Palate: The Cuvee Albescent Extra-Brut is full energy and with a strong expression of place with the power of the chalk terroir of the Cote des Blancs. The texture is incredible and captivating, with notes of lemon, white fruits, hazelnut and almond like on the nose, a creamy and vibrant mid palate and a mineral driven finish. This is one of the finest ands most exceptional Champagne we have tried from the area.
About the wine: Grower Champagne organic farming. Blanc de Blancs Chardonnay grown on chalk and calcareous clay soils in the Grand Cru Villages of Avize, Oger and Cramant at about 1/3 each villages. The vines are 40 years old in average. This NV is a blend of 2 years: 2021 and 20% 2022. Cold vinification and cold settling at 4 degress for 72 hours. Alcoholic fermenation at 16 degrees and vinification in stainless steel vats for 6-8 months. About 3 years on lees. Extra-Brut, with 3.8 g/l dosage. Disgorgement date as per back label. The referent of the Waris-Hubert champagne’s familly: Albescent (from the
root alba: white). He is the Blanc de Blancs Grand Cru, the domaine's
emblematic Grand Cru. Crystalline, with its barley sugar accents, it highlights
Chardonnay, our preferred grape variety.
When to drink: Drink now or in the next 3-5 years.
Service: 8 to 10 C degrees in a normal wine glass.
Food match: Champagne is one of the most versatile wines with food. We recommend with a white fish dish with butter sauce, creamy mushroom risotto, seafood or fresh cheese or hard cheese.
