Soil: Clay and limestone (Première côte, Turonien) single vineyard.

 

Grapes: Chenin Blanc (100%) 

 

Farming: Organic certified

 

Aromatics: Beautiful notes of pear, peach and quince. Sutle smoky character and perfumed white flowers. 

 

Palate: Elegant and charming texture with a beautiful energy and tension, notes of ripe pear and peach. This wine is balanced and feels dry, its deep and shows its terroir with a long mineral limestone finish. One of our favourite Chenin in the portfolio, a must try for Chenin lover!

 

About the wine: Pinon's best single vineyard on limestone, 2 to 3 months fermentation, no added yeast, no chaptalisation. For Pinon this is the long natural fermentation with indigenous yeast that contribute to expressing the personality of this terroir. Ageing on lees in oak barrel and foudre for 4 to 5 months. Residual sugar 6g (taste dry)

 

When to drink: Ready to drink now or 15-20 years after vintage.

 

Service: 10-12 degrees.

 

Food match: Gastronomic Chenin Blanc, perfect with grilled fish and seafood.
