Aromatics: Lively and lifted, this is a very expressive champagne with notes lemon, verbena, white fruits and white flowers as well as weat and peppermint notes. There is also a suble iodine and chalky mineral character on the nose.
Palate: Generous yet fresh and energetic on the palatate, with a delicious refreshing texture, subtle creaminess, white fruits and beautiful pure lemon acidity. Very long mineral finish with a lot of flavour.
About the wine: Grower Champagne organic farming, no sulphure added Champagne. They started in 2018 and only produced when the vintage best allow this style of winemaking (2018, 2020 and 2021). Blanc de Blancs 100% Chardonnay grown on clay and chalk in the lieu-dit 'Les Hauts Boquets' near by a small forest in the 1er Cru Grauves. The vines are 40 years old in average. This NV is 100% cuvee made from a single vintage 2021, cold vinification and cold settling at 4 degress for 72 hours. Alcoholic fermenation at 16 degrees and vinification in stainless steel tanks for 6-8 months. About 2 years on lees. Extra-Brut, with 4.2 g/l dosage. Disgorgement date as per back label. The deliberate absence of sulfites leaves room for fruit purity.
When to drink: Drink now or in the next 3-4 years.
Service: 8 to 10 C degrees in a normal wine glass.
Food match: Champagne is one of the most versatile wines with food. We recommend with a seafood dishes, scallop carpaccio, risotto or hard cheese.
