  • Pastis Garagai | Aix-en-Provence | Mosaique Wines

    PASTIS GARAGAÏ Aix-en-Provence Organic Sometimes we find a wine, and other times a wine finds us. Then there is the rare occasion when it’s not wine at all, rather a drink to remind us of hot summer afternoons, village parties and Le Tour. On a recent trip back to France, I took an afternoon out to travel to a nearby town to watch a stage of Le Tour de France pass by. It was the peak of the summer heat wave, and rather than stand in the sun waiting for cyclists, I nabbed a shady outdoor spot at the most local of bars where the pastis was cheaper than bottled water. By the end of that tall, refreshing glass it was clear our next producer would be the best expression of this rustic, aniseed-y spirit I could find. Pastis Garagai, meaning ‘gulf’ or ‘hole’ in local Provencal dialect, is the work of young Maixent Dubois. Growing up among the family vineyard in Provence might have steered him towards the family business; however he has chosen to take the spirit of terroir and apply it to pastis. The story began with 300 bottles for the 2019 vintage, as a side hustle while Maixent was working part time at the vineyard. Today, the average yearly production is still tiny, with just 5,000 bottles per year, to ensure each vintage produced retains a focus on quality. Pastis Garagai is distilled from a base of star anise and liquorice from Provence plus about twenty other botanicals and plants, many of which are foraged from the Sainte-Victoire mountain or grown organically on the vineyard. These include fennel flower, lemon basil, liquorice basil, Marseille basil, peppermint, tarragon, sage, absinthe, verbena, thyme, rosemary and lemon thyme. By sourcing locally, Maixent can limit the environmental impact of transportation, control picking so he takes only what is required and importantly provides the freshest possible ingredients for his pastis. The depth of flavour added by fresh botanicals means the amount of added sugar is three to four times lower than commercial brands. The distillery itself is based in Aix-En-Provence, and consists of three small alembic pot stills - one 400L, one 300L and one 100L. After the botanicals are harvested from April to October, they undergo a week-long maceration one by one with a neutral grape alcohol. The fresh plants haven’t been dried beforehand, so they keep their natural vibrancy and deepness of flavor. After this comes the crucial blending process, taking place in November, and finally bottling with light filtration and no sulfur added. The result is a truly refreshing, artisanal expression of a traditional southern France aperitif. We love Maixent’s approach to making pastis from a single origin, a little bit like a wine domaine producing grapes only from one location.To make a bold statement, we think it’s the best pastis out there.     CIDRERIE DU LEGUER Britany Organic certified Who says great French ciders must come from Normandy?! Not us! Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. A Brittany native, Cedric completed his agriculture studies and travelled around the country and beyond, before stumbling upon what would become the Ciderie du Leguer. After restoring the orchard, 2016 saw the first vintage. Since then it’s been a labour of love and hard work – as Cedric and the team take it up on themselves meticulously maintain the farm following organic principles, lovingly tending to trees aged from between two and thirty years old. The trees themselves house a wide range of indigenous varieties, including: Marie Ménard, Jeanne Renard (Bitter varieties) Fréquin Rouge, Belle fille de la Manche Kermerrien, Frijelach’, Peau de Chien (Bitter-sweet) Bedan, Dous Moën, Douce Coët Lignée (Sweet) and finally Judor, Locart Vert, Rouget de Dol, Petit Jaune (Sharp). Each cuvee is made according to Cedric’s taste, however the same process is followed time and again. The trees are hand harvested three times between October and December, before further ripening in crates before pressing up to 4 weeks later. The ciders go through two ferments – the first lasting 5 months before bottling, followed by a 3 month fermentation in bottle. The ciders are bottled with no sulphur, just pure juice, naturally sparkling and spontaneous, no collage, only racking and filtering when required. All ciders are brut or extra brut. As for the end result? These are exceptional ciders with a vinous quality, brimming with character, complex and acid driven with perfectly balanced fruit and tannins. Cidre Granit Considered as a brut cider, Cidre Granit is a ‘cuvee parcelaire’, or a ‘single orchard’. The top of the tree cuvee, so to speak. Round, generous, fruity, subtle tannins. Not bitter. Apple blending: 15% bitter, 50% bitter-sweet, 20% sweet, 15% sharp. BrutBrut An extra-brut cider, this expression is fruity, slightly mineral, with good length and liveliness on the palate. Apple blending: 5% bitter, 50% bitter-sweet, 25% sweet, 20% sharp. Premium A brut cider, and another ‘Cuvée parcelaire’ or ‘single orchard’ expression. Smooth bitterness, no astringency, good length on the palate, complex and vinous. Apple blending: 20% bitter, 70% bitter-sweet, 10% sharp.     Domaine DUSEIGNEUR Chateauneuf-du-Pape, Lirac, Cotes du Rhone Organic and Biodynamic certified ‘To receive and to pass on’, this is the mission statement driving Bernard Duseigneur and the team at Domaine Duseigneur. And walk the walk they do. The Duseigneur family relocated from Algeria in the 1960s, starting over in the Rhone Valley with ambition, with the patriarch Jean taking over abandoned plots and planting vines in Lirac. With not much money and children to feed, he set about working the land to improve the health of the soil and therefore the vines. It was this traditional approach to farming, coupled with a lack of funds to purchase chemicals, that set the Domaine out on an organic pathway from its inception. As per the family’s mission statement, the whole operation is driven by a desire to function harmoniously with their environment, honour the terroir and pass on the knowledge to future generations. Today, the Domaine is run by Jean’s son Bernard Duseigneur, who commands a total of 28 hectares, including nine in Chateauneuf with the remainder spread across the right bank in Lirac and Laudin. The vines are considerably aged across the board, averaging 50-60 years old, with some 135 year old beauties producing a tiny 800 bottles a year, Under Bernard’s stewardship, the Domaine began practising biodynamic techniques in 2002, with Ecocert certification three years later, furthering the dedication to the health of their vineyards.     DOMAINE DES TROUILLERES Auvergne Organic certified Volcanic soils, it turns out, are destined to follow Mikael Hyvert wherever he goes. Perhaps they have a natural pull that keeps Hyvert coming back. Either way, from the volcanoes of Tahiti that filled his youth, to the dormant rises of Auvergne, there’s no questioning Hyvert’s passion for this landscape. Growing up in Tahiti with a French father, and a family friend in the wine import trade, it was only a matter of time before Mikael would come to discover the pleasures of wine. When looking for a career path after graduating high school, it would only take a gentle nudge to point him in the direction of Bordeaux, and enrolling in Blanquefort viticulture school. And from here, the rest, as they say, is history. The natural wine bug bit hard during this time, as Mikael became more and more focused on these techniques. A friendship forged in Bordeaux with a Loire local then resulted in Mikael seeking out legends from the region, including Olivier Lemasson, Herve Villemade and Thierry Puzelat to work with and learn from. After an eventful vintage experience in Chile, Hyvert made his way back to the fertile learning grounds of the Loire and Bordeaux before an opportunity to make his own wine presented itself. Plans were already brewing to move to Languedoc with his archaeologist girlfriend, Camille, however the right fit was proving hard to find. Fate intervened when Camille was offered a 12 month contract in the Auvergne. The volcanic landscape reminded Mikael of his childhood in Tahiti and it wasn’t long before the winemaking potential of the region became apparent. While finding his feet in Auvergne with different domaines, fate again intervened through a chance meeting with winemaker Jean-Pierre Pradier, founder of the AOC Cotes d’Auvergne and owner of Domaine des Trouilleres. The connection between the two was immediate, with shared views on organic farming facilitating a friendship that would later lead to Pradier finding his successor in Mikael in 2016. The region is technically part of the Loire, where Mikael had already spent much time, and while it’s not as well known as other areas of the Loire, Auvergne has a long, storied history of resistance spirit. In fact, it used to be one of the biggest wine regions in France, with 45,000ha under vine before a combination of Phylloxera and population movement decimated the region. Today, Auvergne is enjoying a renaissance with young, dynamic winemakers making the most of more affordable land and excellent growing conditions for organic wines. The climate tends to be a dry mediterranean one, with continental influence and a mountainous landscape to provide protection from inclement weather - ideal for minimal intervention farming. Domaine des Trouilleres produces gamay, chardonnay and pinot noir in this climate, on a tiny 5.8 ha situated between 380 - 500m altitude. This pocket size vineyard planted at 5,500 vines per ha makes only 35,000 bottles yearly, so we consider ourselves very lucky to get an allocation! In the winery, Mikael follows natural winemaking practices to complement the organic approach in the vineyard. This means no sulphur use during vinification, with a small amount only used during bottling. The resulting wines are honest, lively reflections of their volcanic terroir and highlight the dynamism of this young producer.     chateau la colombiere Fronton, South-West France Biodynamic certified Just 30 mins north of Toulouse, some of France’s rarest vines are painstakingly nursed back from extinction by husband and wife team Diane and Philippe Cauvin. The pair is living their dream, crafting wines from a regional variety: Negrette, which is native to their area of Fronton. Diane took the reigns of the family estate after learning viticulture and completing a tour de force throughout French vineyards including Burgundy. The first and perhaps the most significant change was to step up the effort to preserve these rare vines by farming Chateau La Colombiere biodynamically in 2006. As the vines have been cultivated here in the same way since the 15th century, this was a significant change, to say the least. Add to this hand picking and sorting and you get the base to create something delicious. Terroir is composed mostly of gravel and sandy alluvial soils part of the Tarn river terraces. Colombiere's 25 years old vines share the space with some fantastic 70 year old Negrette vines. Every biodynamic preparation is prepared and dynamised on site, with the focus placed on activating life in the soils by using weeds, cereal cover and ploughing. The Cauvin's prefer a 'hands-off' winemaking style, considering their efforts are best directed at the vineyard. In the cellar, they use gravity to preserve the quality of the grapes.The grapes are hand harvested and hand sorted. For reds, grapes are then partially de-stemmed and lightly crushed before moving straight into cement vats. Diane and Philippe will maintain that it’s not rocket science. We think they’re pretty special though, and can drink these fresh and floral wines morning, noon and night…(responsibly).     DOMAINE LUDOVIC BONNARDOT Côte de Beaune, Burgundy Organic There are not too many teenagers who would choose to spend their days in the vineyard, let alone experimenting on their grandfather’s grapes with natural winemaking. But then again, Ludovic Bonnardot was not your average teenager. Burgundian born and bred, Ludovic now guides the winemaking at the family estate - Domaine Bonnardot, taking over from his parents in 2006. The estate covers 15-hectares with two operations: one centered in Santenay, the wine-growing focuses on Côte de Beaune and Hautes-Côtes de Beaune appellations, while blackcurrants (cassis), asparagus and cereals are grown in Bonnencontre near the family home, just south of Dijon. The polyculture approach is a reflection of the long heritage of winemaking in the family, which dates back to 1470. Throughout the centuries, it was (and arguably still is) essential to have year-round agricultural output to spread the risk of crop failure and ensure a source of income for the family. Ludovic’s interest in natural winemaking at an early age was influenced by his mother Elisabeth, the Domaine’s winemaker while he was growing up. Elisabth graduated her enology studies in Beaune, studying alongside and eventually interning with Jules Chauvet - who is considered to be the father of natural winemaking. As a result, Elisabeth’s approach to winemaking was very much shaped by Chauvet, and she began to practice more natural approaches to her winemaking with her Burgundies. Today, Domaine Bonnardot is farmed organically, with the conversion starting when Ludovic returned to the family lands after graduating his winemaking education. Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. The vineyards include Hautes Côtes de Beaune ‘En Chaignot’ and ‘Sur Evelle’, Bourgogne Côte d’Or ‘Clos Botaveaux’ Monopole, Bourgogne Aligoté, Santenay ’Saint Jean’, Santenay 1er cru ‘Clos Rousseau’, Maranges ‘Sur le Bois’, Pommard, Chassagne Montrachet and Puligny Montrachet 1er ‘La Garenne’, with vineyards average age of 45 years old. Before the beginning of Spring, natural fertiliser made from vegetal or animal matter is added to the soils to bring life. Then all the vines are plowed to encourage the decomposition of the organic matter and aeration of the earth. From here until vintage, Ludovic and his brother Emilien tend to the vines with debudding, relevage and trimming. Once vintage arrives, plots are harvested by hand at their best maturity and bought into the winery for hand sorting. Vinification of the white grapes includes slowly pressing the whole bunches, with the must then put into oak barrels for a 12-18 month fermentation. The fermentations are natural, with no addition of sulfur or addition of oenological product. After natural settling in the barrel and light filtration, the whites are ready for bottling. The red wines range between 30% and 100% whole bunch inclusion, with the berries macerated in oak tanks between 20 and 180 days. Again there is no addition of sulfur or product, and fermentation occurs with indigenous yeast. After the pressurage the wines are put into oak barrels for up to 12 - 18 months aging. The reds are not fined or filtered before bottling, with low or no addition of sulfur. This sometimes generates a light deposit however doesn’t alter the quality of the wine. Domaine Bonnardot wines are fresh, vibrant and pure, reflecting the considered approach to farming and vinification to ensure transparency of place. We love how they express each site with a very minimal extraction or oak influence. Most of all we appreciate the rare value for money these wines offer - something we don’t see much of in Burgundy these days.     BOURGOIN COGNAC Cognac Organic conversion Cognac Bourgoin is a family estate located in the village of Saint Saturnin, in Charente. It has existed since 1933, when Leon Marcel Bourgoin traveled to the area for vintage and fell in love with his boss’s daughter. He then decided to put down roots in the area, literally, planting vines of Ugni Blanc that had arrived in France via Italy (there called Trebbiano) after phylloxera had decimated much of the local rootstock. Fast forward a few generations to the present and you’ll find Frederic, Leon Marcel’s grandson, humbly and proudly continuing the family’s Cognac production. This generation, however, has decided to shake things up. After selling to larger Cognac brands for years, the family bravely chose to create their own house style, one that focused on putting nature and mankind back at the heart of the Cognac making process. The result has been a resounding success, selling to scores of Michelin star restaurants and even the prestigious Elysée Palace. The Bourgoin Cognac journey is one which starts and finishes on the clay, limestone and alluvial soils of the estate. The grapes are grown organically, harvested, vinified with indigenous yeasts, distilled and bottled entirely by hand, all on site, allowing the family to closely monitor the tiny 20,000 bottles they make per year. Production is done entirely without the use of sulphur, colouring or added sugar at any stage. Furthermore, these Cognacs are produced without blending or filtration. The precision of this approach is purely expressed in the single vintage and terroir cuvees, with the additional option of cask cuvees. We are so excited to be able to bring a small amount of this incredible Cognac to Australia, sharing the heart of Cognac with these vibrant, artisanal expressions.   • Domaine Garon | Cote-Rotie | Mosaique Wines

    Domaine garon Cote-Rotie, Cotes du Rhone Organic non-certified We can all agree, Cote-Rotie in northern Rhone is one of, if not the spiritual home of Syrah. The Garon family certainly thinks so, having based themselves here, in Ampuis, since the 15th century. The family patriach Jean Garon was born here in 1475, battling hard times and growing grapes for a merchant (Guigal), along with farming fruit. Fast forward a few centuries to 1982, when Jean François and Carmen Garon replanted vines in the abandoned slopes of Cote-Rotie. "It wasn't bad for the vineyards to rest a hundred years between plantings" according to, Jean-Francois! In 2003, Jean-Francois' sons Kevin and Fabien joined the estate, taking the wines to yet another level. Kevin said “every year, the wine is different. A vintage is often full of memories, a bottle always captures a little bit of the story. In the Cote Rotie more than anywhere we can say that the wine is made in the vineyard, in the middle of the steep and dangerous terraces.” With about 8.3 hectares, the Garons farm the land organically and even use the horse. Weeding, like most of the vineyard work, is done by hand. This care taken in the vineyard is reflected in wines of great expression and personality. There is no over extraction, with gentle and long vinification bringing finesse. They are seeking a more Burgundian style of Côte-Rôtie. Cotes du Rhone “La Part des Vivants” A name which means the wine left for us to drink after the angel share. The grapes come from Ampuis area, declassified Cru Cairanne and also Rasteau fruits. Mostly de-stemmed, traditional vinification. 70% Syrah, 20% Grenache, 10% Carignan. Aged in very old barrels of 228 litres. Low sulphur. Black fruits, concentrated wild berries, spices, dark chocolate and a slight earthiness. Beautiful acidity and pure with a saline finish. “Les Grandes Parcelles” IGP Collines Rhodaniennes 100% Syrah, affectionately referred to as ababy Cote Rotie, sometimes including an amount of declassified fruit. Hand harvested, followed by traditional vinification. Elegant, intense with dark cherry, small berries, fine tannins, long balanced finish. La Sybarine A blend of 25 year old Syrah from plots on decomposed granite from the “Cote Rotie Blond area” (Lieu dit Goutay and Mollard). Handpicked, temperature controlled ferment ans roughly 80% destemmed. Daily punching down and pumping over during alcoholic fermentation, followed by 15 days maceration and 14 months in old French oak barrels. Aromas of blackberry and strawberry with violet, citrus notes as well as grilled bacon. Vibrant fruit on the palate, with rich and round with lush red fruits and blood orange notes lifted by good acidity. Approachable power, the finish is long with deep red fruit ending with a dark earthy minerality. Drink young and over the next ten years. The Garon also farm: Les Triotes (schist blond area), Les Rochins (Brune area next to La Landonne), Lancement and delicious white IGP Viognier and impressive Condrieu. "As I wrote last year, the running of Domaine Garon has passed largely to sons Kévin and Fabien Garon, who came on board at the domaine starting in 2003. While quality was reliable in the 2000s, since 2010, everything appears to have been on a steady upward trajectory, with the 2015 being the finest wines I've tasted from the estate, and magical wines produced in both 2017 and 2018.     Domaine Labranche Laffont Madiran & Pacherenc du Vic Bilh, South-West France Organic certified Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Enter Christine Dupuy, a game changer in the region, with a mission to fight the Tannat stereotype. Dupuy took over Domaine Labranche Laffont in 1993, becoming the youngest female winemaker in the region. The vineyard, located in the small commune of Maumusson-Laguian, has grown from 6 to 20 hectares under Dupuy’s guidance, with organically grown native varieties- including Tannat, Gros Manseng and Petit Manseng as well as Cabernet Franc and Cabernet Sauvignon. The estate is known as the keeper of hidden gems, as Christine is one of two winemakers in Madiran to own Tannat vines that date back to the pre-phylloxera era at the end of the 19th century (1870's). Trust us; they are a big, gnarly deal. The vines benefit from the silty clay and limestone soils, along with south - southeast facing, gentle hillsides around the domaine. The vineyard is certified 'ecocert', with Christine working mostly by hand in the vineyard. Soils are ploughed in Spring and Autumn; vines are fertilised using compost in the Autumn, and grass is left to grow between every second vine. Grapes are hand-harvested at perfect ripeness, before being sorted and de-stemmed. Fermentation is conducted in a temperature controlled vat with gentle pumping over for the reds. Malolactic and ageing occurs in old barrel, with a focus on minimal sulphites and lightly filtered (unfined) bottling. The red Madiran is deep, with aromas of spices, leather, and dark chocolate. The palate brings ripe, soft fruits and liquorice, and an elegant framework with fine tannins. It’s safe to say Dupuy has nailed her aim to produce approachable, elegant Tannat. These wines, much like their maker, have a natural ability to charm and leave you with a smile.     CLOS DU JAUGUEYRON Margaux Organic & Biodynamic certified Meeting a girl in Bordeaux, falling in love and deviating from the expected life course is a familiar story to Mosaique Wines, and to Michel Théron of Clos du Jaugueyron. Theron saw Bordeaux as a place of education, heading there from his family’s estate in Languedoc Roussillon (Minervois) to study winemaking in 1988. The plan was to get his degree and head back to Minervois armed with knowledge, and eventually take over the family business. However, the universe had different ideas, bringing Bordelaise Stephanie Destruhaut into Michel’s orbit, and of course, the rest is (modern wine) history. Making things vine-official, the pair produced their first wine in 1994 from a small parcel they bought in 1993. It was to be the first of many vintages to follow. Fast forward to today and you’ll find Michel and Stephanie heading up the 8ha of vines known as Clos du Jaugueyron, happily ensconced in Arsac, at the south-west edge of the Margaux appellation. By Théron’s own admission, there’s not a lot going on in that part of the world - isolated and out of the way somewhat. And that’s exactly how he likes it, after all, for someone farming organically it’s an advantage to be further from neighbours who may not share the same farming approach as you. Having said that, wine lovers will know the region to be dotted with Margaux’s classified growths, so it’s not all bad terroir to share! Michel and Stephanie are firm believers in organic/biodynamic viticulture, converting officially with the 2008 vintage and gaining Demeter certification. Natural farming and sustainability is a way of life for them in their day to day, carrying through from the vineyards to the winery and beyond. The vineyards planted with Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are plowed, and do not see a synthetic product. Instead careful attention is paid to the vineyard ecosystem, striving for balance naturally and letting the clay/gravel/quartz terroir of Arsac, and the deep fine gravels and sandy soil of Macau impart their goodness on the vines. When vintage rolls around, grapes are hand harvested and transported to the winery where they are vinified in concrete tanks using natural yeast fermentation and a minimal amount of sulphur. The wine is then transferred to barriques or foudre for 12 months and no filtration upon bottling. It all sounds so simple. And in many respects it is - grow the best grapes you can, don’t add too much or do too much. The magic, however, is in the soils and the care given to the ecosystem surrounding the vines. The team at Clos du Jaugueyron are proponents of the approach to outstanding results - Margaux reminiscence of simpler times, finessed and pure, with an unmistakably contemporary feel that’s approachable now. Personally, we’re inspired by this Bordeaux love story.
