Its 32 hectares of vines lie in the northern Médoc, bordered by some of Bordeaux’s most revered names: Cos d’Estournel, Montrose, and Haut-Marbuzet. This proximity is no coincidence—the land here shares the same complex geology of gravelly topsoil and clay subsoils, lending structure, intensity and longevity to the wines. Like much of the Médoc’s finest terroirs, the vineyards overlook the Gironde Estuary, which acts as a natural thermal buffer, helping to create balanced wines even in challenging years. The wines of Château Le Crock are classic Saint-Estèphe, yet made with a modern touch. Expect richness, spice and structure, but also suave texture, supple tannins and a core of vibrant fruit. Their ability to charm in youth while ageing gracefully is a hallmark of the estate—a style that has been praised for its consistency and seductive appeal by Revue des Vins de France and Bettane & Desseauve. In 2025, this quality was formally recognised when Le Crock retained its prestigious status as a Cru Bourgeois Exceptionnel. Much of the estate’s success today can be attributed to the thoughtful leadership of Jonathan Servant, Vineyard Manager since 2015. With a deep respect for the land, he began introducing organic practices soon after his arrival, culminating in Ecocert organic certification from the 2025 vintage. Sustainability is not a slogan here—it is a practice woven into daily decisions, from the vine to the bottle. The vines themselves are a major asset. Averaging 50 years in age, with some of the most prized plots planted just before World War II, they produce smaller yields of highly concentrated fruit. This natural reduction in volume is embraced, allowing the estate to focus unreservedly on quality. The vineyard is planted to the classic Médoc quartet: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Blending these varieties offers flexibility and nuance vintage to vintage. For example, the 2019 Grand Vin—a wine that captured our attention for its depth, finesse and balance—was composed of 45% Merlot, 40% Cabernet Sauvignon, 10% Cabernet Franc and 5% Petit Verdot. In the winery, Cellar Master Yoann Lavigne oversees vinification with precision and care. Grapes are sorted and fermented in temperature-controlled stainless steel or concrete vats, allowing for gentle extractions that preserve fruit purity and site expression. Yoann works closely with Isabelle Davin, the respected oenologist at Château Léoville Poyferré, ensuring the same level of expertise and attention to detail found in their Grand Cru Classé wines. Ageing takes place over 12 to 15 months in a combination of French oak barrels—30% of which are new each year—and larger 500-litre casks. Recently, the team has introduced clay amphorae, a nod to innovation and the pursuit of freshness, allowing for greater aromatic precision and fruit clarity. We’ve long believed that Saint-Estèphe deserves more attention for the character, age-worthiness and elegance it can offer. Château Le Crock embodies all of these qualities with confidence and authenticity. Located in Souzay Champigny Chateau de Villeneuve is composed of 22ha of Cabernet Franc, along with 5ha Chenin Blanc, planted at 5,500 vines per hectare on limestone soils, with an average vine age of 40 years. The vineyard has been certified organic since 2009, however Chevallier has been farming according to organic principles since 1993. It must also be mentioned, the nostalgic Chevallier also has a few small parcels of gorgeous 80-year-old vines from his hometown of Dampierre-sur-Loire. CHATEAU DE VILLENEUVE Saumur-Champigny Organic certified Why purchase just any old vineyard when you can snap up one with an 18th century chateau, complete with sweeping views of the Loire?! This may or may not have been the train of thought of Jean-Pierre Chevallier’s parents when they purchased Chateau de Villeneuve in1969, but in any case we consider it a good buy. The chateau had long been one in the hands of winemakers, with records showing wines produced on the site since 1577. Fittingly (and perhaps necessarily) a maze of old cellars, still in operation, can be found hidden underneath, and more recently in 2016 a modern winery was added to ensure the wines are made in the best of conditions. The estate itself is composed of 22ha of Cabernet Franc, along with 5ha Chenin Blanc, planted at 5,500 vines per hectare on limestone soils, with an average vine age of 40 years. The vineyard has been certified organic since 2009, however Chevallier has been farming according to organic principles since 1993. In the vineyard, the utmost care is taken at each stage of the vine’s lifecycle. Chevallier prides himself on not taking ‘short cuts’, refusing to use chemical fertilizers or pesticides and working his vines and emphasizes that "in organic culture, we obtain more stable wines even at 13 ° and ph are lower. The roots really plunge into the ground.” Come vintage time, all grapes are hand harvested and carried in small crates to reduce any unnecessary damage. This is followed by hand sorting on the sorting table, before they are gently delivered, with the help of gravity, to underground vats, thus avoiding the harshness of the pumps. Aging takes place in a mix of foudre, 500L barrels, concrete and stainless steel tanks depending on the nature of the cuvee. Importantly, there is minimal sulfur used in the winery, and Chavallier does not add yeast or chaptalise. Cabernet Franc and Chenin Blanc lovers should find their happiness with Chateau de Villeneuve wines. Quality is the number one aim for Chevallier, resulting in balanced, mouth-watering cuvees, reflective of the land in which they are grown and the expertise of a family with five generations of local knowledge. Happily, the sixth generation are already on the job, with Jean-Pierre’s two daughters Caroline and Cecile set to continue the family tradition - we can’t wait to taste their legacy! Located just 20 minutes from Cahors, the estate has been run by generations of Gisbert vignerons since 1778, focused on making wine to be shared amongst good company (and preferably over long lunches). The vineyard is nestled between fields of sunflowers and fruit trees, with vines wrapping around the church of Saint Etienne- its bell tower keeping watch over the grapes. Making the best wine possible from sustainable vinification methods is primary for our family, sticking to tried and tested processes from generations past, in order to create balanced and elegant Cabernet Franc, Merlot, and Côt blends, as well as delicious Cabernet Franc and Rosé. Camille and son Roger knew they were on the right track as the land was cultivated for vines, finding multiple reminders of the Roman ambitions to also make wine on the site. The remnants of amphora, and of course the mosaics, continue to serve as a reminder of simple, yet effective, winemaking. The Coteaux du Quercy AOC is one of France's smallest wine region with only 400 hectares and less than 20 growers. After Phylloxera, Quercy, once 50 000 hectares, was almost destroyed. Roger Gisbert and his brave mates started their appellation from scratch. With high draining slopes of white clay and limestone soils, Cabernet Franc was chosen to blend with the Merlot, and of course the Côt (Malbec). Today, Benoit and Mathieu farm the vineyard sustainably, helped by the geographic situation of parcels on a protected south-east facing amphitheatre. Pruning is done with the moon like generation past, a grassy cover crop is left in every second row to reduce vigour and encourage competition, allowing lower yield. Rosé sec This rosé is dry, revealing notes of stone fruit, raspberry, and strawberry with a lovely texture. Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. CIDRERIE DU LEGUER Britany Organic certified Who says great French ciders must come from Normandy?! Not us! Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. A Brittany native, Cedric completed his agriculture studies and travelled around the country and beyond, before stumbling upon what would become the Ciderie du Leguer. After restoring the orchard, 2016 saw the first vintage. Since then it’s been a labour of love and hard work – as Cedric and the team take it up on themselves meticulously maintain the farm following organic principles, lovingly tending to trees aged from between two and thirty years old. The trees themselves house a wide range of indigenous varieties, including: Marie Ménard, Jeanne Renard (Bitter varieties) Fréquin Rouge, Belle fille de la Manche Kermerrien, Frijelach’, Peau de Chien (Bitter-sweet) Bedan, Dous Moën, Douce Coët Lignée (Sweet) and finally Judor, Locart Vert, Rouget de Dol, Petit Jaune (Sharp). Each cuvee is made according to Cedric’s taste, however the same process is followed time and again. The trees are hand harvested three times between October and December, before further ripening in crates before pressing up to 4 weeks later. The ciders go through two ferments – the first lasting 5 months before bottling, followed by a 3 month fermentation in bottle. The ciders are bottled with no sulphur, just pure juice, naturally sparkling and spontaneous, no collage, only racking and filtering when required. All ciders are brut or extra brut. As for the end result? These are exceptional ciders with a vinous quality, brimming with character, complex and acid driven with perfectly balanced fruit and tannins. Cidre Granit Considered as a brut cider, Cidre Granit is a ‘cuvee parcelaire’, or a ‘single orchard’. The top of the tree cuvee, so to speak. Round, generous, fruity, subtle tannins. Not bitter. Apple blending: 15% bitter, 50% bitter-sweet, 20% sweet, 15% sharp. BrutBrut An extra-brut cider, this expression is fruity, slightly mineral, with good length and liveliness on the palate. Jean-Marc and his mother run the show and farm 'their hill' together. The 9 hectares of vines and farm have been owned by the family since the early 1900s. Organic farming has been the norm here from 2007, certified biodynamic since 2010. camin larredya Jurancon, South-West France Organic and biodynamic certified Jurançon near the city of Pau is a special place for many reasons. It’s simply one of the most beautiful French vineyards, with steep slopes and scenic landscape, including the towering, often snow-covered, Pyrenees in the background. Jurançon is a pocket-size appellation of about 1,000 hectares farmed by 100 producers. Producing only white wine, it is historically known for late-harvest sweet wine or 'moelleux'. However dry white Jurançon wine was recognised with a separate AOC in 1975, known as 'Jurançon sec'. Dry Jurançon can be among the best whites you'll ever taste, particularly in the hands of a legend like Didier Dagueneau who helped to put Jurançon on the map. Today Jean-Marc Grussaute from Camin Larredya is one of the leading force and gaining plenty of fans among the sommelier community in France. Jean-Marc and his mother run the show and farm 'their hill' together. The 9 hectares of vines and farm have been owned by the family since the early 1900s, with most of the current vines were planted in 1970s by Jean-Marc’s father. Organic farming has been the norm here from 2007 onwards, certified in 2010 and turning to biodynmaic farming in 2016. The vineyard is classically local in varietal plantings: 65% Petit Manseng, 27% Gros Manseng, 8% Petit Courbu and Camaralet. The vineyard sits at 300m altitude, with soils of silica-clay and subsoils of puddingstone. Precision is life here, every action serves the "purpose of the terroir and its continuity", according to Jean-Marc, who respects the soil’s health and its life. It's essential for him that the roots go deep to express the terroirs in the final wine. Jean-Marc works the soils, grow cereals or pulses in between the rows, and uses natural compost when needed. The singularity and honesty of his wines come from permanent attention. "La Part Davant", or oriental part is a Jurançon Sec blend of Gros Manseng, Petit Manseng and some Petit Courbu. Skin contact at first, the must ferments with natural yeast, moving with the temperature of the cellar and vitality of the fermentation. Then fermentation and ageing on lees for at least 8 months in barrels and foudres. Ageing takes place in barrel and foudres, with batonage to snap the lees back in suspension. The wine is then left to rest and evolve in the cool cellars. Intense on the nose, with beautiful notes of white peach, yeasty and toasty character. On the palate, it's all about the lively texture and fleshy white fruits as well as orange and citrus notes, with an elegant driven acidity and long mineral finish. Michel and Stephanie heading up the 8ha of vines known as Clos du Jaugueyron, happily ensconced in Arsac, at the south-west edge of the Margaux appellation. By Théron’s own admission, there’s not a lot going on in that part of the world - isolated and out of the way somewhat. And that’s exactly how he likes it, after all, for someone farming organically it’s an advantage to be further from neighbours who may not share the same farming approach as you. CLOS DU JAUGUEYRON Margaux Organic & Biodynamic certified Meeting a girl in Bordeaux, falling in love and deviating from the expected life course is a familiar story to Mosaique Wines, and to Michel Théron of Clos du Jaugueyron. Theron saw Bordeaux as a place of education, heading there from his family’s estate in Languedoc Roussillon (Minervois) to study winemaking in 1988. The plan was to get his degree and head back to Minervois armed with knowledge, and eventually take over the family business. However, the universe had different ideas, bringing Bordelaise Stephanie Destruhaut into Michel’s orbit, and of course, the rest is (modern wine) history. Making things vine-official, the pair produced their first wine in 1994 from a small parcel they bought in 1993. It was to be the first of many vintages to follow. Fast forward to today and you’ll find Michel and Stephanie heading up the 8ha of vines known as Clos du Jaugueyron, happily ensconced in Arsac, at the south-west edge of the Margaux appellation. Having said that, wine lovers will know the region to be dotted with Margaux’s classified growths, so it’s not all bad terroir to share! Michel and Stephanie are firm believers in organic/biodynamic viticulture, converting officially with the 2008 vintage and gaining Demeter certification. Natural farming and sustainability is a way of life for them in their day to day, carrying through from the vineyards to the winery and beyond. The vineyards planted with Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are plowed, and do not see a synthetic product. Instead careful attention is paid to the vineyard ecosystem, striving for balance naturally and letting the clay/gravel/quartz terroir of Arsac, and the deep fine gravels and sandy soil of Macau impart their goodness on the vines. When vintage rolls around, grapes are hand harvested and transported to the winery where they are vinified in concrete tanks using natural yeast fermentation and a minimal amount of sulphur. The wine is then transferred to barriques or foudre for 12 months and no filtration upon bottling. It all sounds so simple. And in many respects it is - grow the best grapes you can, don’t add too much or do too much. The magic, however, is in the soils and the care given to the ecosystem surrounding the vines. The team at Clos du Jaugueyron are proponents of the approach to outstanding results - Margaux reminiscence of simpler times, finessed and pure, with an unmistakably contemporary feel that’s approachable now. Personally, we’re inspired by this Bordeaux love story. The fact it reminds us so much of a special time only adds to the immense joy these wines bring to the table. Domaine Dirler-Cade was established in 1871 by its namesake, Jean Dirler. Together with his wife Ludivine, they manage 18 hectares of vineyards, almost half of which are classified as Grand Cru. The Jean Dirler estate was established in 1871 by its namesake, Jean Dirler. Today, the estate is run by fifth-generation Jean, continuing the family tradition in the small village of Bergholtz, nestled at the foot of the Vosges Mountains. His wife, Ludvine Cade, comes from an impressive winemaking lineage as well, with her family owning vineyards in nearby Guebwiller, historically known as Domaine Hell-Cade. Together, they manage 18 hectares of vineyards, almost half of which are classified as Grand Cru—a significant achievement considering that only about 5% of Alsace vineyards have this prestigious designation. Although there is a considered focus on white varietals, mastering the noble Riesling, Muscat, Gewurztraminer and Pinot Gris, they also produce some Pinot Gris based Cremant, a unique Sylvaner and a small amount of Pinot Noir, all farmed biodynamically since 1998. The conversion to biodynamics was a relatively early one in the landscape of French wine, and cemented the domaine as one of the earliest members of Biodyvin (along with Zind-Humbrecht), the leading association for biodynamic winemakers in France. The Dirler-Cadé team employs traditional methods in the vineyard, such as using a horse to plough the terraces of select vineyards, and applying natural treatments like herbal teas and homoeopathic doses of horsetail. Flowers are removed by hand, old canes are pruned late to maintain vine health, and harvests are done manually. This meticulous attention to detail ensures that the grapes reach their full potential, reflecting the true character of their terroirs. We also need to mention what we think part of the true ‘special sauce’ is - a commitment to maintaining a joyful and positive energy among the team. Occupying some of the most prestigious Grand Cru sites in Alsace, each vineyard is celebrated for its unique terroir, and the domaine’s philosophy divides these vineyards according to the four elements—earth, air, fire, and water—emphasising how each site’s natural conditions influence the wines produced there: Kessler (Fire): The Kessler vineyard is known for its warm, sandstone and clay soils, which create powerful and textured wines. The Grand Cru Kessler Riesling offers impressive intensity and depth, with rich, ripe fruit and a mineral finish. The Heisse Wanne, a prized parcel within Kessler, is particularly celebrated for its opulent, structured wines, often considered worthy of Grand Cru status in its own right. Back in the 16th century, Heisse Wanne site was considered one of the three best plots in all of Alsace, along with the Rangen and the Brand. Spiegel (Air): The Spiegel vineyard’s marl and sandstone soils reflect the sunlight, producing wines that are elegant, airy, and refined. The Riesling and Gewurztraminer from Spiegel are noted for their vibrant acidity and laser-like precision, with delicate fruit and floral aromas. Saering (Water): The calcareous soils of the Saering vineyard lend a distinctive salinity and freshness to the wines. Saering Rieslings are known for their lively, juicy character and remarkable balance, making them perfect expressions of the “water” element. Kitterlé (Earth): The Kitterlé vineyard, with its steep slopes and volcanic soils, produces wines with a smoky, mineral edge and a taut, vertical structure. Rieslings from this site are particularly long-lived, offering incredible complexity and a tension that keeps them vibrant for decades. In the winery, Jean and Ludivine allow nature to take its course as much as possible. Fermentations are spontaneous, using only indigenous yeasts, and the wines are matured on their lees for extended periods, either in stainless steel tanks or old oak foudres. The resulting wines are expressive, complex, and show a remarkable sense of place. This “hands-off” approach allows the vintage and vineyard to dictate the style, rather than imposing a winemaking signature. Even when fermentation stops naturally, leaving a touch of residual sugar, the Dirler-Cadés embrace it as part of the wine’s natural expression. This philosophy results in wines that are sometimes bone-dry, sometimes slightly off-dry, but always beautifully balanced and true to the vintage with a versatility that makes them just as fitting at a three-star Michelin restaurant as they are at a wine bar. Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of Petit Manseng. Clos Joliette is truly a myth, some said of Joliette it's “better than Yquem”. Clos Joliette is considered one of those wines one must try in a lifetime, and we are honoured to bring them to Australia. CLOS JOLIETTE Jurancon, South-West France Organic We won’t deny it, wine folk from the South West of France, like Mosaique founder Thomas, will always champion the region and consider its producers as the best. In the case of Clos Joliette, however, it’s hard to disagree - especially when it’s been lauded as “better than Yquem”, by La Revue des Vins de France. Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of vines. Going against the grain at the time, the Mignes planted Petit Manseng, rather than the more popular Gros Manseng, and slowly built a modest local following selling their wines for little more than two francs in the old money. Like all good things, it’s hard to keep a lid on it, and before long this niche producer became known as the best in the region and is still revered by some of the world’s best winemakers (in fact, legend has it the late Didier Dagueneau trespassed into the vineyard in the middle of the night to take cuttings to propagate for his own Jurançon estate, Les Jardins de Babylone). Still, with limited income due to the inexpensive bottle price, investment in the property and the vines was minimal. When Maurice Migne, Clos Juliette proprietor throughout the 1960s and 1970s passed away, his widow Jeanne continued production of the wines - although it must be noted that no records exist of how the Mignes farmed the land or made their wine. She was known to be the archetypal picture of a French paysan, always attired in her traditional black apron, under which she tied her leather satchel stuffed with wads of money. In 1989, Jeanne Migne passed away, and with nobody in the family interested in continuing the estate, the vineyard was auctioned off around 1990 or 1991. The Mignes’ son, who was in the car business, sold off the cellar of old vintages, which is why old bottles are incredibly rare (and those you can find now fetch hundreds of euros whenever they come up at auction). There were a few interested parties, including fellow Jurançon winemaker Charles Hours and actor Gérard Depardieu, who had visited the domaine several times and was suitably charmed. Most predicted that Hours would buy the estate; however, the successful bidder was Parisian caviste Michel Renaud. Rather than continuing the legacy, Renaud treated Clos Joliette as a part-time hobby, using pickers from his Armagnac vineyard to conduct the harvest; leaving barrels for five years without racking and topping them up only if necessary; then selling only a fraction of the production to a few friends and cellaring the remainder. Renaud died in 2015, leaving a wife, a daughter and her half-brother. As with all things administrative in France, inheritance laws are complicated so once again the fate of the domaine was in jeopardy. It became widely known that Clos Joliette was for sale, though despite its niche fame, there was no queue of prospective buyers - a situation that remains today. But what of the grapes? Vines don’t just stop growing! Once again, the spirit of the South West has prevailed. Our dear friend Jean-Marc Grussaute from Camin Larredya, also Jurançon, was offered the chance to farm and vinify Clos Joliette 2016 and 2017 vintages, side by side with his wines. Jean-Marc and his winemaker friends from the collective “A Bisto de Nas” (including Christine Dupuy who we represent) were able to buy all the barrels from 2010, 2012, 2013 in addition to the 2016 and 2017, all farmed and vinified themselves. The result has been an incredible selection of complex and aromatic off-dry wines, reflecting the reputation Antoine Gerbelle bestowed on the domaine as “the Romanee Conti of the South-West France”. What makes these wines so sought after is the combination of three unique aspects. First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). The vines were planted in 1929 by Madame Migné and exposed to the East and South-East in a natural amphitheater, allowing the grapes to capture the gentle morning sun, rather than afternoon heat. Second, an atypical terroir made of clay-silica, pudding stones, Ponto-Pliocene pebbles and crossed through by a vein of iron. Third, the wine itself - a single varietal 100% Petit Manseng, treated with minimal intervention throughout vinification, no fining or filtration, and long aging in oak barrels for 4 to 6 years. We might add a fourth aspect, being the mystic. There’s little to be said about this wine across the vastness of the internet. They are prized wines, with only 1000 bottles produced each year, sitting firmly in the ‘if you know, you know’ category. Here, fortune favours the brave, as the unique mineral style of its Champagne and the attitude of its winegrowers become equally enchanting. Once you go Bar, you never go back. It is here in the lesser-known and authentic "south" you'll find Vincent Couche - grower, vigneron, artisan. Couche, quite simply put, is very intimate with his vineyard. He knows each vine, each plot of land, each slope, farming all 13 hectares biodynamically cross two terroirs: Buxeuil and Montguex. Buxeuil covers 10 hectares, with mostly Pinot Noir around the village where his cave is located, with steep slopes overlooking the Seine river. Soils are composed of limestone-clay and marl-clay according to each parcel, with high density to increase competition between the vines, resulting in berries with better maturity and flavour profile. His second terroir is in Montgueux Chardonnay kingdom, 48 min north-west near Troyes, with 3 hectares of Chardonnay on chalk dating back from the Cretaceous period. . Vincent continuously studies the needs of his vines, supplying the energy they need using only biodynamic treatments. His preparations include medicinal plant treatments, cow-horn manure, pulverisation of crystallised silica and natural compost. His aim through biodynamic farming is to express the richness and complexity of his land to its full potential. Harvest is strictly by hand, sorted directly in the vineyard, with only ripe and healthy berries reaching the cellar to be pressed. Alcoholic fermentation uses only natural yeast, followed by vinification with little or no sulphites in partial or full barrel. Owned by the Despagne family for over 200 years, the estate lies in the northwestern reaches of the appellation, bordered by Pomerol to the north and Château Cheval Blanc to the southwest. This privileged location, combined with a deeply rooted family philosophy and exceptional farming, produces wines that are among the most consistent and soulful in the region. The Despagne name has been part of the Saint-Émilion landscape since at least the 17th century. In 1812, Louis Despagne, descended from generations of vignerons, acquired the estate’s first plots in the hamlet of Corbin. Since then, seven generations have cultivated the same soils, gradually shaping what would become Château Grand Corbin-Despagne. The estate was awarded Grand Cru Classé status in 1954, and has continued to honour that title through precision, patience, and quiet evolution. Today, the estate is led by François Despagne, a thoughtful vigneron whose background in molecular biology and oenology reflects his deep respect for science, observation, and the living vineyard. Taking over in 1996, François has helped guide the estate into a new era of sustainability, without ever losing sight of tradition. Describing himself as a modern traditionalist, he sees terroir as a living system—one that requires balance, curiosity, and constant care. The 29-hectare vineyard is a patchwork of old vines, each parcel planted to match its soil type and microclimate. Here, sandy-siliceous soils with iron-rich sublayers alternate with ancient sands over compact blue clay—an exceptional matrix that lends the wines both finesse and depth. This geological diversity allows François and his team to take a parcel-by-parcel approach, applying meticulous attention to the needs of each vine, each rootstock, each variety. Organic trials began in the early 2000s, with full conversion achieved by 2010, and official certification following in 2013. Biodynamic principles are now being explored across selected plots. No herbicides have ever been used. Vineyard work is entirely hands-on—from pruning and crop thinning to berry tasting for harvest timing—and each decision is made in pursuit of one goal: to let the land speak clearly through the wine. In the cellar, grapes from 53 distinct plots are fermented in small, temperature-controlled vats, allowing each parcel to express its identity. Fermentation techniques vary by lot, including pump-overs, délestage, and occasional pigeage, with each step guided by analysis and intuition. After vinification, the wines are aged for 12–18 months in French oak, with final blending taking place after careful élevage and tasting across the 312 barrels. The wines of Château Grand Corbin-Despagne are celebrated for their balance, structure, and longevity. Revue des Vins de France praises their "grace and depth," while Bettane & Desseauve hails the estate as producing one of the best value Grand Crus Classés in Saint-Émilion. Vintage after vintage, the style remains recognisable—floral and red-fruited in youth, with layers of spice, truffle and violet emerging as the wine matures. The tannins are always fine, silky, and unforced. Grand Corbin-Despagne represents the kind of Bordeaux we most admire—wines of place, made with integrity, by people with a profound connection to the land. It was during my student days in Bordeaux that I first visited the estate. François Despagne’s clarity of vision and generosity of knowledge made an impression that has stayed with me ever since. Later that day, tasting the wines—pure, resonant, and unmistakably honest—I knew I was experiencing something rare. This is Saint-Émilion at its most sincere: no artifice, no excess, just the quiet persistence of a family, a terroir, and a wine worth seeking out.
