    chai saint etienne Côteaux du Quercy, South-West France Sustainable Domaine Chai Saint Etienne is the underlying motivation for the beginnings of Mosaique wines- so forgive a little biased in this blurb. Located just 20 minutes from Cahors, the estate has been run by generations of Gisbert vignerons since 1778, focused on making wine to be shared amongst good company (and preferably over long lunches). The vineyard is nestled between fields of sunflowers and fruit trees, with vines wrapping around the church of Saint Etienne- its bell tower keeping watch over the grapes. Making the best wine possible from sustainable vinification methods is primary for our family, sticking to tried and tested processes from generations past, in order to create balanced and elegant Cabernet Franc, Merlot, and Côt blends, as well as delicious Cabernet Franc and Rosé. Camille and son Roger knew they were on the right track as the land was cultivated for vines, finding multiple reminders of the Roman ambitions to also make wine on the site. The remnants of amphora, and of course the mosaics, continue to serve as a reminder of simple, yet effective, winemaking. The Coteaux du Quercy AOC is one of France's smallest wine region with only 400 hectares and less than 20 growers. After Phylloxera, Quercy, once 50 000 hectares, was almost destroyed. Roger Gisbert and his brave mates started their appellation from scratch. With high draining slopes of white clay and limestone soils, Cabernet Franc was chosen to blend with the Merlot, and of course the Côt (Malbec). Today, Benoit and Mathieu farm the vineyard sustainably, helped by the geographic situation of parcels on a protected south-east facing amphitheatre. Pruning is done with the moon like generation past, a grassy cover crop is left in every second row to reduce vigour and encourage competition, allowing lower yield. Rosé sec This rosé is dry, revealing notes of stone fruit, raspberry, and strawberry with a lovely texture. Rouge tradition This red blend is showing red fruits as well as darker forest berries and liquorice with generous ripe fruit.     Domaine Vincent Gaudry Sancerre, Loire Valley Biodynamic certified Vincent Gaudry lives in the tiny vintners' hamlet of Le Petit Chambre in Sury en Vaux, 3 kilometres from Sancerre. Sury en Vaux means “the smiling valley”, and it makes much sense when you reach this place. Vincent took over the vineyard from his family in 1993, introducing the start organic and biodynamic farming. In 2002, the vineyard was certified organic, before full biodynamic Demeter certification in 2004. Organic and Biodynamic were essential for two reasons: first for his health and then to respect his terroirs. As a true minimalist Vincent’s guiding principle is “Trust in Nature”. He makes wine in tune with the power of the elements, with a feeling of being profoundly connected to the land. Inspired by local vignerons of the past from the village, insiders considering Gaudry's wines to be the most authentic expression of Sancerre. Although biodynamics is one of his pillars, Vincent continues to push boundaries by mixing pragmatism and intuition to pioneer new methods, which has earned him a following. The 9 hectare vineyard is composed of limestone and marl, 90% planted with Sauvignon Blanc and 10% with Pinot Noir. The vineyard averages vines of 40 years of age, planted by massal selection from a plot of 90 year old vines of old Sauvignon varieties. It gives berries of different size and maturity, which Vincent believes brings complexity in his wines. The grapes are all hand harvested in small baskets. In the winery, Vincent remains a traditionalist, shying away from trends he looks for balance between both varietal and terroir. The wines are fermented in temperature controlled stainless steel tanks, with native yeasts to allow the terroir and varietal expression to shine through. The wines are then aged on lees and are bottled unfined and unfiltered with the bottling date according to the lunar calendar. The result is precisely delineated wines with stony minerality, concentration, texture, weight, complexity and lengthy vibrant finish. Le Tournebride Sancerre This 30 years old vineyard is representative of the 3 Terroirs of Sancerre: the stony, rubble-like Kimmeridgian limestone (Caillottes) brings the aromatics, the clay-limestone or marl (Terres Blanches) brings the structure in the mouth and the flint (Silex) the length. The wines are vinified with natural yeast in stainless steel and oak. Each batch moves from one vessel to the other, before final blending and ageing on fine lees. The result is a wine with spice, texture and impressive length, with a mineral finish. Constellation du Scorpion Sancerre This wine is dedicated to the biodynamic memories of the elements and named for the scorpion sign, which is sharp like the Silex’s terroir where the vine are planted. The wine is vinified in oak, with time varying each year based on vintage conditions. Scorpion is best enjoyed after a few moments of air - after which it opens to a textured palate of almond, lime-flower and grapefruit. The mineral attack persists, with flint and earth flavours, grilled almond, dried pear, blood orange and apricot. The finish is saline, elegant, clean and long, with lingering white fruits. In the realm of Chenin, Emmanuel is unyielding in his dedication to showcasing the remarkable diversity of terroirs and treatments. His contribution to the family domaine has been his meticulous approach to crafting these wines, a dedication to the 'No Botrytis' style setting a new standard for how pure dry Chenin Blanc can be. The grapes are harvested before the onset of botrytis, ensuring that only unaffected berries make it into the final wines. For the dry whites, any botrytised grapes are painstakingly removed. The harvest is conducted in two sweeps, focusing on the golden moment when the grapes start to turn yellow. ​ In the cellar, Emmanuel uses sulphur judiciously, avoiding overuse, and occasionally explores trials with zero added sulphur. His exacting standards extend to the selection of juice, with whole clusters gently pressed without crushing. Pressing is slow and the first twenty litres of free-run juice are consistently discarded in order to avoid undesired herbaceous notes and bitterness. ​ Natural fermentation begins in stainless steel tanks, then the wines are transferred to their ageing vessels: cement tanks lined with sandstone tiles, 400 and 500-liter barrels or Stockinger foudre (no new oak). The wines ferment until fully dry for the sec. They are usually lightly filtered. Important note, sometimes 30% of his Chenins undergo partial malolactic fermentation, a ‘winemaker’s choice’ to enhance the character of his wines. And yet, after a long seven year search, we’re delighted to welcome another winemaking family with the same exacting standards - Domaine Turenne. A gem in the heart of Provence, Domaine Turenne is located northeast of Bandol in the heart of the Triangle d’Or in the Côtes de Provence, between Cuers and Pierrefeu (Var). This family-owned estate has been a fixture in the region for over a century, named in homage to the familial connection to the Chocolaterie de Sedan which produces Turenne Chocolate. In 1990, Philippe and Cécile Benezet took the reins, realising their dream of crafting their own wines, rather than sending the estate fruit to the co-op. Their dedication paid off in 1994 when the estate's cellars were established, marking the beginning of a remarkable journey. The now 20 hectares of vineyards at Domaine de Turenne are planted to classic regional varieties including Cinsault, Syrah, Grenache, Carignan, Mourvèdre, Rolle, and Petite Clairette, with an average age of 40 years, with some vines dating back over a century. They are a testament to the marriage of tradition and innovation, and proudly bear organic certification (Ecocert), with a growing commitment to biodynamic practices. The secret to Turenne's exceptional wines lies in the unique terroir of the vineyards. The alluvial cone's stony clay-limestone soils, and well-drained sandy subsoil with small stones known as "Gavroches" bring a distinct minerality and impeccable drainage to the vines. The result is wines that carry the unmistakable signature of their origin. Cécile and Philippe Benezet approach their work with thoughtful care in the vineyard and cellar, aiming to produce wines that are sincere, respectful of their terroir, and as natural as possible. For them, winemaking is an alchemy of choices, craftsmanship, and principles, creating healthy and balanced wines that capture the essence of their land. When vintage rolls around, winemaking is a harmonious blend of traditional practices and modern techniques. Grapes are hand-harvested in the morning to preserve their freshness and to exercise better control over the initial stages of vinification. Fermentations are carried out with indigenous yeasts, with techniques adapted to the requirements of each vintage. This approach results in well-balanced wines, free from excessive acidity or sugar levels.     Domaine Nudant Ladoix-Serigny, Burgundy Sustainable Established in the 15th century, Domaine Nudant is located in Ladoix-Serigny. Fast forward to 2003, when Guillaume Nudant spearheaded a new generation making his debut for the Domaine. Today he has 16 hectares of vines in his care, spreading across the Côte de Beaune and Côte de Nuits including prestigious terroir such as Grand Crus Corton-Charlemagne, Corton-Bressandes, Echezeaux, along with several Premiers Cru on the hill of Corton; Aloxe Corton “Les Valozières”, “La Coutière” or the monopole “Clos de la Boulotte”. In Ladoix near the cellar, they produce Ladoix village, Ladoix 1er cru “Les Gréchons”, “Les Buis”, “La Corvée”. Finally they also farm vineyards in Nuits-Saint-Georges, Vosne Romanée, Volnay 1er cru “Les Santenots”, Puligny-Montrachet with the 1er cru “Les Folatières”, as well as a beautiful Meursault village. Phew! ​Young Guillaume has carved out his niche, following winemaking and viticultural practices to shine a light on the incredible terroir he is now the custodian of. This includes grating selection, yield control, regular ploughing of the vines, organic composting, copper treatments and sustainable farming without the use of herbicides. Discovering these wines is indeed a journey through Burgundy. They are impressive, honest expressions of place that continue to evolve in the bottle, whilst being approachable and moreish on release. Ladoix 1er Cru “Les Buis” Delicious Ladoix, bright with high precision and vibrancy. Made from a small 0.98 hectare, with 40 year old vineyard. This wine has a delicate nose with aromas of red fruits such as blackcurrants and cherries. Elegant aromatics, with a hint of earthiness. Limited production of approx. 5 500 bottles every year. With careful cellaring, enjoy up to 10 years old. Vosne Romanee From 0.94 hectares, located in the small village of Vosne-Romanée, with old vines that are more than 50 years. Made of low yield (37 hectoliters), this Pinot expresses itself beautifully with an intense colour and a nose made up of dark berries such as blackberries and blueberries. Powerful and still full of finesse, you will also get a touch of spice thanks to 20% new oak on the finish. Decant for an hour in its youth before enjoying, alternatively it will develop for 15 years. Volnay 1er Cru Les Santenots (vine leased) Les Santenots vineyard is located in the southern part of Volnay, near the village of Meursault. The particular structure of the soil (limestone, gravel and marl) makes Les Santenots a very aromatic wine, full of blackberries, raspberries and subtle notes of oak. It’s an elegant wine, delicately complex and concentrated at the same time. Meursault (vine leased) Citrusy, with subtle notes of spice and vanilla. On the palate, it shows a deep sense of place through purity, minerality and a finer texture if compared to most super creamy Meursault. Impressive length and finish.     camin larredya Jurancon, South-West France Organic and biodynamic certified Jurançon near the city of Pau is a special place for many reasons. It’s simply one of the most beautiful French vineyards, with steep slopes and scenic landscape, including the towering, often snow-covered, Pyrenees in the background. Jurançon is a pocket-size appellation of about 1,000 hectares farmed by 100 producers. Producing only white wine, it is historically known for late-harvest sweet wine or 'moelleux'. However dry white Jurançon wine was recognised with a separate AOC in 1975, known as 'Jurançon sec'. Dry Jurançon can be among the best whites you'll ever taste, particularly in the hands of a legend like Didier Dagueneau who helped to put Jurançon on the map. Today Jean-Marc Grussaute from Camin Larredya is one of the leading force and gaining plenty of fans among the sommelier community in France. Jean-Marc and his mother run the show and farm 'their hill' together. The 9 hectares of vines and farm have been owned by the family since the early 1900s, with most of the current vines were planted in 1970s by Jean-Marc’s father. Organic farming has been the norm here from 2007 onwards, certified in 2010 and turning to biodynmaic farming in 2016. The vineyard is classically local in varietal plantings: 65% Petit Manseng, 27% Gros Manseng, 8% Petit Courbu and Camaralet. The vineyard sits at 300m altitude, with soils of silica-clay and subsoils of puddingstone. Precision is life here, every action serves the "purpose of the terroir and its continuity", according to Jean-Marc, who respects the soil’s health and its life. It's essential for him that the roots go deep to express the terroirs in the final wine. Jean-Marc works the soils, grow cereals or pulses in between the rows, and uses natural compost when needed. The singularity and honesty of his wines come from permanent attention. "La Part Davant", or oriental part is a Jurançon Sec blend of Gros Manseng, Petit Manseng and some Petit Courbu. Skin contact at first, the must ferments with natural yeast, moving with the temperature of the cellar and vitality of the fermentation. Then fermentation and ageing on lees for at least 8 months in barrels and foudres. Ageing takes place in barrel and foudres, with batonage to snap the lees back in suspension. The wine is then left to rest and evolve in the cool cellars. Intense on the nose, with beautiful notes of white peach, yeasty and toasty character. On the palate, it's all about the lively texture and fleshy white fruits as well as orange and citrus notes, with an elegant driven acidity and long mineral finish.     chateau Gombaude-Guillot Pomerol, Bordeaux Organic certified JANE ANSON: "There is a brilliant, brilliant estate that I love called Gombaude Guillot. They are a very small producer, organic, biodynamic - great to look out for and very good value." ​ True to the foundational spirit of Bordeaux, the estate dating back from 1860 was secured via marriage. The Bélevier family were well established as vignerons in Pomerol and Néac when this property was passed down to Marie Bélevier as a dowry in 1868. Later, in 1922, the actual chateau would be added to the property, retiring itself as the local post-church cafe for a grander life. Fast-forward to 2010, and you’ll find 6th generation Olivier Techer at the helm of this certified organic estate. Perhaps it was this extensive knowledge of healthy soil that also fostered a passion for sustainability that has extended to a pursuit of biodynamic certification Chateau Gombaude-Guillot are recognised as one of the first in area to spearhead an organic approach in the vineyard, with the Château Gombaude-Guillot 2000 vintage the first organic certified Pomerol wine, along with their 1.15 ha Clos Plince. The desire to lessen the environmental impact of the chateau extends beyond the vineyard, sourcing local oak for use in the winery. Planted across 7 hectares, the vines of Chateau Gombaude-Guillot are located in the unique plateau of Pomerol; with 60% Merlot, 35% Cabernet Franc and 5% old vine Malbec, which is more than 80 years of age. Surrounded by decent neighbours (Petrus, La Fleur-Petrus, Chateau Lafleur, and Chateau L'Eglise Clinet) the vineyards are comprised of glacial gravel deposits and clay, and vineyard work is focused around soil health, low yields, and maximising ripeness. To encourage microbiological activity between vineyard rows, Olivier has planted a range of cover crops, and avoids using chemical or synthetic herbicides or fungicides. The importance of the vineyard’s ecosystem is the priority here. When the time comes to harvest, grapes are hand-picked, then sorted, de-stemmed and lightly crushed. The wine then undergoes natural fermentation in temperature-controlled concrete and stainless steel tanks for 3-4 weeks, with regular pumpovers occuring at the beginning of fermentation (2-4 times a day). Once ferments are complete, depending on the cuvee the wines are aged in a mix of stainless steel tanks, old oak barrels or amphora before bottling (unfiltered). The resulting wines of Château Gombaude-Guillot are known for their elegance, finesse, and balance.     CLOS MARIE Pic Saint Loup, Languedoc Organic certified and Biodynamic Those in wine circles have known the potential of the Languedoc region for decades. With a large area under vine, it’s one of the most prolific wine producing regions in France, however it remains one of the most misunderstood (in our humble opinion). The region is an agricultural playground, with ancient soils, mature vines and a terroir that is more suited to natural farming than many of its surroundings. Languedoc has often attracted innovative winemakers given its diversity, and flying largely under the radar has allowed producers to push boundaries, experiment and ultimately create some of the most exciting wines in the world - including those of Clos Marie. ​ Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint-Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Until this point, the vineyard was a reliable source of fruit for the local cooperative, however Christophe and Françoise felt there was a greater potential for these vines. Their intuition was confirmed after consultation with a slew of France’s greatest vignerons and domaines (Didier Dagueneau, Clos Rougeard, and Grange des Pères), and before long they set out on bottling wines under the Clos Marie label. The hardworking pair focused on caring for the vineyard above all else, quickly realising the benefits of organic and biodynamic practices, they began solely farming this way in 1997, achieving organic certification in 2010. ​ Today, the domaine’s vineyard holdings sit at 23 hectares (20ha reds, 3ha whites), and are sprinkled in and around the village of Lauret, located to the north of Montpellier. The vines sit on terraces nestled on the backside of the Montagne de l’Hortus, the peak that faces the pointed Pic Saint-Loup. This sub appellation under the Coteaux du Languedoc AOC is known for some of the most finessed wines of the region, in large part due to the cooling breezes that blow south from the Cévennes Mountains. ​ Working the vineyard to produce the best possible wines remains the focal point for Christophe and Françoise. The soils of the vineyards are continuously ploughed, forcing the vines’ roots to seek nourishment deep down in the chalky limestone bedrock. Yields are kept low, between 15 to 35 hl/ha, with 75% of the vineyards replanted from séléction massale cuttings (sourced from their 70- to 100-year-old vines) to achieve a higher vine density. Many growers believe this causes enough competition among the roots to invigorate the vine. ​ Perhaps the most intriguing and exciting element to Languedoc wines, and Clos Marie in particular is the diversity of varietals producers have at their fingertips. For Clos Marie, this includes Cinsault (10%), Syrah (50%), Grenache noir (15%), Carignan (15%), Mourvèdre (10%) for the reds, and Carignan gris (15%), Grenache blanc (20%), Clairette (10%), Roussanne (15%), Vermentino (10%), Grenache gris (20%), Muscat à petits grains blancs (5%) for the white wines. ​ In the cellar, Christophe continues his fastidious approach to winemaking, firmly believing the devil is in the detail. As the hand-picked grapes arrive in the cellar, they then ferment naturally in cement tanks and undergo long cuvaisons at cool temperatures, stabilising the wines sufficiently so that fining and filtration are not necessary. Vinification varies with each cuvee, with some of the wines, such as the signature ‘Les Glorieuses’ aged in barrel for up to three winters, mostly in neutral barrels and newer Stockinger foudres. Christophe is also in the minimal intervention camp and uses low sulfur while ensuring quality and purity in the end result. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other, better known producers. Christophe and Françoise do not chase the limelight, or endeavour to be the best known producers in the region.     Domaine Raphael Chopin Beaujolais Organic, in-conversion Beaujolais represents 18,000 hectares of vines, with this Beaujolais producer only farming 5 of them. Raphael Chopin, as humble as he is, shares an artistic talent just like his namesake. It was perhaps meant to be that he became a winemaker, auspiciously born on November 21st - the celebration of Beaujolais Nouveau. Add to this, winemaking was already in his blood, having a winemaker grandfather. With the encouragement of his mother and grandmother, Raphael proudly and painstakingly revived his grandfather's vineyard, restoring it to something rather special. After studying in France, Raphael dreamed of California, but vintage was at the same time as in Beaujolais, so Australia came naturally as the place to go for a vintage stint. He then returned to Beaujolais, bringing grandfather's estate back to life with the beautiful 2009 vintage.​ Chopin's original vineyard in Lantignié is a beautiful mix of 28 year old young vines, planted in 1989, as well as some rare older 110 year old vines planted in 1905, with 100% Gamay as the only red grape allowed in Beaujolais. It is from this La Savoye vineyard that the Beaujolais-Villages is made from. This pocket size vineyard produces just 11,000 bottles, with Lantigné’s vintners working on a project with the AOC board to become the 11th Beaujolais, Cru and the first Beaujolais Cru to be 100% certified. Extending the family holdings, Chopin now also own small holdings in Morgon and Régnié, creating wines to express these diverse terroirs. ​Raphael farm the vineyard organically, working towards certification. This means no use of chemicals, instead he uses essential oils, copper and limited levels of sulphur. He is tilling the soil, hand harvesting and sorting, essentially managing his small vineyard like he would a precious garden. The result is simply delicious, with purity of fruit as the trademark.
