Aromatics: Red apples, red berries, mandarin verbenna, mint and peppery smoky notes. While very is vibrancy and fruit there is also beautiful notes of development with an elegant earthy character and fresh mushroom notes. This is very special.
Palate: Powerful and complex champagne, with a great concentration and incredible texture. Savoury structure with red apples and red berries matching with the notes on the nose. Long mineral vinous finish.
About the wine: Grower Champagne organic farming. Blanc de Noirs Pinot Noir grown on chalk and calcareous clay soils in the Grand Cru Villages of Aÿ. The vines are 25 years old in average. This cuvee is a vintage champagne: 2016. Cold vinification and cold settling at 4 degress for 72 hours. Alcoholic fermenation at 16 degrees and vinification in stainless steel vats for 6-8 months. About 5 years on lees. Extra-Brut, with 4.5 g/l dosage. Disgorgement date as per back label.
When to drink: Drink now or in the next 3-5 years.
Service: 8 to 10 C degrees in a normal wine glass.
Food match: This special vintage champagne is to be paired with special dishes. We recommand a roasted chicken with a buttery sauce or a turkey with chestnuts, duck confit or aged cheese as well as with savoury humami japonese dishes.
