Aromatics: Notes of citrus (lemon/lime), ripe peach, and orchard fruits like apple and pear are common, often with a creamy or oily texture. The black flint ("silex noir") soil in the vineyard, imparts a distinctive gunflint, smoky, and earthy character to the wine.
Palate: A "stunning" and powerful vintage with a deep, stony, and honeysuckle-filled profile. We love the structure and generosity of this wine, with incredible balanced and acidity carrying the 25g residual sugar beautifully.
About the wine: Hand harvested Chenin Blanc, 2 to 3 months fermentation, no added yeast, no chaptalisation. For Pinon this is the long natural fermentation with indigenous yeast that contribute to expressing the personality of this terroir. Ageing on lees in oak barrel for 4 to 5 months. Ageing in bottles for a few years before release. Residual sugar 25g (taste off-dry) Black Flint has the ability to produce incredibly balanced off-dry Chenin Blanc.
When to drink: Ready to drink now or 20-30 years after vintage.
Service: 10-12 degrees.
Food match: Gastronomic off-dry Chenin Blanc, perfect with Coquilles Saint-Jacques (French scallop), monkfish, cod loin in sauce.
