Terroir: clay and limestone, single vineyard: ‘Les Petites Trouilleres’ located on the southern slope of the Puy de Tobize at about 420 meters altitude.
Grapes: Chardonnay (100%)
Farming: Organic (certified)
Aromatics: Beautiful smoky, flinty, minerality and expression of the volcanic terroir of the region. There is also notes of white peach, melon, and orange blossom as well as nutty and yeasty notes.
Palate: Delicious and elegant Chardonnay with creamy texture and vibrant texture. Flavour of ripe white fruits as well as a nutty, savoury long finish.
About the wine: Natural fermentation, direct pressing. Malolactic fermentation and ageing in barrel 225 liters and 500 liters oak barrels (about 8 months). A small amount of sulfur is added before bottling yet the wines are elegant and precise. No filtration and no fining. 1,500 bottles produced.
When to drink: Ready to drink now or in the next 4-5 years after vintage.
Service: 12 degrees, Chardonnay glass.
Food match: Roasted chicken, cheesy dishes, hard cheese such as aged Comte and Gruyere.
