CLOS MARIE Pic Saint Loup, Languedoc Organic certified and Biodynamic Those in wine circles have known the potential of the Languedoc region for decades. With a large area under vine, it’s one of the most prolific wine producing regions in France, however it remains one of the most misunderstood (in our humble opinion). The region is an agricultural playground, with ancient soils, mature vines and a terroir that is more suited to natural farming than many of its surroundings. Languedoc has often attracted innovative winemakers given its diversity, and flying largely under the radar has allowed producers to push boundaries, experiment and ultimately create some of the most exciting wines in the world - including those of Clos Marie. Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint-Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Until this point, the vineyard was a reliable source of fruit for the local cooperative, however Christophe and Françoise felt there was a greater potential for these vines. Their intuition was confirmed after consultation with a slew of France’s greatest vignerons and domaines (Didier Dagueneau, Clos Rougeard, and Grange des Pères), and before long they set out on bottling wines under the Clos Marie label. The hardworking pair focused on caring for the vineyard above all else, quickly realising the benefits of organic and biodynamic practices, they began solely farming this way in 1997, achieving organic certification in 2010. Today, the domaine’s vineyard holdings sit at 23 hectares (20ha reds, 3ha whites), and are sprinkled in and around the village of Lauret, located to the north of Montpellier. The vines sit on terraces nestled on the backside of the Montagne de l’Hortus, the peak that faces the pointed Pic Saint-Loup. This sub appellation under the Coteaux du Languedoc AOC is known for some of the most finessed wines of the region, in large part due to the cooling breezes that blow south from the Cévennes Mountains. Working the vineyard to produce the best possible wines remains the focal point for Christophe and Françoise. The soils of the vineyards are continuously ploughed, forcing the vines’ roots to seek nourishment deep down in the chalky limestone bedrock. Yields are kept low, between 15 to 35 hl/ha, with 75% of the vineyards replanted from séléction massale cuttings (sourced from their 70- to 100-year-old vines) to achieve a higher vine density. Many growers believe this causes enough competition among the roots to invigorate the vine. Perhaps the most intriguing and exciting element to Languedoc wines, and Clos Marie in particular is the diversity of varietals producers have at their fingertips. For Clos Marie, this includes Cinsault (10%), Syrah (50%), Grenache noir (15%), Carignan (15%), Mourvèdre (10%) for the reds, and Carignan gris (15%), Grenache blanc (20%), Clairette (10%), Roussanne (15%), Vermentino (10%), Grenache gris (20%), Muscat à petits grains blancs (5%) for the white wines. In the cellar, Christophe continues his fastidious approach to winemaking, firmly believing the devil is in the detail. As the hand-picked grapes arrive in the cellar, they then ferment naturally in cement tanks and undergo long cuvaisons at cool temperatures, stabilising the wines sufficiently so that fining and filtration are not necessary. Vinification varies with each cuvee, with some of the wines, such as the signature ‘Les Glorieuses’ aged in barrel for up to three winters, mostly in neutral barrels and newer Stockinger foudres. Christophe is also in the minimal intervention camp and uses low sulfur while ensuring quality and purity in the end result. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other, better known producers. Christophe and Françoise do not chase the limelight, or endeavour to be the best known producers in the region. Instead, their focus is on their vineyards, the grapes and producing wines of incredible purity to showcase just how good Languedoc can be. DOMAINE nicolas Mariotti bindi Corsica Organic certified It’s all very well to leave Corsica for the bright lights of big city Paris, but once Corsica is in your veins, it’s only a matter of time before it calls you home. Such is the case for Nicolas Mariotti Bindi, who, while studying law decided that a life among the vines, and not the courtroom, was his true calling. Nicolas slowly made his way back to Corsica via a winding wine route, including Beaujolais. Once back on home soil, he sharpened his winemaking skills with local legends Antoine Arena, Domaine Leccia and Domaine Giudicelli. In 2007, he was fortunate to farm his first 5ha patch of vines thanks to the generosity of another local producer. Today, that patch has grown to fifteen hectares across several vineyards in Patrimonio, idyllically nestled between the Mediterranean sea and the Corsican mountains. The vineyards produce Niellucciu (aka Sangiovese) and Vermentinu (aka Vermentino), making wines for his premium Nicolas Mariotti Bindi Vin de France wines, along with the excellent entry level Cantina Di Torra AOP Patrimonio wines. Against normal convention, the Vin de France wines from this producer are more premium, with the classification due to high density vineyards, planted at 7,600 vines per hectare, which is outside AOP laws but provides more freedom in the vineyard. The climate in this region is quite unique, making for frosty mornings, early winters and humidity in the valley, all impacting the vineyards in different ways as they vary from 50 - 200m above sea level. This diversity in climate also extends to the vineyard terroir. The founding Porcellese massal vineyard planted in 1966 consists of old, low yielding (25lh/ha) Niellucciu bushvines, and sits on old alluvial and pebbles.The Mursaglia and Lumiu vineyards sit on clay and limestone terroir, with the Carcu vineyard a clay and limestone slope, facing north east with vines planted in 1970, 1995 and 2009. This last terroir is used for the Cantina di Torra wines. Bindi goes gently in his vineyards, careful not to overwork to avoid soil erosion, with low input of copper and sulphur in the vineyard. The care extends to handpicking the grapes, going into 500L boxes to preserve the berries, many of which are picked early to ensure signature liveliness in the end wines. In the winery, the white grapes are pressed in whole bunches before allowing to naturally ferment for up to one month. The wines are then held in stainless steel for 12 months on fine lees. Unusually for Corsica, the white wines also go through malolactic fermentation. The red grapes are de-stemmed in order to avoid bitterness, with cold maceration for 48 hours and a natural fermentation never exceeding one month. During this time, the juice will see light pumping over daily to wet the top of the tank, avoiding over extraction to create wines with finesse. None of the wines are filtered given the natural clarification over time. Perhaps it’s Mariotti’s training in law that has fostered a precision from the vineyard right through to the labelling - each wine has the exact percentage of alcohol and sulphur written on the label. The wines are also certified organic, however Bindi chooses not to advertise this on the bottles.. Nicolas’ wines are lively and incredibly pure. Delicious in their youth and also capable of ageing brilliantly, we recommend buying some for now, and some for later! Domaine DUSEIGNEUR Chateauneuf-du-Pape, Lirac, Cotes du Rhone Organic and Biodynamic certified ‘To receive and to pass on’, this is the mission statement driving Bernard Duseigneur and the team at Domaine Duseigneur. And walk the walk they do. The Duseigneur family relocated from Algeria in the 1960s, starting over in the Rhone Valley with ambition, with the patriarch Jean taking over abandoned plots and planting vines in Lirac. With not much money and children to feed, he set about working the land to improve the health of the soil and therefore the vines. It was this traditional approach to farming, coupled with a lack of funds to purchase chemicals, that set the Domaine out on an organic pathway from its inception. As per the family’s mission statement, the whole operation is driven by a desire to function harmoniously with their environment, honour the terroir and pass on the knowledge to future generations. Today, the Domaine is run by Jean’s son Bernard Duseigneur, who commands a total of 28 hectares, including nine in Chateauneuf with the remainder spread across the right bank in Lirac and Laudin. The vines are considerably aged across the board, averaging 50-60 years old, with some 135 year old beauties producing a tiny 800 bottles a year, Under Bernard’s stewardship, the Domaine began practising biodynamic techniques in 2002, with Ecocert certification three years later, furthering the dedication to the health of their vineyards. CHATEAU DE VILLENEUVE Saumur-Champigny Organic certified Why purchase just any old vineyard when you can snap up one with an 18th century chateau, complete with sweeping views of the Loire?! This may or may not have been the train of thought of Jean-Pierre Chevallier’s parents when they purchased Chateau de Villeneuve in1969, but in any case we consider it a good buy. The chateau had long been one in the hands of winemakers, with records showing wines produced on the site since 1577. Fittingly (and perhaps necessarily) a maze of old cellars, still in operation, can be found hidden underneath, and more recently in 2016 a modern winery was added to ensure the wines are made in the best of conditions. The estate itself is composed of 22ha of Cabernet Franc, along with 5ha Chenin Blanc, planted at 5,500 vines per hectare on limestone soils, with an average vine age of 40 years. The vineyard has been certified organic since 2009, however Chevallier has been farming according to organic principles since 1993. It must also be mentioned, the nostalgic Chevallier also has a few small parcels of gorgeous 80-year-old vines from his hometown of Dampierre-sur-Loire. In the vineyard, the utmost care is taken at each stage of the vine’s lifecycle. Chevallier prides himself on not taking ‘short cuts’, refusing to use chemical fertilizers or pesticides and working his vines and emphasizes that "in organic culture, we obtain more stable wines even at 13 ° and ph are lower. The roots really plunge into the ground.” Come vintage time, all grapes are hand harvested and carried in small crates to reduce any unnecessary damage. This is followed by hand sorting on the sorting table, before they are gently delivered, with the help of gravity, to underground vats, thus avoiding the harshness of the pumps. Aging takes place in a mix of foudre, 500L barrels, concrete and stainless steel tanks depending on the nature of the cuvee. Importantly, there is minimal sulfur used in the winery, and Chavallier does not add yeast or chaptalise. Cabernet Franc and Chenin Blanc lovers should find their happiness with Chateau de Villeneuve wines. Quality is the number one aim for Chevallier, resulting in balanced, mouth-watering cuvees, reflective of the land in which they are grown and the expertise of a family with five generations of local knowledge. Happily, the sixth generation are already on the job, with Jean-Pierre’s two daughters set to continue the family tradition - we can’t wait to taste their legacy! Many of the estates Mosaique Wines features have been in the same family for generations, acting as a loving custodian of their lands, passing on the knowledge of these ancient varietals to the winemakers who follow. It is this care and understanding of their terroir that has allowed us to enjoy full expressions of native regional varietals, produced with methods that have been tried and tested over centuries. These producers respect the land they farm above all else, using organic and biodynamic techniques to nourish their vines and the ecosystem around them. CIDRERIE DU LEGUER Britany Organic certified Who says great French ciders must come from Normandy?! Not us! Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. A Brittany native, Cedric completed his agriculture studies and travelled around the country and beyond, before stumbling upon what would become the Ciderie du Leguer. After restoring the orchard, 2016 saw the first vintage. Since then it’s been a labour of love and hard work – as Cedric and the team take it up on themselves meticulously maintain the farm following organic principles, lovingly tending to trees aged from between two and thirty years old. The trees themselves house a wide range of indigenous varieties, including: Marie Ménard, Jeanne Renard (Bitter varieties) Fréquin Rouge, Belle fille de la Manche Kermerrien, Frijelach’, Peau de Chien (Bitter-sweet) Bedan, Dous Moën, Douce Coët Lignée (Sweet) and finally Judor, Locart Vert, Rouget de Dol, Petit Jaune (Sharp). Each cuvee is made according to Cedric’s taste, however the same process is followed time and again. The trees are hand harvested three times between October and December, before further ripening in crates before pressing up to 4 weeks later. The ciders go through two ferments – the first lasting 5 months before bottling, followed by a 3 month fermentation in bottle. The ciders are bottled with no sulphur, just pure juice, naturally sparkling and spontaneous, no collage, only racking and filtering when required. All ciders are brut or extra brut. As for the end result? These are exceptional ciders with a vinous quality, brimming with character, complex and acid driven with perfectly balanced fruit and tannins. Cidre Granit Considered as a brut cider, Cidre Granit is a ‘cuvee parcelaire’, or a ‘single orchard’. The top of the tree cuvee, so to speak. Round, generous, fruity, subtle tannins. Not bitter. Apple blending: 15% bitter, 50% bitter-sweet, 20% sweet, 15% sharp. BrutBrut An extra-brut cider, this expression is fruity, slightly mineral, with good length and liveliness on the palate. Apple blending: 5% bitter, 50% bitter-sweet, 25% sweet, 20% sharp. Premium A brut cider, and another ‘Cuvée parcelaire’ or ‘single orchard’ expression. DOMAINE JULIEN & FRANCOIS PINON Vouvray Organic certified It’s a rare phenomenon that the Wine Spectator, The New York Times and The Robert Parker Guide are all in agreement, yet it’s a feat managed by Julien and Francois Pinon. Mentioned in the same breath as Huet by Asimov, considered benchmark chenin blanc by Wine Spectator and the producer of ‘ethereal’ wines according to Parker’s outlet. Happily, we can confirm, these are wines deserving of their praise. Established in 1786, the estate of Julien and Francois Pinon has been built up over eight generations and now covers 13.5 hectares in the Vallée de Cousse. Today, father and son duo, François and Julien, continue the tradition of ‘old school’ winemaking with a contemporary edge, passed down when François took the reins in 1987. Leaving behind a career in child psychology, François took over the estate from his father, and focused on emphasising ecologically friendly vineyard and cellar practices. The family operation now includes his son, Julien, who also changed careers, from city planning, to join his father in the cellar. Sadly, Francois and his father both passed away in 2021. The wines are recognised as some of the very best in the region, a reflection of the dedication of the family to their craft. To allow the rich and diverse terroir to sing, Julien and Francois committed to farming organically, with Ecocert Organic certification awarded in 2003. These practices include using organic treatments when needed and only in small doses, working the clay, limestone and flint soils mechanically and banning the use of pesticides. The vineyards are mainly comprised of chenin blanc, grolleau and cot, over 14ha with an average vine age of 50 years. When the time comes, the grapes are hand harvested over three weeks, by a team of 30 to allow for optimal grape selection. As a result, the grapes come into the winery as pristine whole bunches. The first pick will always be the sparkling wines, followed by the dry, and then slightly sweeter wines. In special years when the conditions are right, botrytis affected grapes will be picked last to create the winery’s sweetest wines. After being pressed, the juice is stored in large vats for 12-24 hours, while the solid matter settles to the bottom of the tank. When the juice is clear, ferment occurs without the addition of yeast. The wines are then housed in Pinon’s spectacular cellars, tunneled into hillside rock of the hillside, in a mixture of old oak barrels and stainless steel tanks to juggle the balancing act of still and sparkling winemaking. The wines remain on their fine lees until Easter. After one rack and a filtration, they are bottled over the course of April. chateau la colombiere Fronton, South-West France Biodynamic certified Just 30 mins north of Toulouse, some of France’s rarest vines are painstakingly nursed back from extinction by husband and wife team Diane and Philippe Cauvin. The pair is living their dream, crafting wines from a regional variety: Negrette, which is native to their area of Fronton. Diane took the reigns of the family estate after learning viticulture and completing a tour de force throughout French vineyards including Burgundy. The first and perhaps the most significant change was to step up the effort to preserve these rare vines by farming Chateau La Colombiere biodynamically in 2006. As the vines have been cultivated here in the same way since the 15th century, this was a significant change, to say the least. Add to this hand picking and sorting and you get the base to create something delicious. Terroir is composed mostly of gravel and sandy alluvial soils part of the Tarn river terraces. Colombiere's 25 years old vines share the space with some fantastic 70 year old Negrette vines. Every biodynamic preparation is prepared and dynamised on site, with the focus placed on activating life in the soils by using weeds, cereal cover and ploughing. The Cauvin's prefer a 'hands-off' winemaking style, considering their efforts are best directed at the vineyard. In the cellar, they use gravity to preserve the quality of the grapes.The grapes are hand harvested and hand sorted. For reds, grapes are then partially de-stemmed and lightly crushed before moving straight into cement vats. Diane and Philippe will maintain that it’s not rocket science. We think they’re pretty special though, and can drink these fresh and floral wines morning, noon and night…(responsibly). chateau Gombaude-Guillot Pomerol, Bordeaux Organic certified JANE ANSON: "There is a brilliant, brilliant estate that I love called Gombaude Guillot. They are a very small producer, organic, biodynamic - great to look out for and very good value." True to the foundational spirit of Bordeaux, the estate dating back from 1860 was secured via marriage. The Bélevier family were well established as vignerons in Pomerol and Néac when this property was passed down to Marie Bélevier as a dowry in 1868. Later, in 1922, the actual chateau would be added to the property, retiring itself as the local post-church cafe for a grander life. Fast-forward to 2010, and you’ll find 6th generation Olivier Techer at the helm of this certified organic estate. Perhaps it was this extensive knowledge of healthy soil that also fostered a passion for sustainability that has extended to a pursuit of biodynamic certification Chateau Gombaude-Guillot are recognised as one of the first in area to spearhead an organic approach in the vineyard, with the Château Gombaude-Guillot 2000 vintage the first organic certified Pomerol wine, along with their 1.15 ha Clos Plince. The desire to lessen the environmental impact of the chateau extends beyond the vineyard, sourcing local oak for use in the winery. Planted across 7 hectares, the vines of Chateau Gombaude-Guillot are located in the unique plateau of Pomerol; with 60% Merlot, 35% Cabernet Franc and 5% old vine Malbec, which is more than 80 years of age. Surrounded by decent neighbours (Chateau La Fleur-Petrus, Chateau Lafleur, Chateau Clinet and Chateau Trotanoy) the vineyards are comprised of glacial gravel deposits and clay, and vineyard work is focused around soil health, low yields, and maximising ripeness. To encourage microbiological activity between vineyard rows, Olivier has planted a range of cover crops, and avoids using chemical or synthetic herbicides or fungicides. The importance of the vineyard’s ecosystem is the priority here. When the time comes to harvest, grapes are hand-picked, then sorted, de-stemmed and lightly crushed. The wine then undergoes natural fermentation in temperature-controlled concrete and stainless steel tanks for 3-4 weeks, with regular pumpovers occuring at the beginning of fermentation (2-4 times a day). Once ferments are complete, depending on the cuvee the wines are aged in a mix of stainless steel tanks, old oak barrels or amphora before bottling (unfiltered). The resulting wines of Château Gombaude-Guillot are known for their elegance, finesse, and balance.
