Aromatics: Intense, evolving bouquet featuring walnut, chestnut honey, caramel, roasted nuts, baked apple, and candied citrus.
Palate: Full-bodied yet taut and linear due to being brut nature (0g dosage). Rich, savory flavors of ginger-bread, dried figs, and cream with a strong saline minerality. Impressively mature with high acidity and a slight oxidative character.
About this wine: The 2002 Vincent Couche Sensation is a highly mature, complex Brut Nature Champagne, aged for nearly 20 years on lees. Very special wine.
When to drink: Drink now or before 2035.
Service: 10 to 12 C degrees in a normal wine glass.
Food match: Pairs well with rich foods like old Parmesan, sautéed gambas with mango, or poultry with yellow wine sauce.
