Aromatics: It features intense notes of walnut, bruised apple, curry leaf, and creamy hazelnut, iodine notes.
Palate: Rich and waxy, yet lively, featuring bruised apple, walnut, and noticeable salinity/chalky minerality.
About the wine: Marl terroir. Grown in a coplanted Chardonnay and Savagnin vineyard planted in 1970's, with now +50 years old vines, and hand harvested later than the other vineyards. Grapes pressed and vinfied together. Ageing in 230 litre oak barrels, as well as 600 litre demi muid for 3 years. Beautiful oxidative wine.
When to drink: Now or in the next 6 years.
Service: Serving temperature 10 to 12 degree Celsius, decant for a few minutes if you can, or simply use large Burgundy glass.
Food match: Old 36 months Comté.
