  • Champagne Waris Hubert | Mosaique Wines

Champagne Waris Hubert is lead by Stephanie and Olivier Waris, 5th generation organic grower producer based in Avize. The beautiful Champagne they craft from the Cote des Blancs, Montagne de Reims and Vallée de la Marne are going strengths to strengths, we could't recommend them enough for their elegance and purity. champagne WARIS HUBERT Côte des Blancs & Vallée de la Marne, Champagne Organic certified At the heart of Avize in the Côte des Blancs, Champagne Waris-Hubert is very much a family story. Fifth-generation vignerons Stéphanie Hubert and Olivier Waris, together with their children Blanche, Antonin, and Cyprien, tend 18 hectares of vines across some of Champagne’s most prized terroirs. Their roots run deep, yet their outlook is forward-thinking, marrying heritage with a modern sensibility. From the 2023 vintage, Waris-Hubert is proudly organic certified—an achievement shared by only a handful of Champagne growers (5%). Horse-drawn ploughs in their Grand Cru parcels, sheep grazing the cover crops, and minimal intervention in the cellar all reflect a philosophy of care, patience, and respect for the land. As Olivier notes, “The more the roots tickle the chalk, the more the wines reveal finesse and character.” This respect extends beyond the vineyard. Under the guidance of son Cyprien, the family also runs a working farm, harvesting vegetables and crops with the same care and patience that underpin their viticulture. This holistic approach reflects their philosophy of stewardship: tending the earth in a way that ensures vitality for generations to come. In the vineyards, they work across a remarkable patchwork of terroirs: Avize, Oger, Cramant, Chouilly, Mesnil sur Oger (Grand Cru, Côte des Blancs), Grauves (Premier Cru, Côte des Blancs), Aÿ (Grand Cru, Vallée de la Marne), Barbonne-Fayel (Coteaux Sézannais), Marfaux (Vallée of Ardre) and Monthelon (Côteaux Sud of Epernay). The plantings are 70% Chardonnay, 20% Pinot Noir, and 10% Pinot Meunier, true to a Côte des Blancs heritage and the broader expression they seek from Champagne’s mosaic of terroirs. In the cellar, precision and patience is the name of the game. Each parcel is vinified individually, allowing the character of place to shine. A smaller component of the base wines is produced in large oak barrels (600 litres from Tonnellerie de Champagne), which brings subtle texture and depth. They prefer partial malolactic fermentation to preserve energy and vibrancy, ensuring their Champagnes retain the tension and freshness that define their style. The resulting wines are elegant, expressive, and finely etched, expressions of both site and philosophy. Going on the road with Stéphanie and Blanche for the launch and meeting so many from the trade, press, and Champagne-loving community was a confirmation of our excitement in the rising quality of their beautiful wines. • Domaine Ludovic Bonnardot | Côte de Beaune | Mosaique Wines

Today, Domaine Bonnardot is farmed organically, Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. Their vineyards are located in Hautes Côtes de Beaune, Santenay, Maranges, Pommard, Chassagne Montrachet and Puligny Montrachet. DOMAINE LUDOVIC BONNARDOT Côte de Beaune, Burgundy Organic There are not too many teenagers who would choose to spend their days in the vineyard, let alone experimenting on their grandfather’s grapes with natural winemaking. But then again, Ludovic Bonnardot was not your average teenager. Burgundian born and bred, Ludovic now guides the winemaking at the family estate - Domaine Bonnardot, taking over from his parents in 2006. The estate covers 15-hectares with two operations: one centered in Santenay, the wine-growing focuses on Côte de Beaune and Hautes-Côtes de Beaune appellations, while blackcurrants (cassis), asparagus and cereals are grown in Bonnencontre near the family home, just south of Dijon. The polyculture approach is a reflection of the long heritage of winemaking in the family, which dates back to 1470. Throughout the centuries, it was (and arguably still is) essential to have year-round agricultural output to spread the risk of crop failure and ensure a source of income for the family. Ludovic’s interest in natural winemaking at an early age was influenced by his mother Elisabeth, the Domaine’s winemaker while he was growing up. Elisabth graduated her enology studies in Beaune, studying alongside and eventually interning with Jules Chauvet - who is considered to be the father of natural winemaking. As a result, Elisabeth’s approach to winemaking was very much shaped by Chauvet, and she began to practice more natural approaches to her winemaking with her Burgundies. Today, Domaine Bonnardot is farmed organically, with the conversion starting when Ludovic returned to the family lands after graduating his winemaking education. Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. The vineyards include Hautes Côtes de Beaune ‘En Chaignot’ and ‘Sur Evelle’, Bourgogne Côte d’Or ‘Clos Botaveaux’ Monopole, Bourgogne Aligoté, Santenay ’Saint Jean’, Santenay 1er cru ‘Clos Rousseau’, Maranges ‘Sur le Bois’, Pommard, Chassagne Montrachet and Puligny Montrachet 1er ‘La Garenne’, with vineyards average age of 45 years old. Before the beginning of Spring, natural fertiliser made from vegetal or animal matter is added to the soils to bring life. Then all the vines are plowed to encourage the decomposition of the organic matter and aeration of the earth. From here until vintage, Ludovic and his brother Emilien tend to the vines with debudding, relevage and trimming. Once vintage arrives, plots are harvested by hand at their best maturity and bought into the winery for hand sorting. Vinification of the white grapes includes slowly pressing the whole bunches, with the must then put into oak barrels for a 12-18 month fermentation. The fermentations are natural, with no addition of sulfur or addition of oenological product. After natural settling in the barrel and light filtration, the whites are ready for bottling. The red wines range between 30% and 100% whole bunch inclusion, with the berries macerated in oak tanks between 20 and 180 days. Again there is no addition of sulfur or product, and fermentation occurs with indigenous yeast. After the pressurage the wines are put into oak barrels for up to 12 - 18 months aging. The reds are not fined or filtered before bottling, with low or no addition of sulfur. This sometimes generates a light deposit however doesn’t alter the quality of the wine. Domaine Bonnardot wines are fresh, vibrant and pure, reflecting the considered approach to farming and vinification to ensure transparency of place. We love how they express each site with a very minimal extraction or oak influence. Most of all we appreciate the rare value for money these wines offer - something we don’t see much of in Burgundy these days. We’ll drink to that! • Marie & Sylvie Courselle | Vin de France Bordeaux | Mosaique Wines

Marie and Sylvie Courselle are two sisters most certainly doing it for themselves, not afraid to break from tradition in order to create truly tasty wines. A short 25 km from Bordeaux, the Courselle vineyard is located the historic family property on the clay and limestone hills of Entre-dux-Mers. CHATEAU THIEULEY M. & s. Courselle Vin de France, Bordeaux Sustainable certified Marie and Sylvie Courselle are two sisters most certainly doing it for themselves, not afraid to break from tradition in order to create truly tasty wines. A short 25 km from Bordeaux, the Courselle vineyard is located at Chateau Thieuley, the historic family property on the clay and limestone hills of Entre-dux-Mers. From growing up in the region, and studying their craft, to travelling widely abroad, the Courselle sisters came to have a deep understanding of the complexities of the family vineyard, and also its potential. They wanted to make wines to reflect their values, while show their great pride in their family history at Chateau Thieuley and pay tribute to the knowledge they learned from their parents. Although many people in Bordeaux though they were rebels, the young Courselle sisters convinced their father to plant Syrah vines to blend with the traditional Cabernet Franc, Merlot. And while they were at it, Chardonnay to blend with the local Sauvignon Blanc and Semillon. A risk that has paid off handsomely. Marie and Sylvie have also worked hard to obtain their sustainable certification from Terra Vitis, working to ensure vineyard health and vitality that shines through in the end result. These two wines "Les copains" (the boy mates) and "Les copines" (the girl mates) reflect who they are - these are happy and festive wines to be shared! As the Courselle sisters always say "don’t forget, empty glasses remain full of memories!". We couldn't agree more. The white is crisp, fresh and balanced with a lovely juicy texture. White flowers aromas. Notes of ripe peach, mango and passion fruits. The red is light bodied, bright and filled with red fruits. Very friendly strawberries aromas with a spicy finish. It's a smashable red that can be served chilled on a hot day. Courselle sustainable high-density vineyard is averaging 5,500 vines per hectare which is almost double the region‘s average. Sustainable certified (Terra Vitis), grass grows between rows to create moderate water stress. Canopy management, leaf plucking, and green harvest are essential for better sun exposure of the grapes. Grapes are machine harvested in the morning. Whites are vinified with cold maceration on the skin, pneumatic pressing under inert gas, cool temperature fermentation and then ageing on lees in thermo-regulated stainless steel vats. Reds go through cold pre-ferment maceration, cool fermentation, then short ageing in stainless steel tanks. Quiet a modern winemaking style, but gosh how good is the result?! These two wines bring some fresh thinking to the region, and they are probably showing one of the best the value for quality in Bordeaux. “Le Petit Courselle red: Winemaking sisters from Bordeaux breaking all the rules. They planted syrah, now they blend those grapes where the Bordelais say they shouldn’t be blended. They eschew excess oak and overt winemaking intervention. Even the label is of another oeuvre. They are rebels, I tell ya. Here’s a blend of cabernet franc, merlot and syrah. Better believe it. Light on the fizz so you can slam it down fast. What a breath of fresh Entre-Deux-Mers air. - Mike Bennie, The Wine Front. "Le Petit Courselle white: Here, chardonnay joins sauvignon blanc and Semillon with skin contact during cold fermentation. Plenty of interest and joyous drinking to be had here and outstanding value.” - Mike Bennie, The Wine Front. • Domaine Dirler-Cade | Alsace | Mosaique Wines

Domaine Dirler-Cade was established in 1871 by its namesake, Jean Dirler. Today, the estate is run by fifth-generation Jean, continuing the family tradition in the small village of Bergholtz, nestled at the foot of the Vosges Mountains. Together with his wife Ludivine, they manage 18 hectares of vineyards, almost half of which are classified as Grand Cru. Domaine DIRLER-CADE Alsace Organic and Biodynamic certified Much like many success stories in the French wine industry, love and marriage has played an important part in establishing great domaines. The marriage of Jean Dirler and Ludivine Cade in 2000 represented the union of two historic Alsatian winegrowing families, carrying forward a family legacy of producing exceptional wines from some of Alsace’s most prized vineyards, creating Domaine Dirler-Cadé. The Jean Dirler estate was established in 1871 by its namesake, Jean Dirler. Today, the estate is run by fifth-generation Jean, continuing the family tradition in the small village of Bergholtz, nestled at the foot of the Vosges Mountains. His wife, Ludvine Cade, comes from an impressive winemaking lineage as well, with her family owning vineyards in nearby Guebwiller, historically known as Domaine Hell-Cade. Together, they manage 18 hectares of vineyards, almost half of which are classified as Grand Cru—a significant achievement considering that only about 5% of Alsace vineyards have this prestigious designation. Although there is a considered focus on white varietals, mastering the noble Riesling, Muscat, Gewurztraminer and Pinot Gris, they also produce some Pinot Gris based Cremant, a unique Sylvaner and a small amount of Pinot Noir, all farmed biodynamically since 1998. The conversion to biodynamics was a relatively early one in the landscape of French wine, and cemented the domaine as one of the earliest members of Biodyvin (along with Zind-Humbrecht), the leading association for biodynamic winemakers in France. The Dirler-Cadé team employs traditional methods in the vineyard, such as using a horse to plough the terraces of select vineyards, and applying natural treatments like herbal teas and homoeopathic doses of horsetail. Flowers are removed by hand, old canes are pruned late to maintain vine health, and harvests are done manually. This meticulous attention to detail ensures that the grapes reach their full potential, reflecting the true character of their terroirs. We also need to mention what we think part of the true ‘special sauce’ is - a commitment to maintaining a joyful and positive energy among the team. Occupying some of the most prestigious Grand Cru sites in Alsace, each vineyard is celebrated for its unique terroir, and the domaine’s philosophy divides these vineyards according to the four elements—earth, air, fire, and water—emphasising how each site’s natural conditions influence the wines produced there: Kessler (Fire): The Kessler vineyard is known for its warm, sandstone and clay soils, which create powerful and textured wines. The Grand Cru Kessler Riesling offers impressive intensity and depth, with rich, ripe fruit and a mineral finish. The Heisse Wanne, a prized parcel within Kessler, is particularly celebrated for its opulent, structured wines, often considered worthy of Grand Cru status in its own right. Back in the 16th century, Heisse Wanne site was considered one of the three best plots in all of Alsace, along with the Rangen and the Brand. Spiegel (Air): The Spiegel vineyard’s marl and sandstone soils reflect the sunlight, producing wines that are elegant, airy, and refined. The Riesling and Gewurztraminer from Spiegel are noted for their vibrant acidity and laser-like precision, with delicate fruit and floral aromas. Saering (Water): The calcareous soils of the Saering vineyard lend a distinctive salinity and freshness to the wines. Saering Rieslings are known for their lively, juicy character and remarkable balance, making them perfect expressions of the “water” element. Kitterlé (Earth): The Kitterlé vineyard, with its steep slopes and volcanic soils, produces wines with a smoky, mineral edge and a taut, vertical structure. Rieslings from this site are particularly long-lived, offering incredible complexity and a tension that keeps them vibrant for decades. In the winery, Jean and Ludivine allow nature to take its course as much as possible. Fermentations are spontaneous, using only indigenous yeasts, and the wines are matured on their lees for extended periods, either in stainless steel tanks or old oak foudres. The resulting wines are expressive, complex, and show a remarkable sense of place. This “hands-off” approach allows the vintage and vineyard to dictate the style, rather than imposing a winemaking signature. Even when fermentation stops naturally, leaving a touch of residual sugar, the Dirler-Cadés embrace it as part of the wine’s natural expression. This philosophy results in wines that are sometimes bone-dry, sometimes slightly off-dry, but always beautifully balanced and true to the vintage with a versatility that makes them just as fitting at a three-star Michelin restaurant as they are at a wine bar. With over 150 years of winemaking history, Domaine Dirler-Cadé continues to push the boundaries of what is possible in Alsace. Their commitment to biodynamic principles, combined with their respect for tradition and terroir, has earned them a place among the elite producers of the region. As custodians of some of Alsace’s most important vineyard sites, Jean and Ludivine Dirler are not just making wines—they are preserving a legacy, crafting bottles that speak to the soul of Alsatian wine. Their wines are not just drinks; they are experiences—each one a unique journey through the diverse and breathtaking landscapes of Alsace. • Domaine de l'Alliance | Sauternes | Mosaique Wines

Domaine de l’Alliance is a testament to meticulous craftsmanship. The cooler terroir of Barsac ensures a freshness and energy that set these wines apart, making them a favorite among France’s finest Michelin-starred restaurants and the press. La Revue des Vins de France hails Daniel as “a rising figure in the Sauternes vineyards,” praising his wines for their “balance, energy, and quality on par with many classified growth Châteaux.” DOMAINE DE L'ALLIANCE Sauternes Organic certified The journey from Atlantic fisherman to deeply respected Sauternes producer is not a common one, however for one half of Domaine de l’Alliance, it was one fueled by love (we know, so French). Nestled in the prestigious Sauternes appellation of Bordeaux, Domaine de l’Alliance is the passion project of Valérie and Daniel Alibrand. Their journey into winemaking began long before they established the estate, first meeting while studying at Château La Tour Blanche, a Premier Grand Cru Classé de Sauternes 1855 and renowned School of Viticulture and Oenology. Unlike the grand châteaux that dominate the Sauternes region, the Alibrands have charted their own path, crafting extraordinary wines with precision, dedication, and a deep respect for nature. The pair took over vineyards from Valerie’s family in their hometown in 2005, bringing their shared expertise and passion to every bottle. From the outset, Domaine de l’Alliance has been committed to organic farming, solidifying this with organic certification in 2015. Their holistic approach extends beyond the vineyard, with minimal intervention in the cellar and a deep respect for the land they cultivate. To promote biodiversity and soil health, the Alibrands employ Solognot sheep, which naturally graze between the vines, managing cover crops without the need for machinery or herbicides. Their seven-hectare vineyard, situated in Fargues between the esteemed Château Rieussec and Château de Fargues, benefits from Fargues’s unique and cooler microclimate. The confluence of the Garonne river and Ruisseau de Fragues stream creates the perfect conditions for noble rot (Botrytis cinerea), essential for producing the region’s world-renowned sweet wines. With old vines of 80% Sémillon, 18% Sauvignon Blanc and Sauvignon Gris, and 2% Muscadelle, planted on gravels, sand, clay and limestone, their low yields (10-13 hl/ha, comparable to Yquem) result in wines of remarkable intensity and complexity. Domaine de l’Alliance is a testament to meticulous craftsmanship. Harvesting is done entirely by hand in up to seven vineyard passes to select only the finest botrytised grapes. In the winery, they prefer to be as hands off as possible, letting the grapes and the terroir reveal themselves in the final wine. Grapes undergo rigorous sorting and slow pneumatic pressing (4-5 hours), followed by fermentation with natural yeasts in carefully chosen barrels. The cooler terroir of Barsac ensures a freshness and energy that set these wines apart, making them a favorite among France’s finest Michelin-starred restaurants, including Anne-Sophie Pic, Troisgros, Gagnaire, and Bras. La Revue des Vins de France hails Daniel as “a rising figure in the Sauternes vineyards,” praising his wines for their “balance, energy, and quality on par with many classified growth Châteaux.” The wines have also captured the attention of Decanter and Vinous along the way. This recognition underscores the Alibrands’ ability to push beyond tradition, crafting exceptional wines that capture the essence of Sauternes’s terroir. While best known for their beautifully balanced Sauternes, the Alibrands have also garnered acclaim for their Bordeaux Blanc (Which may become Sauternes Sec?), showcasing the untapped potential of the region. At Mosaique Wines, we believe in championing vignerons who create wines with soul, and from our very first conversation with Daniel, we knew Domaine de l’Alliance belonged in our portfolio. • Domaine Cruchandeau | Burgundy | Mosaique Wines

Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares farmed organically. Domaine Cruchandeau Burgundy Organic It is not everyday one must choose between the life in the vines and that of a touring electronic music artist, however this is the story of Julien Cruchandeau. Nestled in the heart of Burgundy, where the terroir whispers stories of tradition and excellence, Domaine Cruchandeau emerges as a testament to the marriage of passion and craftsmanship. Born in Chenôve in 1978, Julien's journey into winemaking unfolded organically, leading him to become one of Burgundy's most talented winemakers of his generation. Despite lacking a winemaking lineage, Julien's early fascination with taste, aromas, and flavours led him to pursue a culinary path. Graduating with a specialisation in hospitality in 1997, he embarked on a journey through high-end establishments in France and England, including a stint as a waiter in a prestigious London brasserie. It was here that he delved into the intricate world of global cuisines and wines. Returning to Burgundy in 2000, Julien pursued a two-year course in oenology and viticulture while gaining practical experience at Domaine Seguin in Gevrey-Chambertin. By 2001, at the young age of 23, he assumed the role of estate manager and winemaker at Domaine France Lechenault in Bouzeron. Overseeing the entire winemaking process, Julien's efforts caught the attention of wine critics, with his name featured in the Guide Hachette in 2002, along with winning a gold award at the Concours des vins de la Côte Chalonnaise in 2005. In 2003, Julien established Domaine Cruchandeau, procuring his initial vines in the lesser-known Bouzeron appellation and invested in all the essential winemaking equipment. Having already conquered one underdog, and seeking to expand his land under vine, he moved to the Hautes Cotes de Nuits in 2007, settling in the village of Chaux. Perhaps controversial at the time, the move turned out to be a stroke of genius given growing conditions are increasingly favourable toward the higher slopes of Burgundy. Throughout this time, Julien's artistic journey extended beyond winemaking; he co-founded the Shrink Orchestra, showcasing his talents as an electronic music artist. This adventure, spanning from 2004 to 2010, included around 200 concerts across Europe and the creation of his record label, Guls Records. However, in 2010, Julien chose the secateurs over the drumsticks, devoting his career to winemaking. Julien's winemaking philosophy centres on showcasing the potential of lesser-known appellations. He champions the under-appreciated, crafting wines that reflect the unique terroirs of 9 appellations including Nuits Saint Georges ‘Aux St Jacques’, Bouzeron, Hautes Cotes de Nuits, Puligny Montrachet 1er Cru ‘Hameau de Blagny’, Savigny les Beaune, Auxey-Duresses 1er Cru 'Le Bas des Duresses' and Ladoix. These vines equate to a small domaine covering approximately 4.5 hectares, with Julien's artisanal approach and meticulous attention to detail shining through. His commitment to organic farming is the centrepiece of his approach, eschewing chemical fertilisers since 2011. Harvesting is carried out later in the season, and by hand to ensure only the finest grapes reach the winery. The wines are made as naturally as possible with indigenous yeasts fermentation, following traditional methods while applying a few modern winemaking techniques, including temperature control. Maturation is undergone for 8 to 18 months, depending on the vintage, in vats or old French oak barrels with some lees aging for whites and not too much batonnage. Reds are vinified with light infusion including foot crushing for 3 to 6 weeks and some 50% whole bunches to no whole bunches depending on the cuvee and the vintage. The wines are bottled after a light filtration, except for the Nuits-Saint-Georges, which remains unfiltered. A standout feature of Julien's winemaking journey is his dedication to the often-overlooked grape variety, Aligoté. His Bouzeron 'Massale' and Hautes Cotes de Nuits Aligote wines exemplify the potential of this grape, with the former gifted by the godfather of Burgundy himself, Aubert De Villaine in a joint effort to shine a light on Bouzeron. Today with the collective ‘Les Aligoteurs’ lead by famous vignerons such as Sylvain Pataille, Julien Cruchandeau and his friends are making Aligoté shine. Julien's wines, characterised by their aromatic, depth, purity, and pretty qualities, have positioned him as one of the region’s most exceptional winemakers. His ability to unlock the potential of lesser-known appellations highlights both his skill and unwavering commitment to Burgundy's rich winemaking heritage. For lovers of Burgundy, and the underdog, these are wines truly worth seeking out. • Clos du Jaugueyron | Margaux | Mosaique Wines

Michel and Stephanie heading up the 8ha of vines known as Clos du Jaugueyron, happily ensconced in Arsac, at the south-west edge of the Margaux appellation. By Théron’s own admission, there’s not a lot going on in that part of the world - isolated and out of the way somewhat. And that’s exactly how he likes it, after all, for someone farming organically it’s an advantage to be further from neighbours who may not share the same farming approach as you. CLOS DU JAUGUEYRON Margaux Organic & Biodynamic certified Meeting a girl in Bordeaux, falling in love and deviating from the expected life course is a familiar story to Mosaique Wines, and to Michel Théron of Clos du Jaugueyron. Theron saw Bordeaux as a place of education, heading there from his family’s estate in Languedoc Roussillon (Minervois) to study winemaking in 1988. The plan was to get his degree and head back to Minervois armed with knowledge, and eventually take over the family business. However, the universe had different ideas, bringing Bordelaise Stephanie Destruhaut into Michel’s orbit, and of course, the rest is (modern wine) history. Making things vine-official, the pair produced their first wine in 1994 from a small parcel they bought in 1993. It was to be the first of many vintages to follow. Fast forward to today and you’ll find Michel and Stephanie heading up the 8ha of vines known as Clos du Jaugueyron, happily ensconced in Arsac, at the south-west edge of the Margaux appellation. By Théron’s own admission, there’s not a lot going on in that part of the world - isolated and out of the way somewhat. And that’s exactly how he likes it, after all, for someone farming organically it’s an advantage to be further from neighbours who may not share the same farming approach as you. Having said that, wine lovers will know the region to be dotted with Margaux’s classified growths, so it’s not all bad terroir to share! Michel and Stephanie are firm believers in organic/biodynamic viticulture, converting officially with the 2008 vintage and gaining Demeter certification. Natural farming and sustainability is a way of life for them in their day to day, carrying through from the vineyards to the winery and beyond. The vineyards planted with Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are plowed, and do not see a synthetic product. Instead careful attention is paid to the vineyard ecosystem, striving for balance naturally and letting the clay/gravel/quartz terroir of Arsac, and the deep fine gravels and sandy soil of Macau impart their goodness on the vines. When vintage rolls around, grapes are hand harvested and transported to the winery where they are vinified in concrete tanks using natural yeast fermentation and a minimal amount of sulphur. The wine is then transferred to barriques or foudre for 12 months and no filtration upon bottling. It all sounds so simple. And in many respects it is - grow the best grapes you can, don’t add too much or do too much. The magic, however, is in the soils and the care given to the ecosystem surrounding the vines. The team at Clos du Jaugueyron are proponents of the approach to outstanding results - Margaux reminiscence of simpler times, finessed and pure, with an unmistakably contemporary feel that’s approachable now. Personally, we’re inspired by this Bordeaux love story. The fact it reminds us so much of a special time only adds to the immense joy these wines bring to the table. Today he has 16 hectares of vines in his care, spreading across the Côte de Beaune and Côte de Nuits including prestigious terroir such as Grand Crus Corton-Charlemagne, Corton-Bressandes, Echezeaux, along with several Premiers Cru on the hill of Corton; Aloxe Corton “Les Valozières”, “La Coutière” or the monopole “Clos de la Boulotte”. In Ladoix near the cellar, they produce Ladoix village, Ladoix 1er cru “Les Gréchons”, “Les Buis”, “La Corvée”. Finally they also farm vineyards in Nuits-Saint-Georges, Vosne Romanée, Volnay 1er cru “Les Santenots”, Puligny-Montrachet with the 1er cru “Les Folatières”, as well as a beautiful Meursault village. Phew! Young Guillaume has carved out his niche, following winemaking and viticultural practices to shine a light on the incredible terroir he is now the custodian of. This includes grating selection, yield control, regular ploughing of the vines, organic composting, copper treatments and sustainable farming without the use of herbicides. Discovering these wines is indeed a journey through Burgundy. They are impressive, honest expressions of place that continue to evolve in the bottle, whilst being approachable and moreish on release. Ladoix 1er Cru “Les Buis” Delicious Ladoix, bright with high precision and vibrancy. Made from a small 0.98 hectare, with 40 year old vineyard. This wine has a delicate nose with aromas of red fruits such as blackcurrants and cherries. Elegant aromatics, with a hint of earthiness. Limited production of approx. 5 500 bottles every year. With careful cellaring, enjoy up to 10 years old. Vosne Romanee From 0.94 hectares, located in the small village of Vosne-Romanée, with old vines that are more than 50 years. Made of low yield (37 hectoliters), this Pinot expresses itself beautifully with an intense colour and a nose made up of dark berries such as blackberries and blueberries. Powerful and still full of finesse, you will also get a touch of spice thanks to 20% new oak on the finish. Decant for an hour in its youth before enjoying, alternatively it will develop for 15 years. Volnay 1er Cru Les Santenots (vine leased) Les Santenots vineyard is located in the southern part of Volnay, near the village of Meursault. The particular structure of the soil (limestone, gravel and marl) makes Les Santenots a very aromatic wine, full of blackberries, raspberries and subtle notes of oak. It’s an elegant wine, delicately complex and concentrated at the same time. Meursault (vine leased) Citrusy, with subtle notes of spice and vanilla. On the palate, it shows a deep sense of place through purity, minerality and a finer texture if compared to most super creamy Meursault. Impressive length and finish. • Domaine Labranche Laffont | Madiran & Pacherenc du Vic-Bilh | Mosaique Wines

Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Christine Dupuy was a game changer in the region. Domaine Labranche Laffont Madiran & Pacherenc du Vic Bilh, South-West France Organic certified Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Enter Christine Dupuy, a game changer in the region, with a mission to fight the Tannat stereotype. Dupuy took over Domaine Labranche Laffont in 1993, becoming the youngest female winemaker in the region. The vineyard, located in the small commune of Maumusson-Laguian, has grown from 6 to 20 hectares under Dupuy’s guidance, with organically grown native varieties- including Tannat, Gros Manseng and Petit Manseng as well as Cabernet Franc and Cabernet Sauvignon. The estate is known as the keeper of hidden gems, as Christine is one of two winemakers in Madiran to own Tannat vines that date back to the pre-phylloxera era at the end of the 19th century (1870's). Trust us; they are a big, gnarly deal. The vines benefit from the silty clay and limestone soils, along with south - southeast facing, gentle hillsides around the domaine. The vineyard is certified 'ecocert', with Christine working mostly by hand in the vineyard. Soils are ploughed in Spring and Autumn; vines are fertilised using compost in the Autumn, and grass is left to grow between every second vine. Grapes are hand-harvested at perfect ripeness, before being sorted and de-stemmed. Fermentation is conducted in a temperature controlled vat with gentle pumping over for the reds. Malolactic and ageing occurs in old barrel, with a focus on minimal sulphites and lightly filtered (unfined) bottling. The red Madiran is deep, with aromas of spices, leather, and dark chocolate. The palate brings ripe, soft fruits and liquorice, and an elegant framework with fine tannins. It’s safe to say Dupuy has nailed her aim to produce approachable, elegant Tannat. These wines, much like their maker, have a natural ability to charm and leave you with a smile. • Distillerie Entropie | French Alps | Mosaique Wines

Adrien Berlioz took over the family vineyards in 2006, in Chignin at 390m above sea level. With plenty of hard work alongside the pursuit of purity and a certified biodynamic approach to farming, he has grown the vineyard to 5 hectares, transforming it into one of the Savoie’s most prestigious domaines. DISTILLERIE ENTROPIE French Alps Organic certified Shop wines Nestled in the Vercors mountains, a diverse and resilient flora thrives—edelweiss, mountain thyme, wild mallow, juniper, elderflower, and alpine mint among them. These plants form the backbone of Distillerie L’Entropie, founded in 2021 by lifelong friends Léa and David. After years in industry, they traded corporate careers for a life closer to their values: respect for nature, protection of biodiversity, and the joy of creating and sharing. And, it must be said, a love of skiing, hiking and all that mountain life has to offer! Their micro-distillery in the Vercors reflects this ethos, producing organic spirits that capture the vibrancy of the mountains. All botanicals are either certified organic or wild-foraged locally, with spring water from the Alps completing the foundation. Distillation takes place in “Monique,” their custom 150L copper alambic, allowing small-batch precision. Every stage, from maceration and distillation to bottling and labeling, is done by hand. Sustainability underpins their philosophy—green energy, water stewardship, water-based glue for labels, and composting byproducts through bokashi. The result is a rare collection of terroir spirits, pure and nuanced, that channel both the wild Vercors landscape and the spirit of their founders. Each spirit is a true expression of the Vercors. Vodka de Fleurs captures the delicacy of alpine blossoms, lifted with notes of mallow and elderberry. Liqueur Alpine ‘Flore du Vercors’ draws on 13 mountain plants to create a vibrant, herbaceous balance reminiscent of Chartreuse, yet uniquely its own. Gin Jeunes Pousses & Vieilles Branches brings together nine botanicals in a refreshing, juniper-led profile, layered with floral lift and mountain freshness. Pure, nuanced, and unmistakably shaped by their alpine home, these spirits are as authentic as Léa and David’s journey—a celebration of nature, friendship, and the Vercors itself. CROS DES CALADES Ardeche & Rhone Organic non-certified Nestled in the picturesque village of Grospierres, Cros des Calades is the innovative project of Florence and Benoît Chazallon, renowned for their work at Château de la Selve. Grounded in organic practices, Cros des Calades champions the essence of Ardeche and southern Rhône’s unique terroirs by sourcing grapes from five neighbouring organic vineyards, each adding distinctive character to their wines. The Chazallons follow the same philosophy here as at Château de la Selve, emphasising minimal intervention in the cellar to produce wines that are pure, vibrant, and true to the land. The vineyard’s diverse terroirs—from the cooler, clay-limestone soils, near the Cévennes to the warm Mediterranean climate—create ideal conditions for expressive, easy-drinking wines across various styles. The name "Cros des Calades" reflects a deep sense of place, derived from the Ardèche dialect meaning "pathway in the gorge"—a tribute to the region’s striking, mountainous landscape where these vines flourish. The Cros des Calades Ballon range includes a white, rosé, and red wine. Each wine is crafted with natural fermentation, showcasing the distinct character of its varietals: the red blends Grenache and Syrah; the white combines Grenache Blanc, Chardonnay, and Rolle (also known as Vermentino); and the rosé is a vibrant mix of Grenache, Syrah, and Cinsault. In our time searching France for wines we love, it is rare to find wines that sit at such an affordable price point, which are truly a delight to drink and reflect our commitment to organic and sustainable wine production. We hope you enjoy discovering them!
