Appellation: AOC L'Etoile (Jura region)
Terroir: Marl, clay and limestone. High density 10,000 vines per hectare.
Grapes: Chardonnay 70%, Savagnin 30% (topped up, non oxidative)
Farming: Organic (not certified)
Aromatics: Beautiful Chardonnay blend with elegant white stone fruits, oak character and spices.
Palate: Textural and racy white with delicious fleshy mid palate, mineral tension and salty savoury finish.
About the wine: The fermentation occurs in stainless steel but, after malolactic, the wine is racked into small barrel and demi-muids for two years on lees. At that point, the entire production is assembled and left for several months in cuve before being bottled. Beautiful Chardonnay as good as a some of the most delicious white Burgundy yet with a strong sense of place and Jura personality. (Topped up aka. Ouillé, non oxidative)
When to drink: Now or drink in the next 10 years.
Service: Serving temperature 8 to 10 degree C, use large Burgundy glass.
Food match: Comté, roasted chicken or roasted lobster.
