Grapes: Pinot Noir (65%), Chardonnay (35%)

 

Farming: Biodynamic (certified)

 

Aromatics: Beautiful subtle oxidative character, with notes of brioche, vanilla, candied fruits, white flowers and stone fruits. A unique expression and full of complexity, this Champagne is something different.

 

Palate: Alive and vibrant with a subtle texture that gently touches your palate with complexity. Incredible sensation of delicacy and length, ripe stone fruits, citrus and almonds. A long finish.

 

About the wine: A special grower Champagne. Chloé is a unique cuvee, with no sulphites utilising a perpetual solera reserve started in 2011 and renewed 25% per vintage. The wine is 50% vinified in oak barrels, and unfiltered with zero dosage added. Disgorgement date is 18/12/19 as per engraving on the bottle. About 4300 bottles produced each year.

 

When to drink: Drink now or in the next 4-5 years.

 

Service: 8 to 10 C degrees in a normal wine glass.

 

Food match: Champagne is one of the most versatile wines to pair with food. We recommend anything from rich seafood dishes such as butter-sauced fish, lobster or earthy truffle dishes, duck and game meat. For cheese, match with a triple cream cheese, Goat cheese or an aged hard cheese such as Comte or Gouda.
