Palate: Beaufitul textured and fleshy Savennieres. We love how delicate and elegant it feels on the palate. Subtle mineral backbone and length. Lots of purity and enegery in the glass.
About the wine: Made from several vineyards: Les Murailles and l'Aiglerie (plots located between Savennières and La Possonnière along the Loire), and Les Mauriers. The vines are prunned to Guyot Poussard, Ogereau and his team does a manual disbudding, lifting and leaf removal. Grapes are harvested by hand with different sortings. Whole bunch pressing and light must racking. No to moderate sulfiting at harvest (max. 2g/hl) Total and spontaneous malolactic fermentation. Matured for 11 months in underground tile-lined tanks, amphoras, and 400L barrels. “La Saponaire” literally translates to “grass soap.” La Saponaire is Savennières’ emblematic plant and the origin for its name and inhabitants – the Saponarians. It thrives on the light, sandy and draining soils of Savennières. Less than 3g residual sugar.
When to drink: Ready to drink now or 8-10 years after vintage.
Service: 12-14 degrees.
Food match: Excellent with grilled white fish, shellfish, oysters, and aged goat cheese.
