BOURGOIN COGNAC Cognac Organic conversion Cognac Bourgoin is a family estate located in the village of Saint Saturnin, in Charente. It has existed since 1933, when Leon Marcel Bourgoin traveled to the area for vintage and fell in love with his boss’s daughter. He then decided to put down roots in the area, literally, planting vines of Ugni Blanc that had arrived in France via Italy (there called Trebbiano) after phylloxera had decimated much of the local rootstock. Fast forward a few generations to the present and you’ll find Frederic, Leon Marcel’s grandson, humbly and proudly continuing the family’s Cognac production. This generation, however, has decided to shake things up. After selling to larger Cognac brands for years, the family bravely chose to create their own house style, one that focused on putting nature and mankind back at the heart of the Cognac making process. The result has been a resounding success, selling to scores of Michelin star restaurants and even the prestigious Elysée Palace. The Bourgoin Cognac journey is one which starts and finishes on the clay, limestone and alluvial soils of the estate. The grapes are grown organically, harvested, vinified with indigenous yeasts, distilled and bottled entirely by hand, all on site, allowing the family to closely monitor the tiny 20,000 bottles they make per year. Production is done entirely without the use of sulphur, colouring or added sugar at any stage. Furthermore, these Cognacs are produced without blending or filtration. The precision of this approach is purely expressed in the single vintage and terroir cuvees, with the additional option of cask cuvees. Its legacy is woven through time—first as part of one of the largest wine estates in the region, and later as a distinguished Second Growth in the 1855 classification. Even in the 18th century, its wines were turning heads: during his tour of Bordeaux, Thomas Jefferson, the third President of the United States and an avid oenophile, noted the estate in his travel journals, recording it as “Lionville.” A fleeting mention, perhaps—but one that hints at the enduring allure of this exceptional terroir. Once a single estate, Léoville was divided in the 19th century into three names now etched into Bordeaux lore: Léoville-Las Cases, Léoville-Barton, and Léoville Poyferré. Though the vineyards were separated, the buildings remained entwined—so much so that the parking lot is still shared between Las Cases and Poyferré. During a visit to the estate, Olivier Cuvelier shared a quiet anecdote: when Cuvelier of Poyferré and Delon of Las Cases needed to speak, they would step out of their respective châteaux and meet, quite literally, in the middle of the car park. It’s a scene that captures the estate’s singular character—rooted in tradition, rich in neighbourly nuance, and unlike anything else in Bordeaux. Léoville Poyferré enjoys a position among Bordeaux’s most privileged terroirs. Its vines—some facing Léoville Las Cases, others brushing shoulders with Latour and Pichon-Longueville—lie in what Bettane & Desseauve rightly call “the heart of the Médoc’s best land.” Since acquiring the property in 1920, the Cuvelier family has stewarded the estate with both reverence and reinvention. Under Didier Cuvelier’s leadership in the late 20th century, a modernisation of vineyard and cellar took place—from replanting to cutting-edge vinification—resulting in a dramatic rise in quality. Today, the estate is guided by his cousin, Sara Lecompte Cuvelier, who upholds the family’s values while deepening their commitment to sustainable farming and climate-conscious viticulture. Spanning 80 hectares of prime Saint-Julien terroir, the vineyards are a mosaic of gravel terraces, sandy-clay subsoils, and cooler clay-rich plots that allow each grape variety to shine. Cabernet Sauvignon provides structure and length, Merlot lends plushness and warmth, while smaller parcels of Petit Verdot and Cabernet Franc contribute complexity and lift. It’s the highest Merlot proportion of any of the Léovilles—one of many quiet distinctions that sets Poyferré apart. Precision defines every step of the winemaking process: hand harvesting, double sorting (including optical selection), parcel-by-parcel vinification, and long ageing in carefully selected French oak. Malolactic fermentation in barrel adds seamless texture and polish, while the final blend, crafted by winemaker Isabelle Davin and cellar master Didier Thomann, reflects both site and signature. The result is unmistakable: Léoville Poyferré marries Saint-Julien’s classical frame with sensuous fruit, spice, and depth. A wine of power and poise, it rewards patience but speaks clearly from the glass even in youth. The now 20 hectares of vineyards at Domaine de Turenne are planted to classic regional varieties including Cinsault, Syrah, Grenache, Carignan, Mourvèdre, Rolle, and Petite Clairette, with an average age of 40 years, with some vines dating back over a century. They are a testament to the marriage of tradition and innovation, and proudly bear organic certification (Ecocert), with a growing commitment to biodynamic practices. The secret to Turenne's exceptional wines lies in the unique terroir of the vineyards. The alluvial cone's stony clay-limestone soils, and well-drained sandy subsoil with small stones known as "Gavroches" bring a distinct minerality and impeccable drainage to the vines. The result is wines that carry the unmistakable signature of their origin. Cécile and Philippe Benezet approach their work with thoughtful care in the vineyard and cellar, aiming to produce wines that are sincere, respectful of their terroir, and as natural as possible. The Domaine is run by the enthusiastic and energetic Éric Laguerre, who took over his family's 40 hectares of vineyards in 1999. Resolving to go back to basics and grow / make wine as naturally as possible from the start, Eric and his wife Corinne restored and replanted most of the vine-land and bottled their first vintage in 2001. The result is organically-farmed and naturally-made artisanal Roussillon wines, offering superb wines and incredible value. A visit to Eric in the tiny village of Saint Martin de Fenouillet (not far from Maury) requires steep climbs through a mountain pass up to the highest, cooler climate vineyards in the Roussillon (500 meters elevation). Here you’ll find plantings of Grenache, Syrah, Carignan and Cabernet for red and, Grenache Blanc, Rolle, Roussanne, Marssanne Macabeu for whites, with an average vine age of 40 years old. The vines sit on acidic terroir made of gneiss and broken-down granite with some pockets of quartz and decomposed granite. These soils combined with the cool climate, the “tramontane” winds, low yields and Éric's superb farming, create distinctive bright, balanced wine with freshness, fruit definition, excellent mineral tension that deepens with time in bottle. In the vineyards, organic and biodynamic practices are observed, with certification awarded for the former and soon for the latter. Harvest in this area is typically late for the region, starting at the end of September and lasting until mid-October. The grapes are hand-harvested in the early morning to ensure freshness, with sorting done in the vines. The grapes are then taken to the cellar and fermented with natural yeast, and vinified separately in vessels such as fibre tanks, concrete tanks and old oak demi-muid. Wines from Roussillon are often undiscovered gems. The whites combine purity along with weight and ripe fruit flavours. The reds on the other hand are often high in alcohol (over 14% natural) but not heavy. “Le Ciste Blanc” This white blend is one of the most interesting whites of southern France, comprising Grenache Blanc, Rolle (Vermentino), Marsanne, Roussanne, and Macabeu. "Eos Blanc" This wine is a rewarding discovery for anyone seeking an intriguing wine of terroir at an affordable price. 65% Grenache Blanc, 35% Macabeu. The increased percentages of Macabeu have made this lovely wine even more distinctive. Third-generation winemaker Bernard Landron initially began his career alongside with his brother Jo in the heart of Muscadet Sèvre et Maine area. In 2002 Bernard moved to Ancenis in the village of St Géréon, about 35 min drive from Nantes, and was joined by his eldest son Benoît in 2008. DOMAINE LANDRON CHARTIER Muscadet Organic certified What’s the first grape varietal that comes to mind when we say Loire Valley? We bet its Sauvignon Blanc – which is delicious. However, there’s more to discover in this region. Domaine Landron Chartier is a wonderful example of a small producer continuing to work with lesser known grapes which equally represent the terroir of the Loire. Third-generation winemaker Bernard Landron initially began his career alongside with his brother Jo in the heart of Muscadet Sèvre et Maine area. In 2002 Bernard moved to Ancenis in the village of St Géréon, about 35 min drive from Nantes, and was joined by his eldest son Benoît in 2008. Benoît had returned to the family vineyard after completing his degree in viticulture and oenology, facilitating a conversation to organic practices in 2009. The family now farm around 25 hectares, with a patchwork of vineyards mostly situated around the towns of Ligne and Udon planted with a mix of Melon de Bourgogne, Folle Blanche, Pinot Gris, Gamay and Cabernet Franc. The decomposed volcanic material in the soils, along with a moderate climate and ocean winds to reduce humidity, results in a hallmark freshness to the wines. To ensure both the terroir and fruit purity are front and centre, extreme care during the winemaking process is followed – from the vineyard through to the cellar. Vines nurtured with organic farming practices are hand harvested and vinified separately based on terroir with a natural yeast fermentation. There’s minimal intervention in the cellar, with light to no filtration and low to no sulphur added depending the cuvees. The result is spectacularly pure and vibrant Muscadet, both at an entry level and at a precise, complex cru level. Importer and distributor of organic, biodynamic and sustainable French wines from Champagne, Burgundy, Beaujolais, Bordeaux and beyond. DOMAINE JULIEN & FRANCOIS PINON Vouvray Organic certified It’s a rare phenomenon that the Wine Spectator, The New York Times and The Robert Parker Guide are all in agreement, yet it’s a feat managed by Julien and Francois Pinon. Mentioned in the same breath as Huet by Asimov, considered benchmark chenin blanc by Wine Spectator and the producer of ‘ethereal’ wines according to Parker’s outlet. Happily, we can confirm, these are wines deserving of their praise. Established in 1786, the estate of Julien and Francois Pinon has been built up over eight generations and now covers 13.5 hectares in the Vallée de Cousse. Today, father and son duo, François and Julien, continue the tradition of ‘old school’ winemaking with a contemporary edge, passed down when François took the reins in 1987. Leaving behind a career in child psychology, François took over the estate from his father, and focused on emphasising ecologically friendly vineyard and cellar practices. The family operation now includes his son, Julien, who also changed careers, from city planning, to join his father in the cellar. Sadly, Francois and his father both passed away in 2021. The wines are recognised as some of the very best in the region, a reflection of the dedication of the family to their craft. To allow the rich and diverse terroir to sing, Julien and Francois committed to farming organically, with Ecocert Organic certification awarded in 2003. These practices include using organic treatments when needed and only in small doses, working the clay, limestone and flint soils mechanically and banning the use of pesticides. The vineyards are mainly comprised of chenin blanc, grolleau and cot, over 14ha with an average vine age of 50 years. When the time comes, the grapes are hand harvested over three weeks, by a team of 30 to allow for optimal grape selection. As a result, the grapes come into the winery as pristine whole bunches. The first pick will always be the sparkling wines, followed by the dry, and then slightly sweeter wines. In special years when the conditions are right, botrytis affected grapes will be picked last to create the winery’s sweetest wines. After being pressed, the juice is stored in large vats for 12-24 hours, while the solid matter settles to the bottom of the tank. When the juice is clear, ferment occurs without the addition of yeast. The wines are then housed in Pinon’s spectacular cellars, tunneled into hillside rock of the hillside, in a mixture of old oak barrels and stainless steel tanks to juggle the balancing act of still and sparkling winemaking. The wines remain on their fine lees until Easter. After one rack and a filtration, they are bottled over the course of April. Chateau Tire Pe is owned by David and Hélène Barrault, they took over this small vineyard in 1997. Blessed with rich clay and limestone soils, this vineyard possesses fantastic southern exposure and overlooks the Gironde River. Blessed with rich clay and limestone soils, this vineyard possesses fantastic southern exposure and overlooks the Garonne River. The Chateau takes its name from a colourful local tale about what small animals “leave behind” before climbing the Tire Pé hill. We’ll leave that to your imagination. The vineyard is composed of Merlot, Cabernet Franc, Malbec, along with some rare local grapes called Castets, Mancin des Palus and vines of Pineau d’Aunis originating from the Loire. The Barrault’s farm vines of 10-35 years old organically, a practice they started to implement in 2008, becoming officially Ecocert certified since the 2014 vintage. They also practice some biodynamic principles, as well as ploughing the vines with horses. The latter fits in perfectly with equestrian centre which Hélène is running at the farm, ensuring animals, like vines, are a big part of Tire Pe. All grapes are harvested by hand and destemmed, with each plot harvested and fermented separately with natural yeast. Great care is taken to gently extract the supple fruit and terroir, that Bordeaux is so well known for, into each cuvee they produce. David and Helene’s wines are bottled without systematic filtration and only small amounts or no sulphur is added depending the vintage and the cuvee. Their naturally-made wines are vibrant, authentic and full of fruit. We personally love their texture and generosity of flavour. Leading the charge is Domaine de Brin, with a young gun winemaker and a revival of rare varieties. Damien Bonnet took over the family Domaine in 2008, his understanding of this environment is evident as he can reel off the smallest details of the surrounding 10 hectares. He wasted no time gaining organic certification and experimenting with concrete and amphora to produce a natural style of wine, taking biodynamic principals and lunar calendars into the process. These were significant changes for Damien and his parents, moving the farm from selling to the local coop and polyculture; to bottling and selling their own wines. South facing vines are finding their expression in calcareous and white clay soils. Sitting on the 285-metre plateau on the right bank of the Tarn river, Gaillac benefits of both Mediterranean and Atlantic unique influence. Vineyard wise, Damien is using natural weeding methods, working the soil between the vines. When needed, they use organic fertiliser including horse beans and oats to enrich the soils. His aim for the vines is to obtain an equilibrium allowing a low yield of 20-35 hl/ha with healthy and perfectly ripe grapes. Each grape variety is manually harvested at its optimum maturation. The grapes are turned into wine using natural yeasts. The maturing takes place at a slow pace according to the rhythm of the seasons, in concrete and large format old oak that is an essential part of his winemaking style, along with minimising the use of sulphites. Pierres Blanches This white blend aged in old barrel, displays apple and hazelnut aromas with oxidative sherry-like notes. La Vie en Rosé is a heady, aromatic showcase of strawberries, grapefruit, lychee, as well as blueberries with a lot of texture. Vendemia The medium bodied red Vendemia is ripe with crunchy tannins and notes of blackcurrants. Amphore This cuvee aged in amphora is very vibrant and bright with spicy red berries and pure velvety finish. It is this care and understanding of their terroir that has allowed us to enjoy full expressions of native regional varietals, produced with methods that have been tried and tested over centuries. These producers respect the land they farm above all else, using organic and biodynamic techniques to nourish their vines and the ecosystem around them. Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other. CLOS MARIE Pic Saint Loup, Languedoc Organic certified and Biodynamic Those in wine circles have known the potential of the Languedoc region for decades. With a large area under vine, it’s one of the most prolific wine producing regions in France, however it remains one of the most misunderstood (in our humble opinion). The region is an agricultural playground, with ancient soils, mature vines and a terroir that is more suited to natural farming than many of its surroundings. Languedoc has often attracted innovative winemakers given its diversity, and flying largely under the radar has allowed producers to push boundaries, experiment and ultimately create some of the most exciting wines in the world - including those of Clos Marie. Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint-Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Until this point, the vineyard was a reliable source of fruit for the local cooperative, however Christophe and Françoise felt there was a greater potential for these vines. Their intuition was confirmed after consultation with a slew of France’s greatest vignerons and domaines (Didier Dagueneau, Clos Rougeard, and Grange des Pères), and before long they set out on bottling wines under the Clos Marie label. The hardworking pair focused on caring for the vineyard above all else, quickly realising the benefits of organic and biodynamic practices, they began solely farming this way in 1997, achieving organic certification in 2010. Today, the domaine’s vineyard holdings sit at 23 hectares (20ha reds, 3ha whites), and are sprinkled in and around the village of Lauret, located to the north of Montpellier. The vines sit on terraces nestled on the backside of the Montagne de l’Hortus, the peak that faces the pointed Pic Saint-Loup. This sub appellation under the Coteaux du Languedoc AOC is known for some of the most finessed wines of the region, in large part due to the cooling breezes that blow south from the Cévennes Mountains. Working the vineyard to produce the best possible wines remains the focal point for Christophe and Françoise. The soils of the vineyards are continuously ploughed, forcing the vines’ roots to seek nourishment deep down in the chalky limestone bedrock. Yields are kept low, between 15 to 35 hl/ha, with 75% of the vineyards replanted from séléction massale cuttings (sourced from their 70- to 100-year-old vines) to achieve a higher vine density. Many growers believe this causes enough competition among the roots to invigorate the vine. Perhaps the most intriguing and exciting element to Languedoc wines, and Clos Marie in particular is the diversity of varietals producers have at their fingertips. For Clos Marie, this includes Cinsault (10%), Syrah (50%), Grenache noir (15%), Carignan (15%), Mourvèdre (10%) for the reds, and Carignan gris (15%), Grenache blanc (20%), Clairette (10%), Roussanne (15%), Vermentino (10%), Grenache gris (20%), Muscat à petits grains blancs (5%) for the white wines. In the cellar, Christophe continues his fastidious approach to winemaking, firmly believing the devil is in the detail. As the hand-picked grapes arrive in the cellar, they then ferment naturally in cement tanks and undergo long cuvaisons at cool temperatures, stabilising the wines sufficiently so that fining and filtration are not necessary. Vinification varies with each cuvee, with some of the wines, such as the signature ‘Les Glorieuses’ aged in barrel for up to three winters, mostly in neutral barrels and newer Stockinger foudres. Christophe is also in the minimal intervention camp and uses low sulfur while ensuring quality and purity in the end result. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other, better known producers. Christophe and Françoise do not chase the limelight, or endeavour to be the best known producers in the region. Instead, their focus is on their vineyards, the grapes and producing wines of incredible purity to showcase just how good Languedoc can be. Claims All claims for incorrect shipment, damaged products must be made to ‘Mosaique’ within 7 days of receipt of the goods. Faulty wines will be assessed case by case, we will need the corked bottle back with at least ¾ of the wine in the bottle and the original cork to assess the fault. If the wine was faulty we will organise a credit note. Returns All returns must be approved by ‘Mosaique’ in writing. Unauthorised returns will not be accepted by Mosaique’ and the courier will therefore be instructed to return such wines to the ‘Buyer’. Title Property in and title to goods supplied under these Terms and Conditions shall remain with ‘Mosaique’ and does not pass to the ‘Buyer’ until all monies payable in respect of those goods (including any interest, freight or insurance charges) have been paid in full to ‘Mosaique’. ‘Mosaique’ has the right to call for or recover goods owned by ‘Mosaique’. The ‘Buyer’ agrees to keep the goods in a fiduciary capacity for ‘Mosaique’ until such time as ownership is transferred to the ‘Buyer’. Set-off Complaints in respect of alleged faulty goods shall not entitle the ‘Buyer’ to withhold payment of any sum which had become payable to ‘Mosaique’ and shall not give rise to any right or set-off unless, and until, any amount to be allowed by ‘Mosaique’ had been admitted and ascertained. Warranty To the full extent permitted by law, all guarantees, warranties, representations, promises, conditions or statements regarding the wine supplied, whether express or implied, and whether statutory or otherwise (including without limiting generality, guarantees, warranties, representations, promises, conditions and statements as to merchantality, suitability or fitness for any purpose, profitability or any other attributes or consequences of or benefits to be obtained from or in the course of using such service) are excluded except as otherwise expressly provided for in these Terms and Conditions. Risk Wines will be at the risk of the ‘Buyer’ from the time of receival. Dispute resolution If dispute arises between the parties, they must attempt to resolve the dispute by mediation prior to commencing legal proceedings. Obligation to notify of any change The applicant agrees to notify ‘Mosaique’ within 14 days of any change of ownership, legal entity or business address or any insolvency proceedings under bankruptcy and/ or companies legislation which have been commenced or proposed. Governing law The agreement formed as a result of ‘Mosaique’ acceptance of orders is governed by the law of the state of Victoria.

Chateau des Rontets was founded in the 1700s in Pouilly Fuissé, Burgundy. It’s safe to say the 7.5 hectares of vines were not thriving when Claire and Fabio took the reins of the estate in 1995. From day one, the pair set upon farming organically to repair the health and biodiversity of the vines, and in 2005 attained their Ecocert organic certification. Today thanks to their hard work and patience they produce some of the most vibrant and pure natural wines in the region. CHATEAU DES RONTETS Pouilly-Fuissé, Burgundy Organic Home is where the vines are, as it turned out, for Claire Gazeau. After pursuing a life outside of wine, working in architecture in Milan and meeting her now husband doing so, the vines of Gazeau’s family vineyard in Pouilly-Fuissés eventually called her home. Thirty years later, Chateau des Rontets is producing its best wines yet. The estate was founded in the 1700s, taken over by Claire’s great-great-grandfather, François Varambon in the mid 1800s. The estate holds many treasured family memories, and upon moving there in 1995 Claire and her husband Fabio saw it as a wonderful place to raise a family of their own. It’s safe to say the 7.5 hectares of vines were not thriving when Claire and Fabio took the reins of the estate. From day one, the pair set upon farming organically to repair the health and biodiversity of the vines, and in 2005 attained their Ecocert organic certification. Organic farming, according to Claire and Fabio, is the best way for their vines to express the vocation of their place. Ploughing and the avoidance of chemical weeding allows the root system to absorb the mineral elements of the soil, exploring the unique layers of limestone and granite that come with straddling the Burgundy/Beaujolais divide. Above all, abolishing all synthetic chemical products allows Chateau des Rontets to respect the environment and the natural expressions of the living ecosystem, but also to preserve the health of their family, workers, neighbours and that of those who drink their wines. The main estate is situated on the top of the hill which closes the valley of Fuissé towards the south. Sitting at an altitude of 350 metres above sea level, the daily temperature range here is key to gradual ripening and the preservation of good acidity even in the warmest and earliest vintages. This is where the grapes producing the Pouilly-Fuissé cuvées Clos Varambon and Les Birbettes are grown. The bedrock is composed of hard limestone from the Jurassic period, with layers of silt and silty clay, and a high presence of stones and silica. These characteristics guarantee very good drainage and the development of the roots, which can burrow down between the stones, following their cracks. There are 5.5 hectares of vines within the Clos, planted on a light slope increasing gradually as it approaches the woods separating them from the village of Fuissé. Just 500m south of the Clos sits the revered Pierrefolle (or crazy stone) vineyard, producing the Pouilly-Fuissé cuvée of the same name. Although situated so closely, and at the same altitude, wines from Pierrefolle are completely different from their brethren. Being further south, the bedrock here is granitic, the soil is much deeper and composed only of quite thick silts. Its eastern exposure provides shelter from the north wind and tends to be slightly warmer, leading to a more rapid ripening process and less acid in the grapes. When it comes to vintage, all grapes are hand harvested, then, in the winery, Claire and Fabio continue to let their wines take a relatively uninterrupted course. Alcoholic fermentations are made only with natural yeasts, without any addition of sugar or acid and without enzymes, and the malolactic fermentations are never inhibited or artificially stopped. This practice can lead to long fermentations, often lasting several months, increasing the aromatic complexity of the wines and amplifying their expression of place. One part of the winemaking journey that is especially important at Chateau des Rontets is the extended lees ageing. Lees have a fundamental role in the specificity and texture of these wines, as the team chooses to let the wines sit on lees, without stirring, to take maximum advantage of the autolysis while limiting the tendency of reduction and ensuring the extraction of glycerol. Lastly, there is no fining or filtering of the wines. Instead, to help the wines settle before bottling, ageing in barrels takes place across two winters - a rare, yet effective approach.
