Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of Petit Manseng. Clos Joliette is truly a myth, some said of Joliette it's “better than Yquem”. Clos Joliette is considered one of those wines one must try in a lifetime, and we are honoured to bring them to Australia. CLOS JOLIETTE Jurancon, South-West France Organic We won’t deny it, wine folk from the South West of France, like Mosaique founder Thomas, will always champion the region and consider its producers as the best. In the case of Clos Joliette, however, it’s hard to disagree - especially when it’s been lauded as “better than Yquem”, by La Revue des Vins de France. Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of vines. Going against the grain at the time, the Mignes planted Petit Manseng, rather than the more popular Gros Manseng, and slowly built a modest local following selling their wines for little more than two francs in the old money. Like all good things, it’s hard to keep a lid on it, and before long this niche producer became known as the best in the region and is still revered by some of the world’s best winemakers (in fact, legend has it the late Didier Dagueneau trespassed into the vineyard in the middle of the night to take cuttings to propagate for his own Jurançon estate, Les Jardins de Babylone). Still, with limited income due to the inexpensive bottle price, investment in the property and the vines was minimal. When Maurice Migne, Clos Juliette proprietor throughout the 1960s and 1970s passed away, his widow Jeanne continued production of the wines - although it must be noted that no records exist of how the Mignes farmed the land or made their wine. She was known to be the archetypal picture of a French paysan, always attired in her traditional black apron, under which she tied her leather satchel stuffed with wads of money. In 1989, Jeanne Migne passed away, and with nobody in the family interested in continuing the estate, the vineyard was auctioned off around 1990 or 1991. The Mignes’ son, who was in the car business, sold off the cellar of old vintages, which is why old bottles are incredibly rare (and those you can find now fetch hundreds of euros whenever they come up at auction). There were a few interested parties, including fellow Jurançon winemaker Charles Hours and actor Gérard Depardieu, who had visited the domaine several times and was suitably charmed. Most predicted that Hours would buy the estate; however, the successful bidder was Parisian caviste Michel Renaud. Rather than continuing the legacy, Renaud treated Clos Joliette as a part-time hobby, using pickers from his Armagnac vineyard to conduct the harvest; leaving barrels for five years without racking and topping them up only if necessary; then selling only a fraction of the production to a few friends and cellaring the remainder. Renaud died in 2015, leaving a wife, a daughter and her half-brother. As with all things administrative in France, inheritance laws are complicated so once again the fate of the domaine was in jeopardy. It became widely known that Clos Joliette was for sale, though despite its niche fame, there was no queue of prospective buyers - a situation that remains today. But what of the grapes? Vines don’t just stop growing! Once again, the spirit of the South West has prevailed. Our dear friend Jean-Marc Grussaute from Camin Larredya, also Jurançon, was offered the chance to farm and vinify Clos Joliette 2016 and 2017 vintages, side by side with his wines. Jean-Marc and his winemaker friends from the collective “A Bisto de Nas” (including Christine Dupuy who we represent) were able to buy all the barrels from 2010, 2012, 2013 in addition to the 2016 and 2017, all farmed and vinified themselves. The result has been an incredible selection of complex and aromatic off-dry wines, reflecting the reputation Antoine Gerbelle bestowed on the domaine as “the Romanee Conti of the South-West France”. What makes these wines so sought after is the combination of three unique aspects. First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). The vines were planted in 1929 by Madame Migné and exposed to the East and South-East in a natural amphitheater, allowing the grapes to capture the gentle morning sun, rather than afternoon heat. Second, an atypical terroir made of clay-silica, pudding stones, Ponto-Pliocene pebbles and crossed through by a vein of iron. Third, the wine itself - a single varietal 100% Petit Manseng, treated with minimal intervention throughout vinification, no fining or filtration, and long aging in oak barrels for 4 to 6 years. We might add a fourth aspect, being the mystic. There’s little to be said about this wine across the vastness of the internet. They are prized wines, with only 1000 bottles produced each year, sitting firmly in the ‘if you know, you know’ category. Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Christine Dupuy was a game changer in the region. Domaine Labranche Laffont Madiran & Pacherenc du Vic Bilh, South-West France Organic certified Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Enter Christine Dupuy, a game changer in the region, with a mission to fight the Tannat stereotype. Dupuy took over Domaine Labranche Laffont in 1993, becoming the youngest female winemaker in the region. The vineyard, located in the small commune of Maumusson-Laguian, has grown from 6 to 20 hectares under Dupuy’s guidance, with organically grown native varieties- including Tannat, Gros Manseng and Petit Manseng as well as Cabernet Franc and Cabernet Sauvignon. The estate is known as the keeper of hidden gems, as Christine is one of two winemakers in Madiran to own Tannat vines that date back to the pre-phylloxera era at the end of the 19th century (1870's). Trust us; they are a big, gnarly deal. The vines benefit from the silty clay and limestone soils, along with south - southeast facing, gentle hillsides around the domaine. The vineyard is certified 'ecocert', with Christine working mostly by hand in the vineyard. Soils are ploughed in Spring and Autumn; vines are fertilised using compost in the Autumn, and grass is left to grow between every second vine. Grapes are hand-harvested at perfect ripeness, before being sorted and de-stemmed. Fermentation is conducted in a temperature controlled vat with gentle pumping over for the reds. Malolactic and ageing occurs in old barrel, with a focus on minimal sulphites and lightly filtered (unfined) bottling. The red Madiran is deep, with aromas of spices, leather, and dark chocolate. The palate brings ripe, soft fruits and liquorice, and an elegant framework with fine tannins. It’s safe to say Dupuy has nailed her aim to produce approachable, elegant Tannat. These wines, much like their maker, have a natural ability to charm and leave you with a smile. Nicolas Mariotti Bindi farmed organicaly fifteen hectares across several vineyards in Patrimonio, idyllically nestled between the Mediterranean sea and the Corsican mountains.The vineyards produce Niellucciu (aka Sangiovese) and Vermentinu (aka Vermentino), making wines for his premium Nicolas Mariotti Bindi Vin de France wines, along with the excellent entry level Cantina Di Torra AOP Patrimonio wines. DOMAINE nicolas Mariotti bindi Corsica Organic certified It’s all very well to leave Corsica for the bright lights of big city Paris, but once Corsica is in your veins, it’s only a matter of time before it calls you home. Such is the case for Nicolas Mariotti Bindi, who, while studying law decided that a life among the vines, and not the courtroom, was his true calling. Nicolas slowly made his way back to Corsica via a winding wine route, including Beaujolais. Once back on home soil, he sharpened his winemaking skills with local legends Antoine Arena, Domaine Leccia and Domaine Giudicelli. In 2007, he was fortunate to farm his first 5ha patch of vines thanks to the generosity of another local producer. Today, that patch has grown to fifteen hectares across several vineyards in Patrimonio, idyllically nestled between the Mediterranean sea and the Corsican mountains. The vineyards produce Niellucciu (aka Sangiovese) and Vermentinu (aka Vermentino), making wines for his premium Nicolas Mariotti Bindi Vin de France wines, along with the excellent entry level Cantina Di Torra AOP Patrimonio wines. Against normal convention, the Vin de France wines from this producer are more premium, with the classification due to high density vineyards, planted at 7,600 vines per hectare, which is outside AOP laws but provides more freedom in the vineyard. The climate in this region is quite unique, making for frosty mornings, early winters and humidity in the valley, all impacting the vineyards in different ways as they vary from 50 - 200m above sea level. This diversity in climate also extends to the vineyard terroir. The founding Porcellese massal vineyard planted in 1966 consists of old, low yielding (25lh/ha) Niellucciu bushvines, and sits on old alluvial and pebbles.The Mursaglia and Lumiu vineyards sit on clay and limestone terroir, with the Carcu vineyard a clay and limestone slope, facing north east with vines planted in 1970, 1995 and 2009. This last terroir is used for the Cantina di Torra wines. Bindi goes gently in his vineyards, careful not to overwork to avoid soil erosion, with low input of copper and sulphur in the vineyard. The care extends to handpicking the grapes, going into 500L boxes to preserve the berries, many of which are picked early to ensure signature liveliness in the end wines. In the winery, the white grapes are pressed in whole bunches before allowing to naturally ferment for up to one month. The wines are then held in stainless steel for 12 months on fine lees. Unusually for Corsica, the white wines also go through malolactic fermentation. The red grapes are de-stemmed in order to avoid bitterness, with cold maceration for 48 hours and a natural fermentation never exceeding one month. During this time, the juice will see light pumping over daily to wet the top of the tank, avoiding over extraction to create wines with finesse. None of the wines are filtered given the natural clarification over time. Perhaps it’s Mariotti’s training in law that has fostered a precision from the vineyard right through to the labelling - each wine has the exact percentage of alcohol and sulphur written on the label. The wines are also certified organic, however Bindi chooses not to advertise this on the bottles.. Nicolas’ wines are lively and incredibly pure. Delicious in their youth and also capable of ageing brilliantly, we recommend buying some for now, and some for later! Domaine André Rohrer is based in Mittelbergheim, in the northern part of Alsace region and is run by young and talented Ludovic Rohrer. The Rohrer family have been making wine in the region for eight generations. Today they farm organically and biodynamically across eight hectares of vines. Domaine ROHRER Alsace Organic and Biodynamic certified Alsace is a region that is still largely misunderstood by wine lovers and professionals alike. It can be regarded as being as complex as Burgundy, with the mosaique of different terroirs resulting in Cru expression that is just fantastic. Protected on the West by the Vosges mountains, the vineyards run along 170 km, known as the famous ‘Route des Vins d’Alsace’. This region borders with Germany, and grows many of the same grape varietals although the Alsatian expressions are generally drier. Domaine André Rohrer is based in Mittelbergheim, in the northern part of Alsace region and is run by young and talented Ludovic Rohrer. The Rohrer family have been making wine in the region for eight generations. Today they farm organically and biodynamically across eight hectares of vines including 0.18 hectares in the Grand Cru Zotzenberg. The vineyards are spread across three villages: Eichoffen, Mittelbergheim and Barr. Each village produces different varietals and expressions of terroir. Eichoffen produces Riesling and Gewurztraminer on silty sand over marl, Mittelbergheim south of the village with the lieu dit ‘Stein’ is known for powerful Riesling on grey marls and limestone, Mittelbergheim west of the village with the lieu dit ‘Le Forst’ produces Pinot Noir on sandstone and Mittelbergheim east of the village with the lieu dit ‘l’Oberscheuer’ brings Pinot Gris on deep soils made of marls and sandstone. The Rohrer family became early adopters of sustainable and organic farming methods. In the 1960s Ludovic’s grandfather had already stopped the use of herbicide and encouraged herbs to grow between the vines. In the 1980s they ceased the use of all chemical pesticides and finally in 2001, André started the conversion of the Domaine towards organic certification. Today they are certified both organic and biodynamic. This conversion in the vineyard over the past decades has allowed them to improve the purity of their wines, with the full expression of their terroirs. Perfect expertise of vinification and natural winemaking, these wines are as pure as they come. Organic and biodynamic farming in the vineyard along with hand harvesting is followed in the cellar by traditional ageing in old Alsacian oak foudres. Most of the wines have no filtration and no sulphur added, only the wines with residual sugar are lightly filtered and lightly sulphured so they remain stable. It is also common that the family will hold wines longer in the cellar when a vintage or a cuvee needs it, for example the 2019 will only be released for 2021 Spring. With such care comes outstanding wines of purity, texture, honesty, generosity and length. These are wine to be sought out and savoured. ‘Esch Hab Di Garn’ Meaning ‘I love you’ in Alsacian. this is a multi-vintages blend of Gewurztraminer, Auxerrois, Sylvaner (with skin contact) and a little Riesling and Muscat. ‘Riesling’ Dry, powerful and driven with an incredible fleshy texture and length. ‘Gewurztraminer’ Ginger meets pineapple and the smokiness and drive from the terroir make it incredible example from the region. ‘Hors Piste’ Pinot Gris or Gewurztraminer is a superb Alsacian skin contact wine with incredible texture and flavours definition. ‘Nouvelle Lune’ A lively, fresh and bright Pinot Noir aged in old barrel offering a vibrant energy and an array of flavours. Spread across 6.9 hectares, the vines of Chateau Gombaude Guillot are planted to 60% Merlot, 35% Cabernet Franc and 5% old vine Malbec, which is more than 80 years of age. The wines are known for their elegance, finesse, and balance. chateau Gombaude-Guillot Pomerol, Bordeaux Organic certified JANE ANSON: "There is a brilliant, brilliant estate that I love called Gombaude Guillot. They are a very small producer, organic, biodynamic - great to look out for and very good value." True to the foundational spirit of Bordeaux, the estate dating back from 1860 was secured via marriage. The Bélevier family were well established as vignerons in Pomerol and Néac when this property was passed down to Marie Bélevier as a dowry in 1868. Later, in 1922, the actual chateau would be added to the property, retiring itself as the local post-church cafe for a grander life. Fast-forward to 2010, and you’ll find 6th generation Olivier Techer at the helm of this certified organic estate. Perhaps it was this extensive knowledge of healthy soil that also fostered a passion for sustainability that has extended to a pursuit of biodynamic certification Chateau Gombaude-Guillot are recognised as one of the first in area to spearhead an organic approach in the vineyard, with the Château Gombaude-Guillot 2000 vintage the first organic certified Pomerol wine, along with their 1.15 ha Clos Plince. The desire to lessen the environmental impact of the chateau extends beyond the vineyard, sourcing local oak for use in the winery. Planted across 7 hectares, the vines of Chateau Gombaude-Guillot are located in the unique plateau of Pomerol; with 60% Merlot, 35% Cabernet Franc and 5% old vine Malbec, which is more than 80 years of age. Surrounded by decent neighbours (Chateau La Fleur-Petrus, Chateau Lafleur, Chateau Clinet and Chateau Trotanoy) the vineyards are comprised of glacial gravel deposits and clay, and vineyard work is focused around soil health, low yields, and maximising ripeness. To encourage microbiological activity between vineyard rows, Olivier has planted a range of cover crops, and avoids using chemical or synthetic herbicides or fungicides. The importance of the vineyard’s ecosystem is the priority here. When the time comes to harvest, grapes are hand-picked, then sorted, de-stemmed and lightly crushed. The wine then undergoes natural fermentation in temperature-controlled concrete and stainless steel tanks for 3-4 weeks, with regular pumpovers occuring at the beginning of fermentation (2-4 times a day). Once ferments are complete, depending on the cuvee the wines are aged in a mix of stainless steel tanks, old oak barrels or amphora before bottling (unfiltered). The resulting wines of Château Gombaude-Guillot are known for their elegance, finesse, and balance. Third-generation winemaker Bernard Landron initially began his career alongside with his brother Jo in the heart of Muscadet Sèvre et Maine area. In 2002 Bernard moved to Ancenis in the village of St Géréon, about 35 min drive from Nantes, and was joined by his eldest son Benoît in 2008. DOMAINE LANDRON CHARTIER Muscadet Organic certified What’s the first grape varietal that comes to mind when we say Loire Valley? We bet its Sauvignon Blanc – which is delicious. However, there’s more to discover in this region. Domaine Landron Chartier is a wonderful example of a small producer continuing to work with lesser known grapes which equally represent the terroir of the Loire. Third-generation winemaker Bernard Landron initially began his career alongside with his brother Jo in the heart of Muscadet Sèvre et Maine area. In 2002 Bernard moved to Ancenis in the village of St Géréon, about 35 min drive from Nantes, and was joined by his eldest son Benoît in 2008. Benoît had returned to the family vineyard after completing his degree in viticulture and oenology, facilitating a conversation to organic practices in 2009. The family now farm around 25 hectares, with a patchwork of vineyards mostly situated around the towns of Ligne and Udon planted with a mix of Melon de Bourgogne, Folle Blanche, Pinot Gris, Gamay and Cabernet Franc. The decomposed volcanic material in the soils, along with a moderate climate and ocean winds to reduce humidity, results in a hallmark freshness to the wines. To ensure both the terroir and fruit purity are front and centre, extreme care during the winemaking process is followed – from the vineyard through to the cellar. Vines nurtured with organic farming practices are hand harvested and vinified separately based on terroir with a natural yeast fermentation. There’s minimal intervention in the cellar, with light to no filtration and low to no sulphur added depending the cuvees. The result is spectacularly pure and vibrant Muscadet, both at an entry level and at a precise, complex cru level. Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other. CLOS MARIE Pic Saint Loup, Languedoc Organic certified and Biodynamic Those in wine circles have known the potential of the Languedoc region for decades. With a large area under vine, it’s one of the most prolific wine producing regions in France, however it remains one of the most misunderstood (in our humble opinion). The region is an agricultural playground, with ancient soils, mature vines and a terroir that is more suited to natural farming than many of its surroundings. Languedoc has often attracted innovative winemakers given its diversity, and flying largely under the radar has allowed producers to push boundaries, experiment and ultimately create some of the most exciting wines in the world - including those of Clos Marie. Clos Marie was established in 1995, when Christophe Peyrus and Françoise Julien took over the family vineyards in the Pic Saint-Loup appellation of the Languedoc, naming the domaine in honour of Francoise's grandmother to whom the vineyards had belonged. Until this point, the vineyard was a reliable source of fruit for the local cooperative, however Christophe and Françoise felt there was a greater potential for these vines. Their intuition was confirmed after consultation with a slew of France’s greatest vignerons and domaines (Didier Dagueneau, Clos Rougeard, and Grange des Pères), and before long they set out on bottling wines under the Clos Marie label. The hardworking pair focused on caring for the vineyard above all else, quickly realising the benefits of organic and biodynamic practices, they began solely farming this way in 1997, achieving organic certification in 2010. Today, the domaine’s vineyard holdings sit at 23 hectares (20ha reds, 3ha whites), and are sprinkled in and around the village of Lauret, located to the north of Montpellier. The vines sit on terraces nestled on the backside of the Montagne de l’Hortus, the peak that faces the pointed Pic Saint-Loup. This sub appellation under the Coteaux du Languedoc AOC is known for some of the most finessed wines of the region, in large part due to the cooling breezes that blow south from the Cévennes Mountains. Working the vineyard to produce the best possible wines remains the focal point for Christophe and Françoise. The soils of the vineyards are continuously ploughed, forcing the vines’ roots to seek nourishment deep down in the chalky limestone bedrock. Yields are kept low, between 15 to 35 hl/ha, with 75% of the vineyards replanted from séléction massale cuttings (sourced from their 70- to 100-year-old vines) to achieve a higher vine density. Many growers believe this causes enough competition among the roots to invigorate the vine. Perhaps the most intriguing and exciting element to Languedoc wines, and Clos Marie in particular is the diversity of varietals producers have at their fingertips. For Clos Marie, this includes Cinsault (10%), Syrah (50%), Grenache noir (15%), Carignan (15%), Mourvèdre (10%) for the reds, and Carignan gris (15%), Grenache blanc (20%), Clairette (10%), Roussanne (15%), Vermentino (10%), Grenache gris (20%), Muscat à petits grains blancs (5%) for the white wines. In the cellar, Christophe continues his fastidious approach to winemaking, firmly believing the devil is in the detail. As the hand-picked grapes arrive in the cellar, they then ferment naturally in cement tanks and undergo long cuvaisons at cool temperatures, stabilising the wines sufficiently so that fining and filtration are not necessary. Vinification varies with each cuvee, with some of the wines, such as the signature ‘Les Glorieuses’ aged in barrel for up to three winters, mostly in neutral barrels and newer Stockinger foudres. Christophe is also in the minimal intervention camp and uses low sulfur while ensuring quality and purity in the end result. Many of Clos Marie’s wines are considered to be reference points for Languedoc - a point we won’t argue having tasted these wines alongside many other, better known producers. Though the vineyards were separated, the buildings remained entwined—so much so that the parking lot is still shared between Las Cases and Poyferré. During a visit to the estate, Olivier Cuvelier shared a quiet anecdote: when Cuvelier of Poyferré and Delon of Las Cases needed to speak, they would step out of their respective châteaux and meet, quite literally, in the middle of the car park. It’s a scene that captures the estate’s singular character—rooted in tradition, rich in neighbourly nuance, and unlike anything else in Bordeaux. Léoville Poyferré enjoys a position among Bordeaux’s most privileged terroirs. Its vines—some facing Léoville Las Cases, others brushing shoulders with Latour and Pichon-Longueville—lie in what Bettane & Desseauve rightly call “the heart of the Médoc’s best land.” Since acquiring the property in 1920, the Cuvelier family has stewarded the estate with both reverence and reinvention. Under Didier Cuvelier’s leadership in the late 20th century, a modernisation of vineyard and cellar took place—from replanting to cutting-edge vinification—resulting in a dramatic rise in quality. Today, the estate is guided by his cousin, Sara Lecompte Cuvelier, who upholds the family’s values while deepening their commitment to sustainable farming and climate-conscious viticulture. Spanning 80 hectares of prime Saint-Julien terroir, the vineyards are a mosaic of gravel terraces, sandy-clay subsoils, and cooler clay-rich plots that allow each grape variety to shine. Cabernet Sauvignon provides structure and length, Merlot lends plushness and warmth, while smaller parcels of Petit Verdot and Cabernet Franc contribute complexity and lift. It’s the highest Merlot proportion of any of the Léovilles—one of many quiet distinctions that sets Poyferré apart. Precision defines every step of the winemaking process: hand harvesting, double sorting (including optical selection), parcel-by-parcel vinification, and long ageing in carefully selected French oak. Malolactic fermentation in barrel adds seamless texture and polish, while the final blend, crafted by winemaker Isabelle Davin and cellar master Didier Thomann, reflects both site and signature. They are proudly continuing the family commitment to producing quality Pinot Noir and Chardonnay, considered as some of the best ‘under the radar’ wines from the Côte de Beaune. From humble beginnings largely selling grapes to negociants, the Domaine and indeed the terroir of Savigny-les-Beaune are now making a splash. It all starts with respect for the organic certified vineyards, working the vines as the season demands - never too much, never too little. When the time comes, grape sorting occurs on the vines, before they are hand harvested and bought into the winery. From here, the winemaking process doesn’t deviate too much from tradition, starting with de-stemming and crushing of the grapes and cold-macerated for a few days, which are then trodden down on a daily basis. The wines then go through a natural fermentation with native yeasts, and are aged in the cellar for over 18 months. The process for the white wines includes immediate pressing, racking and then stored in barrels for fermentation. Unlike the red wines, the white wines are then filtered before bottling (which occurs a year later). The result of this care in the vineyard and observance of tradition in the winery results in wines truly reflecting their place - the Premier Crus of Savigny-les-Beaune. These include “Aux Clous”, “Les Hauts-Jarrons”, “Les Lavières” or “Les Talmettes” wines, along with a rare white Savigny-les-Beaune Village wine. Resolving to go back to basics and grow / make wine as naturally as possible from the start, Eric and his wife Corinne restored and replanted most of the vine-land and bottled their first vintage in 2001. The result is organically-farmed and naturally-made artisanal Roussillon wines, offering superb wines and incredible value. A visit to Eric in the tiny village of Saint Martin de Fenouillet (not far from Maury) requires steep climbs through a mountain pass up to the highest, cooler climate vineyards in the Roussillon (500 meters elevation). Here you’ll find plantings of Grenache, Syrah, Carignan and Cabernet for red and, Grenache Blanc, Rolle, Roussanne, Marssanne Macabeu for whites, with an average vine age of 40 years old. The vines sit on acidic terroir made of gneiss and broken-down granite with some pockets of quartz and decomposed granite. These soils combined with the cool climate, the “tramontane” winds, low yields and Éric's superb farming, create distinctive bright, balanced wine with freshness, fruit definition, excellent mineral tension that deepens with time in bottle. In the vineyards, organic and biodynamic practices are observed, with certification awarded for the former and soon for the latter. Harvest in this area is typically late for the region, starting at the end of September and lasting until mid-October. The grapes are hand-harvested in the early morning to ensure freshness, with sorting done in the vines. The grapes are then taken to the cellar and fermented with natural yeast, and vinified separately in vessels such as fibre tanks, concrete tanks and old oak demi-muid. Wines from Roussillon are often undiscovered gems. The whites combine purity along with weight and ripe fruit flavours. The reds on the other hand are often high in alcohol (over 14% natural) but not heavy. “Le Ciste Blanc” This white blend is one of the most interesting whites of southern France, comprising Grenache Blanc, Rolle (Vermentino), Marsanne, Roussanne, and Macabeu. "Eos Blanc" This wine is a rewarding discovery for anyone seeking an intriguing wine of terroir at an affordable price. 65% Grenache Blanc, 35% Macabeu. The increased percentages of Macabeu have made this lovely wine even more distinctive. He wasted no time gaining organic certification and experimenting with concrete and amphora to produce a natural style of wine, taking biodynamic principals and lunar calendars into the process. These were significant changes for Damien and his parents, moving the farm from selling to the local coop and polyculture; to bottling and selling their own wines. South facing vines are finding their expression in calcareous and white clay soils. Sitting on the 285-metre plateau on the right bank of the Tarn river, Gaillac benefits of both Mediterranean and Atlantic unique influence. Vineyard wise, Damien is using natural weeding methods, working the soil between the vines. When needed, they use organic fertiliser including horse beans and oats to enrich the soils. His aim for the vines is to obtain an equilibrium allowing a low yield of 20-35 hl/ha with healthy and perfectly ripe grapes. Each grape variety is manually harvested at its optimum maturation. The grapes are turned into wine using natural yeasts. The maturing takes place at a slow pace according to the rhythm of the seasons, in concrete and large format old oak that is an essential part of his winemaking style, along with minimising the use of sulphites. Pierres Blanches This white blend aged in old barrel, displays apple and hazelnut aromas with oxidative sherry-like notes. La Vie en Rosé is a heady, aromatic showcase of strawberries, grapefruit, lychee, as well as blueberries with a lot of texture. Vendemia The medium bodied red Vendemia is ripe with crunchy tannins and notes of blackcurrants. Amphore This cuvee aged in amphora is very vibrant and bright with spicy red berries and pure velvety finish.
