  • Domaine des Trouilleres | Auvergne | Mosaique Wines

Les Athletes du Vin is a collective of some of finest organic Loire Valley producers. Established in 2016, their objective is to make great value wines for wine lovers across the world, highlighting the appellations and grape varietals that contribute to the diversity and beauty of the Loire valley. DOMAINE DES TROUILLERES Auvergne Organic certified Volcanic soils, it turns out, are destined to follow Mikael Hyvert wherever he goes. Perhaps they have a natural pull that keeps Hyvert coming back. Either way, from the volcanoes of Tahiti that filled his youth, to the dormant rises of Auvergne, there’s no questioning Hyvert’s passion for this landscape. Growing up in Tahiti with a French father, and a family friend in the wine import trade, it was only a matter of time before Mikael would come to discover the pleasures of wine. When looking for a career path after graduating high school, it would only take a gentle nudge to point him in the direction of Bordeaux, and enrolling in Blanquefort viticulture school. And from here, the rest, as they say, is history. The natural wine bug bit hard during this time, as Mikael became more and more focused on these techniques. A friendship forged in Bordeaux with a Loire local then resulted in Mikael seeking out legends from the region, including Olivier Lemasson, Herve Villemade and Thierry Puzelat to work with and learn from. After an eventful vintage experience in Chile, Hyvert made his way back to the fertile learning grounds of the Loire and Bordeaux before an opportunity to make his own wine presented itself. Plans were already brewing to move to Languedoc with his archaeologist girlfriend, Camille, however the right fit was proving hard to find. Fate intervened when Camille was offered a 12 month contract in the Auvergne. The volcanic landscape reminded Mikael of his childhood in Tahiti and it wasn’t long before the winemaking potential of the region became apparent. While finding his feet in Auvergne with different domaines, fate again intervened through a chance meeting with winemaker Jean-Pierre Pradier, founder of the AOC Cotes d’Auvergne and owner of Domaine des Trouilleres. The connection between the two was immediate, with shared views on organic farming facilitating a friendship that would later lead to Pradier finding his successor in Mikael in 2016. The region is technically part of the Loire, where Mikael had already spent much time, and while it’s not as well known as other areas of the Loire, Auvergne has a long, storied history of resistance spirit. In fact, it used to be one of the biggest wine regions in France, with 45,000ha under vine before a combination of Phylloxera and population movement decimated the region. Today, Auvergne is enjoying a renaissance with young, dynamic winemakers making the most of more affordable land and excellent growing conditions for organic wines. The climate tends to be a dry mediterranean one, with continental influence and a mountainous landscape to provide protection from inclement weather - ideal for minimal intervention farming. Domaine des Trouilleres produces gamay, chardonnay and pinot noir in this climate, on a tiny 5.8 ha situated between 380 - 500m altitude. This pocket size vineyard planted at 5,500 vines per ha makes only 35,000 bottles yearly, so we consider ourselves very lucky to get an allocation! In the winery, Mikael follows natural winemaking practices to complement the organic approach in the vineyard. This means no sulphur use during vinification, with a small amount only used during bottling. The resulting wines are honest, lively reflections of their volcanic terroir and highlight the dynamism of this young producer. Shop wines We don’t have any products to show here right now.

  • Chateau Tire Pe | Bordeaux | Mosaique Wines

Chateau Tire Pe is owned by David and Hélène Barrault, they took over this small vineyard in 1997. Blessed with rich clay and limestone soils, this vineyard possesses fantastic southern exposure and overlooks the Gironde River. CHATEAU TIRE PE Bordeaux Organic certified Chateau Tire Pe is owned by David and Hélène Barrault, they took over this small vineyard in 1997. Blessed with rich clay and limestone soils, this vineyard possesses fantastic southern exposure and overlooks the Garonne River. The Chateau takes its name from a colourful local tale about what small animals “leave behind” before climbing the Tire Pé hill. We’ll leave that to your imagination. The vineyard is composed of Merlot, Cabernet Franc, Malbec, along with some rare local grapes called Castets, Mancin des Palus and vines of Pineau d’Aunis originating from the Loire. The Barrault’s farm vines of 10-35 years old organically, a practice they started to implement in 2008, becoming officially Ecocert certified since the 2014 vintage. They also practice some biodynamic principles, as well as ploughing the vines with horses. The latter fits in perfectly with equestrian centre which Hélène is running at the farm, ensuring animals, like vines, are a big part of Tire Pe. All grapes are harvested by hand and destemmed, with each plot harvested and fermented separately with natural yeast. Great care is taken to gently extract the supple fruit and terroir, that Bordeaux is so well known for, into each cuvee they produce. David and Helene’s wines are bottled without systematic filtration and only small amounts or no sulphur is added depending the vintage and the cuvee. Their naturally-made wines are vibrant, authentic and full of fruit. We personally love their texture and generosity of flavour. We are very excited to import these wines and we hope Australia will rediscover the beauty of Bordeaux with wines like Tire Pe! www. tirepe.blogspot.com Shop wines Quick View 2015 Chateau Tire Pe, AOC Bordeaux 'La Cote' red Out of stock Quick View 2019 Chateau Tire Pe, Vin de France 'L'Echappée' Price $93.00 GST Included Quick View 2019-20 Chateau Tire Pe, Vin de France 'La Nomade' Pineau d'Aunis' Price $56.00 GST Included Quick View 2022 Chateau Tire Pe, AOC Bordeaux 'Tire Vin Vite' Out of stock

  • Domaine Ogereau | Anjou & Savennière | Mosaique Wines

Nestled in the heart of Anjou Noir, in the village of Saint-Lambert-du-Lattay, along the serene banks of the Layon River, lies Domaine Ogereau - a domaine that has been quietly crafting magnificent expressions of terroir-driven Chenin Blanc for over a century with vineyards across Anjou, Coteaux du Layon, Quart de Chaume Grand Cru, and Savennieres now run by Emmanuel Ogereau.  DOMAINE OGEREAU Anjou Noir, Savennieres, Layon, Quarts de Chaume Organic & Biodynamic BETTANE ET DESSEAUVE: Producer of the year 2020 “At the top of his game, Emmanuel Ogereau established himself as a great of the Loire Valley signature with his cuvees of high esteem. We are stunned by the definition and precision of the wines. Finesse, elegance, everything is in line. A staple." REVUE DES VINS DE FRANCE: 1* Star “The consistency and precision of the wines year after year guided us to give the domaine its first start. Vincent Ogereau and his son Emmanuel, have a firm conviction of their vision for great Chenins of terroir, dry or sweet. Le Clos Le Grand Beaupréau (on Aeolian sands at the top of the hill d’Épiré) and La Saponaire are amongst some of the most ambitious whites of the Savennières appellation. Care and precision, these are two words that come often in the description of these wines.” MANUEL PEYRONDET (MOF and France Best Sommelier 2008) “Without any doubt, Emmanuel Ogereau is on his way to write a magnificent chapter in the Anjou Noir and deserve the attention of all wine lovers!” Nestled in the heart of Anjou Noir, in the village of Saint-Lambert-du-Lattay, along the serene banks of the Layon River, lies Domaine Ogereau - a domaine that has been quietly crafting magnificent expressions of terroir-driven wines for over a century. Born in the late 1890s, the journey of this family-owned domaine has been one of gradual evolution, with a deep appreciation for the land at the heart of it all. Beginning with vine plantings after the devastating of phylloxera, the masterful mosaic of vineyards now encompasses diverse terroirs across Anjou, Coteaux du Layon, Quart de Chaume Grand Cru, and Savennieres - the culmination of an enduring legacy of multi-generational winemakers now overseen by Emmanuel Ogereau. Born in 1989, all the clichés of life on the family vineyard ring true for Emmanuel. His early years were steeped in the rich traditions of winemaking, with plenty of time spent (willingly) in the family cellars instilling a profound love, energy and enthusiasm for the craft which endures. Following his formal education, Emmanuel pursued winemaking and viticulture studies in Angers, honing his skills and knowledge before venturing to the far corners of the earth, interning at Carrick, a biodynamic vineyard in Central Otago. Upon meeting Emmanuel, his passion for all things wine is evident. He is proud of his family and their achievements (particularly his father, Vincent who is renowned as one of Anjou's classic winemakers), but also champions other producers in the region who are as progressive and curious. Emmanuel’s knowledge of the region is intimate, and it shows in his approach to winemaking. Understanding the array and complexity of soil types (Dark Schist, Aeolian Sand, Sandstone Vein, Puddingstone and Carboniferous Coal, Spilite, Sandstone Schists, and Altered Schists) is crucial to be able to farm the plantings of Chenin Blanc, Grolleau, Pineau d'Aunis, Cabernet Franc, and Cabernet Sauvignon organically (certified Ecocert). This commitment and respect for the land is foremost, with an ongoing conversion to biodynamic viticulture (Biodyvin) underway for his 23 hectares. Without doubt, the variety Domaine Ogereau can hang its hat on is the region hero - Chenin Blanc. In the realm of Chenin, Emmanuel is unyielding in his dedication to showcasing the remarkable diversity of terroirs and treatments. His contribution to the family domaine has been his meticulous approach to crafting these wines, a dedication to the 'No Botrytis' style setting a new standard for how pure dry Chenin Blanc can be. The grapes are harvested before the onset of botrytis, ensuring that only unaffected berries make it into the final wines. For the dry whites, any botrytised grapes are painstakingly removed. The harvest is conducted in two sweeps, focusing on the golden moment when the grapes start to turn yellow. In the cellar, Emmanuel uses sulphur judiciously, avoiding overuse, and occasionally explores trials with zero added sulphur. His exacting standards extend to the selection of juice, with whole clusters gently pressed without crushing. Pressing is slow and the first twenty litres of free-run juice are consistently discarded in order to avoid undesired herbaceous notes and bitterness. Natural fermentation begins in stainless steel tanks, then the wines are transferred to their ageing vessels: cement tanks lined with sandstone tiles, 400 and 500-liter barrels or Stockinger foudre (no new oak). The wines ferment until fully dry for the sec. They are usually lightly filtered. Important note, sometimes 30% of his Chenins undergo partial malolactic fermentation, a ‘winemaker’s choice’ to enhance the character of his wines. Emmanuel Ogereau's wines are the embodiment of the finest terroir-driven expressions, marked by precision, elegance, and a connection to the land. As Emmanuel continues to refine his craft and innovate, the wines of Domaine Ogereau are just getting better and better. https://domaineogereau.com/en/ Shop wines Quick View 2021 Domaine Ogereau Anjou 'Vent de Spilite' white Price $91.00 GST Included Quick View 2023 Domaine Ogereau VDF 'L'Enjouée' red Price $49.00 GST Included Quick View 2021 Domaine Ogereau Quarts de Chaume Grand Cru 'La Martinière' 50cl sweet Price $135.00 GST Included Quick View 2023 Domaine Ogereau Coteaux du Layou 'Saint Lambert' sweet Out of stock

  • Domaine Cruchandeau | Burgundy | Mosaique Wines

Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares farmed organically. Domaine Cruchandeau Burgundy Organic It is not everyday one must choose between the life in the vines and that of a touring electronic music artist, however this is the story of Julien Cruchandeau. Nestled in the heart of Burgundy, where the terroir whispers stories of tradition and excellence, Domaine Cruchandeau emerges as a testament to the marriage of passion and craftsmanship. Born in Chenôve in 1978, Julien's journey into winemaking unfolded organically, leading him to become one of Burgundy's most talented winemakers of his generation. Despite lacking a winemaking lineage, Julien's early fascination with taste, aromas, and flavours led him to pursue a culinary path. Graduating with a specialisation in hospitality in 1997, he embarked on a journey through high-end establishments in France and England, including a stint as a waiter in a prestigious London brasserie. It was here that he delved into the intricate world of global cuisines and wines. Returning to Burgundy in 2000, Julien pursued a two-year course in oenology and viticulture while gaining practical experience at Domaine Seguin in Gevrey-Chambertin. By 2001, at the young age of 23, he assumed the role of estate manager and winemaker at Domaine France Lechenault in Bouzeron. Overseeing the entire winemaking process, Julien's efforts caught the attention of wine critics, with his name featured in the Guide Hachette in 2002, along with winning a gold award at the Concours des vins de la Côte Chalonnaise in 2005. In 2003, Julien established Domaine Cruchandeau, procuring his initial vines in the lesser-known Bouzeron appellation and invested in all the essential winemaking equipment. Having already conquered one underdog, and seeking to expand his land under vine, he moved to the Hautes Cotes de Nuits in 2007, settling in the village of Chaux. Perhaps controversial at the time, the move turned out to be a stroke of genius given growing conditions are increasingly favourable toward the higher slopes of Burgundy. Throughout this time, Julien's artistic journey extended beyond winemaking; he co-founded the Shrink Orchestra, showcasing his talents as an electronic music artist. This adventure, spanning from 2004 to 2010, included around 200 concerts across Europe and the creation of his record label, Guls Records. However, in 2010, Julien chose the secateurs over the drumsticks, devoting his career to winemaking. Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares, with Julien's artisanal approach and meticulous attention to detail shining through. His commitment to organic farming is the centrepiece of his approach, eschewing chemical fertilisers since 2011. Harvesting is carried out later in the season, and by hand to ensure only the finest grapes reach the winery. The wines are made as naturally as possible with indigenous yeasts fermentation, following traditional methods while applying a few modern winemaking techniques, including temperature control. Maturation is undergone for 8 to 18 months, depending on the vintage, in vats or old French oak barrels with some lees aging for whites and not too much batonnage. Reds are vinified with light infusion including foot crushing for 3 to 6 weeks and some 50% whole bunches to no whole bunches depending on the cuvee and the vintage. The wines are bottled after a light filtration, except for the Nuits-Saint-Georges, which remains unfiltered. A standout feature of Julien's winemaking journey is his dedication to the often-overlooked grape variety, Aligoté. His Bouzeron 'Massale' and Hautes Cotes de Nuits Aligote wines exemplify the potential of this grape, with the former gifted by the godfather of Burgundy himself, Aubert De Villaine in a joint effort to shine a light on Bouzeron. Today with the collective ‘Les Aligoteurs’ lead by famous vignerons such as Sylvain Pataille, Julien Cruchandeau and his friends are making Aligoté shine. Julien's wines, characterised by their aromatic, depth, purity, and pretty qualities, have positioned him as one of the region’s most exceptional winemakers. His ability to unlock the potential of lesser-known appellations highlights both his skill and unwavering commitment to Burgundy's rich winemaking heritage. For lovers of Burgundy, and the underdog, these are wines truly worth seeking out. From the 2023 vintage, Waris-Hubert is proudly organic certified—an achievement shared by only a handful of Champagne growers (5%). Horse-drawn ploughs in their Grand Cru parcels, sheep grazing the cover crops, and minimal intervention in the cellar all reflect a philosophy of care, patience, and respect for the land. As Olivier notes, “The more the roots tickle the chalk, the more the wines reveal finesse and character.” This respect extends beyond the vineyard. Under the guidance of son Cyprien, the family also runs a working farm, harvesting vegetables and crops with the same care and patience that underpin their viticulture. This holistic approach reflects their philosophy of stewardship: tending the earth in a way that ensures vitality for generations to come. In the vineyards, they work across a remarkable patchwork of terroirs: Avize, Oger, Cramant, Chouilly, Mesnil sur Oger (Grand Cru, Côte des Blancs), Grauves (Premier Cru, Côte des Blancs), Aÿ (Grand Cru, Vallée de la Marne), Barbonne-Fayel (Coteaux Sézannais), Marfaux (Vallée of Ardre) and Monthelon (Côteaux Sud of Epernay). The plantings are 70% Chardonnay, 20% Pinot Noir, and 10% Pinot Meunier, true to a Côte des Blancs heritage and the broader expression they seek from Champagne’s mosaic of terroirs. In the cellar, precision and patience is the name of the game. Each parcel is vinified individually, allowing the character of place to shine. A smaller component of the base wines is produced in large oak barrels (600 litres from Tonnellerie de Champagne), which brings subtle texture and depth. They prefer partial malolactic fermentation to preserve energy and vibrancy, ensuring their Champagnes retain the tension and freshness that define their style. The resulting wines are elegant, expressive, and finely etched, expressions of both site and philosophy. Going on the road with Stéphanie and Blanche for the launch and meeting so many from the trade, press, and Champagne-loving community was a confirmation of our excitement in the rising quality of their beautiful wines. • Domaine Adrien Berlioz | Savoie | Mosaique Wines

Adrien Berlioz took over the family vineyards in 2006, in Chignin at 390m above sea level. With plenty of hard work alongside the pursuit of purity and a certified biodynamic approach to farming, he has grown the vineyard to 5 hectares, transforming it into one of the Savoie’s most prestigious domaines. Domaine ADRIEN BERLIOZ Savoie, Chignin Organic, biodynamic certified REVUE DES VINS DE FRANCE: 2** STARS “The domaine confirms year after year its rank as the elite of the region, a reference point both for the wine lovers and young winemakers that are starting in the Alpine vineyards, with always higher ambitions." Located at the foothills of the Bauges massif, and bordering neighbouring Switzerland and Valle d’Aosta in Italy, the organically farmed vineyards of Domaine Adrien Berlioz in the Savoie region are as picturesque as you might imagine. Berlioz took over the family vineyards in 2006, two hectares located near a small village called Chignin at 390m above sea level. With plenty of hard work alongside the pursuit of purity and a certified biodynamic approach to farming, he has grown the vineyard to 5 hectares, transforming it into one of the region’s most prestigious domaines. The hard work starts with the incredibly steep slopes the vines are planted on – some of which boast an inclination of 50%, on soils comprised of rock scree and calcareous clay. Planted here are a mixture of the region’s best known varieties including Jacquere, Altesse, Malvoisie, Bergeron (Roussanne) Mondeuse, Douce Noire and Persan, all farmed without the use of herbicides or non-organic fertilizers and all by hand (with a little help from the horses). Who’d want to manage a tractor on those slopes?! In the winery, the dedication to purity continues, making the wines with minimal intervention, natural winemaking techniques including very little sulphur. The results are evident in the incredibly mineral driven, intense and pure wines, sure to leave a lasting impression of just how good Savoie wines can be. • Chateau Le Crock | Saint-Estephe | Mosaique Wines

Nestled in the heart of Saint-Estèphe, Château Le Crock is a property of quiet pedigree and profound potential. Since 1903, it has been in the hands of the Cuvelier family, also owners of the esteemed Château Léoville Poyferré in Saint-Julien. Their stewardship has helped shape Le Crock into one of the appellation’s best-kept secrets—a cru with a noble terroir and a distinct voice, bordered by some of Bordeaux’s most revered names: Cos d’Estournel, Montrose, and Haut-Marbuzet. CHATEAU LE CROCK Saint-Estephe Cru Exceptionnel, Bordeaux Organic Nestled in the heart of Saint-Estèphe, Château Le Crock is a property of quiet pedigree and profound potential. Since 1903, it has been in the hands of the Cuvelier family, also owners of the esteemed Château Léoville Poyferré in Saint-Julien. Their stewardship has helped shape Le Crock into one of the appellation’s best-kept secrets—a cru with a noble terroir and a distinct voice. Its 32 hectares of vines lie in the northern Médoc, bordered by some of Bordeaux’s most revered names: Cos d’Estournel, Montrose, and Haut-Marbuzet. This proximity is no coincidence—the land here shares the same complex geology of gravelly topsoil and clay subsoils, lending structure, intensity and longevity to the wines. Like much of the Médoc’s finest terroirs, the vineyards overlook the Gironde Estuary, which acts as a natural thermal buffer, helping to create balanced wines even in challenging years. The wines of Château Le Crock are classic Saint-Estèphe, yet made with a modern touch. Expect richness, spice and structure, but also suave texture, supple tannins and a core of vibrant fruit. Their ability to charm in youth while ageing gracefully is a hallmark of the estate—a style that has been praised for its consistency and seductive appeal by Revue des Vins de France and Bettane & Desseauve. In 2025, this quality was formally recognised when Le Crock retained its prestigious status as a Cru Bourgeois Exceptionnel. Much of the estate’s success today can be attributed to the thoughtful leadership of Jonathan Servant, Vineyard Manager since 2015. With a deep respect for the land, he began introducing organic practices soon after his arrival, culminating in Ecocert organic certification from the 2025 vintage. Sustainability is not a slogan here—it is a practice woven into daily decisions, from the vine to the bottle. The vines themselves are a major asset. Averaging 50 years in age, with some of the most prized plots planted just before World War II, they produce smaller yields of highly concentrated fruit. This natural reduction in volume is embraced, allowing the estate to focus unreservedly on quality. The vineyard is planted to the classic Médoc quartet: Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Blending these varieties offers flexibility and nuance vintage to vintage. For example, the 2019 Grand Vin—a wine that captured our attention for its depth, finesse and balance—was composed of 45% Merlot, 40% Cabernet Sauvignon, 10% Cabernet Franc and 5% Petit Verdot. In the winery, Cellar Master Yoann Lavigne oversees vinification with precision and care. Grapes are sorted and fermented in temperature-controlled stainless steel or concrete vats, allowing for gentle extractions that preserve fruit purity and site expression. Yoann works closely with Isabelle Davin, the respected oenologist at Château Léoville Poyferré, ensuring the same level of expertise and attention to detail found in their Grand Cru Classé wines. Ageing takes place over 12 to 15 months in a combination of French oak barrels—30% of which are new each year—and larger 500-litre casks. Recently, the team has introduced clay amphorae, a nod to innovation and the pursuit of freshness, allowing for greater aromatic precision and fruit clarity. We’ve long believed that Saint-Estèphe deserves more attention for the character, age-worthiness and elegance it can offer. Château Le Crock embodies all of these qualities with confidence and authenticity. From the vineyard's quiet evolution to the polished final blend in bottle, there’s a sense of thoughtfulness and restraint that speaks volumes. The 2019 vintage sealed the deal: this is a wine—and a story—we want to share. Shop wines Quick View 2019 Chateau Le Crock, Saint-Estephe red Out of stock

  • Chateau de Villeneuve | Saumur Champigny | Mosaique Wines

Located in Souzay Champigny Chateau de Villeneuve is composed of 22ha of Cabernet Franc, along with 5ha Chenin Blanc, planted at 5,500 vines per hectare on limestone soils, with an average vine age of 40 years. The vineyard has been certified organic since 2009, however Chevallier has been farming according to organic principles since 1993. It must also be mentioned, the nostalgic Chevallier also has a few small parcels of gorgeous 80-year-old vines from his hometown of Dampierre-sur-Loire. CHATEAU DE VILLENEUVE Saumur-Champigny Organic certified Why purchase just any old vineyard when you can snap up one with an 18th century chateau, complete with sweeping views of the Loire?! This may or may not have been the train of thought of Jean-Pierre Chevallier’s parents when they purchased Chateau de Villeneuve in1969, but in any case we consider it a good buy. The chateau had long been one in the hands of winemakers, with records showing wines produced on the site since 1577. Fittingly (and perhaps necessarily) a maze of old cellars, still in operation, can be found hidden underneath, and more recently in 2016 a modern winery was added to ensure the wines are made in the best of conditions. The estate itself is composed of 22ha of Cabernet Franc, along with 5ha Chenin Blanc, planted at 5,500 vines per hectare on limestone soils, with an average vine age of 40 years. The vineyard has been certified organic since 2009, however Chevallier has been farming according to organic principles since 1993. It must also be mentioned, the nostalgic Chevallier also has a few small parcels of gorgeous 80-year-old vines from his hometown of Dampierre-sur-Loire. In the vineyard, the utmost care is taken at each stage of the vine’s lifecycle. Chevallier prides himself on not taking ‘short cuts’, refusing to use chemical fertilizers or pesticides and working his vines and emphasizes that "in organic culture, we obtain more stable wines even at 13 ° and ph are lower. The roots really plunge into the ground.” Come vintage time, all grapes are hand harvested and carried in small crates to reduce any unnecessary damage. This is followed by hand sorting on the sorting table, before they are gently delivered, with the help of gravity, to underground vats, thus avoiding the harshness of the pumps. Aging takes place in a mix of foudre, 500L barrels, concrete and stainless steel tanks depending on the nature of the cuvee. Importantly, there is minimal sulfur used in the winery, and Chavallier does not add yeast or chaptalise. Cabernet Franc and Chenin Blanc lovers should find their happiness with Chateau de Villeneuve wines. Quality is the number one aim for Chevallier, resulting in balanced, mouth-watering cuvees, reflective of the land in which they are grown and the expertise of a family with five generations of local knowledge. Happily, the sixth generation are already on the job, with Jean-Pierre’s two daughters Caroline and Cecile set to continue the family tradition - we can’t wait to taste their legacy! • Chai Saint Etienne | Coteaux du Quercy | Mosaique Wines

Domaine Chai Saint Etienne is the underlying motivation for the beginnings of Mosaique wines- so forgive a little biased in this blurb. Located just 20 minutes from Cahors, the estate has been run by generations of Gisbert vignerons since 1778. chai saint etienne Côteaux du Quercy, South-West France Sustainable Domaine Chai Saint Etienne is the underlying motivation for the beginnings of Mosaique wines- so forgive a little biased in this blurb. Located just 20 minutes from Cahors, the estate has been run by generations of Gisbert vignerons since 1778, focused on making wine to be shared amongst good company (and preferably over long lunches). The vineyard is nestled between fields of sunflowers and fruit trees, with vines wrapping around the church of Saint Etienne- its bell tower keeping watch over the grapes. Making the best wine possible from sustainable vinification methods is primary for our family, sticking to tried and tested processes from generations past, in order to create balanced and elegant Cabernet Franc, Merlot, and Côt blends, as well as delicious Cabernet Franc and Rosé. Camille and son Roger knew they were on the right track as the land was cultivated for vines, finding multiple reminders of the Roman ambitions to also make wine on the site. The remnants of amphora, and of course the mosaics, continue to serve as a reminder of simple, yet effective, winemaking. The Coteaux du Quercy AOC is one of France's smallest wine region with only 400 hectares and less than 20 growers. After Phylloxera, Quercy, once 50 000 hectares, was almost destroyed. Roger Gisbert and his brave mates started their appellation from scratch. With high draining slopes of white clay and limestone soils, Cabernet Franc was chosen to blend with the Merlot, and of course the Côt (Malbec). Today, Benoit and Mathieu farm the vineyard sustainably, helped by the geographic situation of parcels on a protected south-east facing amphitheatre. Pruning is done with the moon like generation past, a grassy cover crop is left in every second row to reduce vigour and encourage competition, allowing lower yield. Rosé sec This rosé is dry, revealing notes of stone fruit, raspberry, and strawberry with a lovely texture. Rouge tradition This red blend is showing red fruits as well as darker forest berries and liquorice with generous ripe fruit. CROS DES CALADES Ardeche & Rhone Organic non-certified Nestled in the picturesque village of Grospierres, Cros des Calades is the innovative project of Florence and Benoît Chazallon, renowned for their work at Château de la Selve. Grounded in organic practices, Cros des Calades champions the essence of Ardeche and southern Rhône’s unique terroirs by sourcing grapes from five neighbouring organic vineyards, each adding distinctive character to their wines. The Chazallons follow the same philosophy here as at Château de la Selve, emphasising minimal intervention in the cellar to produce wines that are pure, vibrant, and true to the land. The vineyard’s diverse terroirs—from the cooler, clay-limestone soils, near the Cévennes to the warm Mediterranean climate—create ideal conditions for expressive, easy-drinking wines across various styles. The name "Cros des Calades" reflects a deep sense of place, derived from the Ardèche dialect meaning "pathway in the gorge"—a tribute to the region’s striking, mountainous landscape where these vines flourish. The Cros des Calades Ballon range includes a white, rosé, and red wine. Each wine is crafted with natural fermentation, showcasing the distinct character of its varietals: the red blends Grenache and Syrah; the white combines Grenache Blanc, Chardonnay, and Rolle (also known as Vermentino); and the rosé is a vibrant mix of Grenache, Syrah, and Cinsault. In our time searching France for wines we love, it is rare to find wines that sit at such an affordable price point, which are truly a delight to drink and reflect our commitment to organic and sustainable wine production.
