Appellation: Sancerre (Loire region)
Grapes: Sauvignon (100%)
Terroir: Clay and limestone
Farming: Organic and Biodynamic certified
Aromatics: Shy at first, you need to let the wine come to you, sometimes even I recommend decanting this white. The complexity and nuances on the nose are remarkable, citrus, pure ripe stone fruit, yeasty character, spices and smokiness.
Palate: Power and vibrancy in this wine is incredible. I love the texture and depth it shows as well as its tension and exceptional length. This wine is a very unique experience, a beautiful wine that invades you.
About the wine: “A friend told me: try this…” When Vincent’s mentor and retired vigneron from Sury-en-Vaux told him about the old ways, Vincent had to try! The vines are more than 50 years old, in the lieu-dit “Les Vignes Blanches”. Grapes are hand picked, vinification and aging in barrels according to the tradition of the ancient. Aging for about 2 years. Bottle by hand by Vincent “a la chevre”.
When to drink: Drink now or in 15-20 years.
Service: 10 degrees C.
Food match: Seafood, fish in buttery sauce, tuna tartare, roasted poultry
