielle was founded in the 1940s by Damien’s grandfather, the domaine’s namesake, in Lalande-de-Pomerol. In this area, a grape maligned in other wine growing regions is seen as the king. Here, Merlot rules them all. DOMAINE MARIUS BIELLE Lalande-de-Pomerol, Bordeaux Organic The face of Bordeaux is changing. For a region so steeped in wine history, the pace is perhaps slower than other regions, however the Bordeaux our parents knew is quietly beginning to share the spotlight with a group of energised and talented new blood, including Damien Bielle of Domaine Marius Bielle. We met Damien around a table of laughter, pizzas and of course wine. This unique character was introduced to us by Olivier from Chateau Gombaude-Guillot, both young rising stars of Bordeaux who became fast friends. A passion for wine was an obvious shared connection, which has evolved into sharing a warehouse, however they also discovered a joint love of MMA fighting. Word is they’ve even fashioned a simple yet effective gym and a fighting ring in the warehouse! Domaine Marius Bielle was founded in the 1940s by Damien’s grandfather, the domaine’s namesake, in Lalande-de-Pomerol. In this area, a grape maligned in other wine growing regions is seen as the king. Here, Merlot rules them all. There are no blends, the wines are 100% Merlot, a ‘one terroir, one cepage’ approach championed by Burgundy. It is this approach that allows Damien to focus on making wines that highlight the nuances of this grape. Graduating as an agronomist engineer, he went onto oenology school in Bordeaux and then worked for some of the most prestigious producers in the world - Chateau Petrus (Pomerol) and Chateau Cheval Blanc (Saint Emilion Grand Cru Classe), before finally deciding to return to the family estate to create his own expression in 2020. The process starts on the famous Pomerol soils of sand and gravel, with 13 hectares of organically farmed vineyard (certified 2021). Weaved in between the oceans of surrounding vines, you’ll find the Domaine Marius Bielle ecosystem - breaking the monotony with trees, grass and flowers growing in the vineyard, freeing space to create orchards, vegetable gardens and allowing a few animals in the vines. When vintage rolls around, the grapes are handpicked and sorted, before maceration by infusion, and a slow natural fermentation with vinification occuring in stainless steel tanks. Like a painter in his workshop, it’s a moment of focus and presence - creating a sketch of the vintage. The ‘slow but steady’ ethos continues through to aging, using concrete tanks and amphoras to gently and softly raise his Merlot. Damien grew up in contact with les “vins d’avant”, an old school style of wine in the best of ways, those wines that took the time of aging in the cellar and then in bottles before being released. This has without doubt influenced his winemaking, insisting the wines reveal themselves in time, finding their complexity along the way and without the use of sulphur, filtering or fining. We are excited to be bringing these vibrant and contemporary wines to Australia. It’s Damien’s wish that these Bordeaux wines that are opened at tables filled with laughter and good friends, enjoyed with some quality meat on the barbecue, not to be intimidating and tasted in suits and silence. After selling to larger Cognac brands for years, the family bravely chose to create their own house style, one that focused on putting nature and mankind back at the heart of the Cognac making process. The result has been a resounding success, selling to scores of Michelin star restaurants and even the prestigious Elysée Palace. BOURGOIN COGNAC Cognac Organic conversion Cognac Bourgoin is a family estate located in the village of Saint Saturnin, in Charente. It has existed since 1933, when Leon Marcel Bourgoin traveled to the area for vintage and fell in love with his boss’s daughter. He then decided to put down roots in the area, literally, planting vines of Ugni Blanc that had arrived in France via Italy (there called Trebbiano) after phylloxera had decimated much of the local rootstock. Fast forward a few generations to the present and you’ll find Frederic, Leon Marcel’s grandson, humbly and proudly continuing the family’s Cognac production. This generation, however, has decided to shake things up. After selling to larger Cognac brands for years, the family bravely chose to create their own house style, one that focused on putting nature and mankind back at the heart of the Cognac making process. The result has been a resounding success, selling to scores of Michelin star restaurants and even the prestigious Elysée Palace. The Bourgoin Cognac journey is one which starts and finishes on the clay, limestone and alluvial soils of the estate. The grapes are grown organically, harvested, vinified with indigenous yeasts, distilled and bottled entirely by hand, all on site, allowing the family to closely monitor the tiny 20,000 bottles they make per year. Production is done entirely without the use of sulphur, colouring or added sugar at any stage. Furthermore, these Cognacs are produced without blending or filtration. The precision of this approach is purely expressed in the single vintage and terroir cuvees, with the additional option of cask cuvees. We are so excited to be able to bring a small amount of this incredible Cognac to Australia, sharing the heart of Cognac with these vibrant, artisanal expressions. Adrien Berlioz took over the family vineyards in 2006, in Chignin at 390m above sea level. With plenty of hard work alongside the pursuit of purity and a certified biodynamic approach to farming, he has grown the vineyard to 5 hectares, transforming it into one of the Savoie’s most prestigious domaines. Located at the foothills of the Bauges massif, and bordering neighbouring Switzerland and Valle d’Aosta in Italy, the organically farmed vineyards of Domaine Adrien Berlioz in the Savoie region are as picturesque as you might imagine. Berlioz took over the family vineyards in 2006, two hectares located near a small village called Chignin at 390m above sea level. With plenty of hard work alongside the pursuit of purity and a certified biodynamic approach to farming, he has grown the vineyard to 5 hectares, transforming it into one of the region’s most prestigious domaines. The hard work starts with the incredibly steep slopes the vines are planted on – some of which boast an inclination of 50%, on soils comprised of rock scree and calcareous clay. Planted here are a mixture of the region’s best known varieties including Jacquere, Altesse, Malvoisie, Bergeron (Roussanne) Mondeuse, Douce Noire and Persan, all farmed without the use of herbicides or non-organic fertilizers and all by hand (with a little help from the horses). Who’d want to manage a tractor on those slopes?! In the winery, the dedication to purity continues, making the wines with minimal intervention, natural winemaking techniques including very little sulphur. The results are evident in the incredibly mineral driven, intense and pure wines, sure to leave a lasting impression of just how good Savoie wines can be. Fifth-generation vignerons Stéphanie Hubert and Olivier Waris, together with their children Blanche, Antonin, and Cyprien, tend 18 hectares of vines across some of Champagne’s most prized terroirs. Their roots run deep, yet their outlook is forward-thinking, marrying heritage with a modern sensibility. From the 2023 vintage, Waris-Hubert is proudly organic certified—an achievement shared by only a handful of Champagne growers (5%). Horse-drawn ploughs in their Grand Cru parcels, sheep grazing the cover crops, and minimal intervention in the cellar all reflect a philosophy of care, patience, and respect for the land. As Olivier notes, “The more the roots tickle the chalk, the more the wines reveal finesse and character.” This respect extends beyond the vineyard. Under the guidance of son Cyprien, the family also runs a working farm, harvesting vegetables and crops with the same care and patience that underpin their viticulture. This holistic approach reflects their philosophy of stewardship: tending the earth in a way that ensures vitality for generations to come. In the vineyards, they work across a remarkable patchwork of terroirs: Avize, Oger, Cramant, Chouilly, Mesnil sur Oger (Grand Cru, Côte des Blancs), Grauves (Premier Cru, Côte des Blancs), Aÿ (Grand Cru, Vallée de la Marne), Barbonne-Fayel (Coteaux Sézannais), Marfaux (Vallée of Ardre) and Monthelon (Côteaux Sud of Epernay). The plantings are 70% Chardonnay, 20% Pinot Noir, and 10% Pinot Meunier, true to a Côte des Blancs heritage and the broader expression they seek from Champagne’s mosaic of terroirs. In the cellar, precision and patience is the name of the game. Each parcel is vinified individually, allowing the character of place to shine. A smaller component of the base wines is produced in large oak barrels (600 litres from Tonnellerie de Champagne), which brings subtle texture and depth. They prefer partial malolactic fermentation to preserve energy and vibrancy, ensuring their Champagnes retain the tension and freshness that define their style. The resulting wines are elegant, expressive, and finely etched, expressions of both site and philosophy. Today, Domaine Bonnardot is farmed organically, Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. DOMAINE LUDOVIC BONNARDOT Côte de Beaune, Burgundy Organic There are not too many teenagers who would choose to spend their days in the vineyard, let alone experimenting on their grandfather’s grapes with natural winemaking. But then again, Ludovic Bonnardot was not your average teenager. Burgundian born and bred, Ludovic now guides the winemaking at the family estate - Domaine Bonnardot, taking over from his parents in 2006. The estate covers 15-hectares with two operations: one centered in Santenay, the wine-growing focuses on Côte de Beaune and Hautes-Côtes de Beaune appellations, while blackcurrants (cassis), asparagus and cereals are grown in Bonnencontre near the family home, just south of Dijon. The polyculture approach is a reflection of the long heritage of winemaking in the family, which dates back to 1470. Throughout the centuries, it was (and arguably still is) essential to have year-round agricultural output to spread the risk of crop failure and ensure a source of income for the family. Ludovic’s interest in natural winemaking at an early age was influenced by his mother Elisabeth, the Domaine’s winemaker while he was growing up. Elisabth graduated her enology studies in Beaune, studying alongside and eventually interning with Jules Chauvet - who is considered to be the father of natural winemaking. As a result, Elisabeth’s approach to winemaking was very much shaped by Chauvet, and she began to practice more natural approaches to her winemaking with her Burgundies. Today, Domaine Bonnardot is farmed organically, with the conversion starting when Ludovic returned to the family lands after graduating his winemaking education. Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. The vineyards include Hautes Côtes de Beaune ‘En Chaignot’ and ‘Sur Evelle’, Bourgogne Côte d’Or ‘Clos Botaveaux’ Monopole, Bourgogne Aligoté, Santenay ’Saint Jean’, Santenay 1er cru ‘Clos Rousseau’, Maranges ‘Sur le Bois’, Pommard, Chassagne Montrachet and Puligny Montrachet 1er ‘La Garenne’, with vineyards average age of 45 years old. Before the beginning of Spring, natural fertiliser made from vegetal or animal matter is added to the soils to bring life. Then all the vines are plowed to encourage the decomposition of the organic matter and aeration of the earth. From here until vintage, Ludovic and his brother Emilien tend to the vines with debudding, relevage and trimming. Once vintage arrives, plots are harvested by hand at their best maturity and bought into the winery for hand sorting. Vinification of the white grapes includes slowly pressing the whole bunches, with the must then put into oak barrels for a 12-18 month fermentation. The fermentations are natural, with no addition of sulfur or addition of oenological product. After natural settling in the barrel and light filtration, the whites are ready for bottling. The red wines range between 30% and 100% whole bunch inclusion, with the berries macerated in oak tanks between 20 and 180 days. Again there is no addition of sulfur or product, and fermentation occurs with indigenous yeast. After the pressurage the wines are put into oak barrels for up to 12 - 18 months aging. The reds are not fined or filtered before bottling, with low or no addition of sulfur. This sometimes generates a light deposit however doesn’t alter the quality of the wine. Domaine Bonnardot wines are fresh, vibrant and pure, reflecting the considered approach to farming and vinification to ensure transparency of place. We love how they express each site with a very minimal extraction or oak influence. Most of all we appreciate the rare value for money these wines offer - something we don’t see much of in Burgundy these days. We’ll drink to that!
