  • Pastis Garagai | Aix-en-Provence | Mosaique Wines

    Pastis Garagai, is the work of young Maixent Dubois. Growing up among the family vineyard in Provence might have steered him towards the family business; however he has chosen to take the spirit of terroir and apply it to pastis. The story began with 300 bottles for the 2019 vintage, as a side hustle while Maixent was working part time at the vineyard. Today, the average yearly production is still tiny, with just 5,000 bottles per year, to ensure each vintage produced retains a focus on quality. Distillerie GARAGAÏ Aix-en-Provence Organic Sometimes we find a wine, and other times a wine finds us. Then there is the rare occasion when it’s not wine at all, rather a drink to remind us of hot summer afternoons, village parties and Le Tour. On a recent trip back to France, I took an afternoon out to travel to a nearby town to watch a stage of Le Tour de France pass by. It was the peak of the summer heat wave, and rather than stand in the sun waiting for cyclists, I nabbed a shady outdoor spot at the most local of bars where the pastis was cheaper than bottled water. By the end of that tall, refreshing glass it was clear our next producer would be the best expression of this rustic, aniseed-y spirit I could find. Pastis Garagai, meaning ‘gulf’ or ‘hole’ in local Provencal dialect, is the work of young Maixent Dubois. Growing up among the family vineyard in Provence might have steered him towards the family business; however he has chosen to take the spirit of terroir and apply it to pastis. The story began with 300 bottles for the 2019 vintage, as a side hustle while Maixent was working part time at the vineyard. Today, the average yearly production is still tiny, with just 5,000 bottles per year, to ensure each vintage produced retains a focus on quality. Pastis Garagai is distilled from a base of star anise and liquorice from Provence plus about twenty other botanicals and plants, many of which are foraged from the Sainte-Victoire mountain or grown organically on the vineyard. These include fennel flower, lemon basil, liquorice basil, Marseille basil, peppermint, tarragon, sage, absinthe, verbena, thyme, rosemary and lemon thyme. By sourcing locally, Maixent can limit the environmental impact of transportation, control picking so he takes only what is required and importantly provides the freshest possible ingredients for his pastis. The depth of flavour added by fresh botanicals means the amount of added sugar is three to four times lower than commercial brands. The distillery itself is based in Aix-En-Provence, and consists of three small alembic pot stills - one 400L, one 300L and one 100L. After the botanicals are harvested from April to October, they undergo a week-long maceration one by one with a neutral grape alcohol. The fresh plants haven’t been dried beforehand, so they keep their natural vibrancy and deepness of flavor. After this comes the crucial blending process, taking place in November, and finally bottling with light filtration and no sulfur added. The result is a truly refreshing, artisanal expression of a traditional southern France aperitif. We love Maixent’s approach to making pastis from a single origin, a little bit like a wine domaine producing grapes only from one location.To make a bold statement, we think it’s the best pastis out there.     There are few estates in Saint-Émilion with the same combination of heritage, integrity, and forward-thinking as Château Grand Corbin-Despagne. Owned by the Despagne family for over 200 years, the estate lies in the northwestern reaches of the appellation, bordered by Pomerol to the north and Château Cheval Blanc to the southwest. This privileged location, combined with a deeply rooted family philosophy and exceptional farming, produces wines that are among the most consistent and soulful in the region. The Despagne name has been part of the Saint-Émilion landscape since at least the 17th century. In 1812, Louis Despagne, descended from generations of vignerons, acquired the estate’s first plots in the hamlet of Corbin. Since then, seven generations have cultivated the same soils, gradually shaping what would become Château Grand Corbin-Despagne. The estate was awarded Grand Cru Classé status in 1954, and has continued to honour that title through precision, patience, and quiet evolution. Today, the estate is led by François Despagne, a thoughtful vigneron whose background in molecular biology and oenology reflects his deep respect for science, observation, and the living vineyard. Taking over in 1996, François has helped guide the estate into a new era of sustainability, without ever losing sight of tradition. Describing himself as a modern traditionalist, he sees terroir as a living system—one that requires balance, curiosity, and constant care. The 29-hectare vineyard is a patchwork of old vines, each parcel planted to match its soil type and microclimate. Here, sandy-siliceous soils with iron-rich sublayers alternate with ancient sands over compact blue clay—an exceptional matrix that lends the wines both finesse and depth. This geological diversity allows François and his team to take a parcel-by-parcel approach, applying meticulous attention to the needs of each vine, each rootstock, each variety. Organic trials began in the early 2000s, with full conversion achieved by 2010, and official certification following in 2013. Biodynamic principles are now being explored across selected plots. No herbicides have ever been used. Vineyard work is entirely hands-on—from pruning and crop thinning to berry tasting for harvest timing—and each decision is made in pursuit of one goal: to let the land speak clearly through the wine. In the cellar, grapes from 53 distinct plots are fermented in small, temperature-controlled vats, allowing each parcel to express its identity. Fermentation techniques vary by lot, including pump-overs, délestage, and occasional pigeage, with each step guided by analysis and intuition. After vinification, the wines are aged for 12–18 months in French oak, with final blending taking place after careful élevage and tasting across the 312 barrels. The wines of Château Grand Corbin-Despagne are celebrated for their balance, structure, and longevity. Revue des Vins de France praises their "grace and depth," while Bettane & Desseauve hails the estate as producing one of the best value Grand Crus Classés in Saint-Émilion. Vintage after vintage, the style remains recognisable—floral and red-fruited in youth, with layers of spice, truffle and violet emerging as the wine matures. The tannins are always fine, silky, and unforced. Grand Corbin-Despagne represents the kind of Bordeaux we most admire—wines of place, made with integrity, by people with a profound connection to the land. It was during my student days in Bordeaux that I first visited the estate. François Despagne’s clarity of vision and generosity of knowledge made an impression that has stayed with me ever since. Later that day, tasting the wines—pure, resonant, and unmistakably honest—I knew I was experiencing something rare. This is Saint-Émilion at its most sincere: no artifice, no excess, just the quiet persistence of a family, a terroir, and a wine worth seeking out. The selection process is rigorous, and each vintage is tasted prior to import. Once selected, our wines are shipped by sea, temperature controlled to avoid any alteration of the wine.   • Clotilde Davenne | Chablis | Mosaique Wines

    In 1989, Davenne's journey in Chablis started, working for one of the region's star producers during 17 years, she gained an intimate knowledge of Chablis unique terroir and understanding of vintage styles. Then in 2005, Davenne set off on her own path to producing fantastic Chablis wines. clotilde davenne Chablis, Burgundy Organic non-certified Meeting Clotilde Davenne and trying all her wines from the Petit Chablis to her best Grand Cru vineyards made things very clear: she knows what she is doing. Clotilde was not from a wine family; her father was a humble farmer near the Morvan mountains. She learned how to make wine at school in 1986 and later travelled to California for vintage. In 1989, Davenne's journey in Chablis started, working for one of the region's star producers: Jean-Marc Brocard. During a incredible 17 years with mentor Brocard, she gained an intimate knowledge of unique terroir and understanding of vintage styles. Then in 2005, Davenne set off on her own path, starting with the 1.9-hectare plot of Petit Chablis called “Les Temps Perdu” (which mean the lost time). Despite locals telling her that this land was a waste of time, Davenne knew this vineyard had potential. The vines were lying on Kimmeridgian soils just like AOC Chablis terroir, only called “Petit” because of its exposition to the North. With growing self confidence, she started putting together a patchwork of vineyard expressing different grapes and terroirs, one plot of land at a time. It now includes a mosaic of beautiful vineyards: Bourgogne AOC, Petit Chablis, Chablis, Chablis 1er Cru (Vaucoupin, Montmains, Fourchaume, Vaillons) and Chablis Grand Cru (Bougros, Les Clos, Blanchots), as well as 100 year old Sauvignon Blanc from Saint-Bris and Pinot Noir from Irancy. Her gamble paid off, becoming one of Chablis rising stars thanks to her hard work and the purity of her wines. Clotilde was hugely honoured to be included in Jancis Robinson and Hugh Johnson 's "The World Atlas of Wine" for one of her best vineyards: Montmains 1er Cru Chablis. Now Davenne's 40 year old Chablis vines are located in the village of Courgis, south of Chablis. The vineyard is sheltered from winds, on a steep slope of Kimmeridgian with soil, peppered with fossilised oysters from when the sea covered the Paris basin150 million years ago. Clotilde farms her vineyard naturally, without the use of chemicals, with almost all of her production is harvested by hand. You won't find any oak barrel in her cellars however, as Clotilde is a big believer of stainless steel vinification for her Chablis, focusing on purity and terroir expression. All Davenne's wines undergo malolactic fermentation for complexity, with use of the lunar calendar for racking and bottling, then light filtration. These wines are then stored carefully in our temperature regulated warehouse. Up to the final delivery, we prevent the bottles from any possible damage for example light, high temperatures, fluctuation of temperature and vibration. Even though we aim to provide the best possible service, accidents can happen. If during the delivery, a bottle is broken by the courier we will replace it by the same wine or propose an alternative if we no longer stock the same wine or vintage. If the replacement doesn’t suit you, we are happy to refund the total amount of the bottle. If you believe your bottle of wine to be corked, we will need the corked bottle back with at least ¾ of the wine in the bottle and the original cork to assess the fault. If this is the case with your bottle, we will replace it or find the best alternative, if the corked wine is out of stock. The bottle must be sent back within 7 days of it being opened. The beautiful Champagne they craft from the Cote des Blancs, Montagne de Reims and Vallée de la Marne are going strengths to strengths, we could't recommend them enough for their elegance and purity. champagne WARIS HUBERT Côte des Blancs & Vallée de la Marne, Champagne Organic certified At the heart of Avize in the Côte des Blancs, Champagne Waris-Hubert is very much a family story. Fifth-generation vignerons Stéphanie Hubert and Olivier Waris, together with their children Blanche, Antonin, and Cyprien, tend 18 hectares of vines across some of Champagne’s most prized terroirs. Their roots run deep, yet their outlook is forward-thinking, marrying heritage with a modern sensibility. From the 2023 vintage, Waris-Hubert is proudly organic certified—an achievement shared by only a handful of Champagne growers (5%). Horse-drawn ploughs in their Grand Cru parcels, sheep grazing the cover crops, and minimal intervention in the cellar all reflect a philosophy of care, patience, and respect for the land. As Olivier notes, “The more the roots tickle the chalk, the more the wines reveal finesse and character.” This respect extends beyond the vineyard. Under the guidance of son Cyprien, the family also runs a working farm, harvesting vegetables and crops with the same care and patience that underpin their viticulture. This holistic approach reflects their philosophy of stewardship: tending the earth in a way that ensures vitality for generations to come. In the vineyards, they work across a remarkable patchwork of terroirs: Avize, Oger, Cramant, Chouilly, Mesnil sur Oger (Grand Cru, Côte des Blancs), Grauves (Premier Cru, Côte des Blancs), Aÿ (Grand Cru, Vallée de la Marne), Barbonne-Fayel (Coteaux Sézannais), Marfaux (Vallée of Ardre) and Monthelon (Côteaux Sud of Epernay). The plantings are 70% Chardonnay, 20% Pinot Noir, and 10% Pinot Meunier, true to a Côte des Blancs heritage and the broader expression they seek from Champagne’s mosaic of terroirs. In the cellar, precision and patience is the name of the game. Each parcel is vinified individually, allowing the character of place to shine. A smaller component of the base wines is produced in large oak barrels (600 litres from Tonnellerie de Champagne), which brings subtle texture and depth. They prefer partial malolactic fermentation to preserve energy and vibrancy, ensuring their Champagnes retain the tension and freshness that define their style. The resulting wines are elegant, expressive, and finely etched, expressions of both site and philosophy.     Just 30 mins north of Toulouse, some of France’s rarest vines are painstakingly nursed back from extinction by husband and wife team Diane and Philippe Cauvin. The pair is living their dream, crafting wines from a regional variety: Negrette, which is native to their area of Fronton. Diane took the reigns of the family estate after learning viticulture and completing a tour de force throughout French vineyards including Burgundy. The first and perhaps the most significant change was to step up the effort to preserve these rare vines by farming Chateau La Colombiere biodynamically in 2006. As the vines have been cultivated here in the same way since the 15th century, this was a significant change, to say the least. Add to this hand picking and sorting and you get the base to create something delicious. Terroir is composed mostly of gravel and sandy alluvial soils part of the Tarn river terraces. Colombiere's 25 years old vines share the space with some fantastic 70 year old Negrette vines. Every biodynamic preparation is prepared and dynamised on site, with the focus placed on activating life in the soils by using weeds, cereal cover and ploughing. The Cauvin's prefer a 'hands-off' winemaking style, considering their efforts are best directed at the vineyard. In the cellar, they use gravity to preserve the quality of the grapes.The grapes are hand harvested and hand sorted. For reds, grapes are then partially de-stemmed and lightly crushed before moving straight into cement vats. Diane and Philippe will maintain that it’s not rocket science. We think they’re pretty special though, and can drink these fresh and floral wines morning, noon and night…(responsibly).   • Domaine des Trouilleres | Auvergne | Mosaique Wines

    Les Athletes du Vin is a collective of some of finest organic Loire Valley producers. Established in 2016, their objective is to make great value wines for wine lovers across the world, highlighting the appellations and grape varietals that contribute to the diversity and beauty of the Loire valley. DOMAINE DES TROUILLERES Auvergne Organic certified Volcanic soils, it turns out, are destined to follow Mikael Hyvert wherever he goes. Perhaps they have a natural pull that keeps Hyvert coming back. Either way, from the volcanoes of Tahiti that filled his youth, to the dormant rises of Auvergne, there’s no questioning Hyvert’s passion for this landscape. Growing up in Tahiti with a French father, and a family friend in the wine import trade, it was only a matter of time before Mikael would come to discover the pleasures of wine. When looking for a career path after graduating high school, it would only take a gentle nudge to point him in the direction of Bordeaux, and enrolling in Blanquefort viticulture school. And from here, the rest, as they say, is history. The natural wine bug bit hard during this time, as Mikael became more and more focused on these techniques. A friendship forged in Bordeaux with a Loire local then resulted in Mikael seeking out legends from the region, including Olivier Lemasson, Herve Villemade and Thierry Puzelat to work with and learn from. After an eventful vintage experience in Chile, Hyvert made his way back to the fertile learning grounds of the Loire and Bordeaux before an opportunity to make his own wine presented itself. Plans were already brewing to move to Languedoc with his archaeologist girlfriend, Camille, however the right fit was proving hard to find. Fate intervened when Camille was offered a 12 month contract in the Auvergne. The volcanic landscape reminded Mikael of his childhood in Tahiti and it wasn’t long before the winemaking potential of the region became apparent. While finding his feet in Auvergne with different domaines, fate again intervened through a chance meeting with winemaker Jean-Pierre Pradier, founder of the AOC Cotes d’Auvergne and owner of Domaine des Trouilleres. The connection between the two was immediate, with shared views on organic farming facilitating a friendship that would later lead to Pradier finding his successor in Mikael in 2016. The region is technically part of the Loire, where Mikael had already spent much time, and while it’s not as well known as other areas of the Loire, Auvergne has a long, storied history of resistance spirit. In fact, it used to be one of the biggest wine regions in France, with 45,000ha under vine before a combination of Phylloxera and population movement decimated the region. Today, Auvergne is enjoying a renaissance with young, dynamic winemakers making the most of more affordable land and excellent growing conditions for organic wines. The climate tends to be a dry mediterranean one, with continental influence and a mountainous landscape to provide protection from inclement weather - ideal for minimal intervention farming. Domaine des Trouilleres produces gamay, chardonnay and pinot noir in this climate, on a tiny 5.8 ha situated between 380 - 500m altitude. This pocket size vineyard planted at 5,500 vines per ha makes only 35,000 bottles yearly, so we consider ourselves very lucky to get an allocation! In the winery, Mikael follows natural winemaking practices to complement the organic approach in the vineyard. This means no sulphur use during vinification, with a small amount only used during bottling.     Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares farmed organically. Domaine Cruchandeau Burgundy Organic It is not everyday one must choose between the life in the vines and that of a touring electronic music artist, however this is the story of Julien Cruchandeau. Nestled in the heart of Burgundy, where the terroir whispers stories of tradition and excellence, Domaine Cruchandeau emerges as a testament to the marriage of passion and craftsmanship. Born in Chenôve in 1978, Julien's journey into winemaking unfolded organically, leading him to become one of Burgundy's most talented winemakers of his generation. Despite lacking a winemaking lineage, Julien's early fascination with taste, aromas, and flavours led him to pursue a culinary path. Graduating with a specialisation in hospitality in 1997, he embarked on a journey through high-end establishments in France and England, including a stint as a waiter in a prestigious London brasserie. It was here that he delved into the intricate world of global cuisines and wines. Returning to Burgundy in 2000, Julien pursued a two-year course in oenology and viticulture while gaining practical experience at Domaine Seguin in Gevrey-Chambertin. By 2001, at the young age of 23, he assumed the role of estate manager and winemaker at Domaine France Lechenault in Bouzeron. Overseeing the entire winemaking process, Julien's efforts caught the attention of wine critics, with his name featured in the Guide Hachette in 2002, along with winning a gold award at the Concours des vins de la Côte Chalonnaise in 2005. In 2003, Julien established Domaine Cruchandeau, procuring his initial vines in the lesser-known Bouzeron appellation and invested in all the essential winemaking equipment. Having already conquered one underdog, and seeking to expand his land under vine, he moved to the Hautes Cotes de Nuits in 2007, settling in the village of Chaux. Perhaps controversial at the time, the move turned out to be a stroke of genius given growing conditions are increasingly favourable toward the higher slopes of Burgundy. Throughout this time, Julien's artistic journey extended beyond winemaking; he co-founded the Shrink Orchestra, showcasing his talents as an electronic music artist. This adventure, spanning from 2004 to 2010, included around 200 concerts across Europe and the creation of his record label, Guls Records. However, in 2010, Julien chose the secateurs over the drumsticks, devoting his career to winemaking. Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares, with Julien's artisanal approach and meticulous attention to detail shining through. His commitment to organic farming is the centrepiece of his approach, eschewing chemical fertilisers since 2011. Harvesting is carried out later in the season, and by hand to ensure only the finest grapes reach the winery. The wines are made as naturally as possible with indigenous yeasts fermentation, following traditional methods while applying a few modern winemaking techniques, including temperature control. Maturation is undergone for 8 to 18 months, depending on the vintage, in vats or old French oak barrels with some lees aging for whites and not too much batonnage. Reds are vinified with light infusion including foot crushing for 3 to 6 weeks and some 50% whole bunches to no whole bunches depending on the cuvee and the vintage. The wines are bottled after a light filtration, except for the Nuits-Saint-Georges, which remains unfiltered. A standout feature of Julien's winemaking journey is his dedication to the often-overlooked grape variety, Aligoté. His Bouzeron 'Massale' and Hautes Cotes de Nuits Aligote wines exemplify the potential of this grape, with the former gifted by the godfather of Burgundy himself, Aubert De Villaine in a joint effort to shine a light on Bouzeron. Today with the collective ‘Les Aligoteurs’ lead by famous vignerons such as Sylvain Pataille, Julien Cruchandeau and his friends are making Aligoté shine. Julien's wines, characterised by their aromatic, depth, purity, and pretty qualities, have positioned him as one of the region’s most exceptional winemakers. His ability to unlock the potential of lesser-known appellations highlights both his skill and unwavering commitment to Burgundy's rich winemaking heritage.
