Aromatics: Complex mix of yeasty notes with ripe apricot and white flowers.
Palate: A rich and textured sparkling, wonderfully fleshy driven by apricot and peach flavours to persistent, mineral finish.
About the wine: Top French bubbles, made from the young vines in the traditional method (same way as Champagne). Held on lees for 12 to 18 months before being disgorged. No dosage.
When to drink: Now or in the next 3-4 years.
Service: White wine or Champagne glass. 8 to 10 degrees C.
Food match: Creamy cheese, salmon, or other fish in sauce.
