Aromatics: Hazelnuts, cumin, red apple, oxidative sherry-like notes, as well as cheesy aromas.
Palate: Powerful, richly textured, with notes of red apples, white fruits and spice. A long mineral finish.
About the wine: Grey and blue marl terroir. Grown in a vineyard planted in 1930, with now 90 years old vines, and hand harvested later than the other vineyards. Aging in 230 litre oak barrels, as well as 600 litre demi muid for 3 to 4 years. Not topped up. This is Jura's Savagnin that taste like baby Vin Jaune!
When to drink: Now or in the next 8 years.
Food match: Old 36 months Comté!
Service: Serving temperature 8 to 10 degree Celsius, decant for a few minutes if you can, or simply use large Burgundy glass.
