Aromatics: Rich, perfumed, and complex. Initial aromas of saffron, lemon peel, and exotic flowers (honeydew melon) evolve into notes of apricot, honey, caramel, dried nectarine, and a hint of cloudberry jam.
Palate: Full-bodied, sweet, and viscous. Bold flavors of dried apricots, apricot jam, honey, and white pepper are supported by a strong, "steely" minerality and high acidity, which keeps the wine from feeling too heavy.
About the wine: Produced from hand picked botrytised Chenin Blanc grapes. Harvested in November across 6 or 7 picking in the vines. The 1995 vintage in the Loire was a great year, providing the necessary conditions for this kind of long lived concentrated sweet wine. This is a rare cuvee which balances high sweetness with vibrant acidity. 2 to 3 months fermentation, no added yeast, no chaptalisation. For Pinon this is the long natural fermentation with indigenous yeast that contribute to expressing the personality of this terroir. Ageing on lees in oak barrel and foudre for 4 to 5 months. Residual sugar.
When to drink: Ready to drink now or 50-70 years after vintage.
Service: 10-12 degrees.
Food match: Gastronomic sweet Chenin Blanc, perfect with foie gras, chocolate desert, apple tart, Fourme d’Ambert or a Brillat-Savarin.
