Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. Cidrerie du Leguer is based in Brittany, six hours drive directly west of Paris – so far west, the next step is the Atlantic Ocean. Here Cedric Le Bloas and his team craft artisanal ciders in very cool (ice cold) climate, farming a small 6 hectares of certified organic apple and pear trees. A Brittany native, Cedric completed his agriculture studies and travelled around the country and beyond, before stumbling upon what would become the Ciderie du Leguer. After restoring the orchard, 2016 saw the first vintage. Since then it’s been a labour of love and hard work – as Cedric and the team take it up on themselves meticulously maintain the farm following organic principles, lovingly tending to trees aged from between two and thirty years old. The trees themselves house a wide range of indigenous varieties, including: Marie Ménard, Jeanne Renard (Bitter varieties) Fréquin Rouge, Belle fille de la Manche Kermerrien, Frijelach’, Peau de Chien (Bitter-sweet) Bedan, Dous Moën, Douce Coët Lignée (Sweet) and finally Judor, Locart Vert, Rouget de Dol, Petit Jaune (Sharp). Each cuvee is made according to Cedric’s taste, however the same process is followed time and again. The trees are hand harvested three times between October and December, before further ripening in crates before pressing up to 4 weeks later. The ciders go through two ferments – the first lasting 5 months before bottling, followed by a 3 month fermentation in bottle. The ciders are bottled with no sulphur, just pure juice, naturally sparkling and spontaneous, no collage, only racking and filtering when required. All ciders are brut or extra brut. As for the end result? These are exceptional ciders with a vinous quality, brimming with character, complex and acid driven with perfectly balanced fruit and tannins. Cidre Granit Considered as a brut cider, Cidre Granit is a ‘cuvee parcelaire’, or a ‘single orchard’. The top of the tree cuvee, so to speak. Round, generous, fruity, subtle tannins. Not bitter. Apple blending: 15% bitter, 50% bitter-sweet, 20% sweet, 15% sharp. BrutBrut An extra-brut cider, this expression is fruity, slightly mineral, with good length and liveliness on the palate. Apple blending: 5% bitter, 50% bitter-sweet, 25% sweet, 20% sharp. Premium A brut cider, and another ‘Cuvée parcelaire’ or ‘single orchard’ expression. Smooth bitterness, no astringency, good length on the palate, complex and vinous. Apple blending: 20% bitter, 70% bitter-sweet, 10% sharp. Poiré A brut perry packed with tension, flowery notes such as elderflower, fruity, fresh, round. The vineyard was planted in 1920, by Nicole Deriaux's grandfather in l'Etoile, and has produced traditional Jura wines since. The vineyard is organically farmed, and the vinification is very traditional, respecting the ancient practices of this region. Domaine de Montbourgeau L'Etoile, Jura Organic, in-conversion The Domaine de Montbourgeau is situated in the southwestern area of the Jura ,more precisely in the village of L’Etoile - meaning 'star'. depending on who you ask, the name comes from either the fact that five hills are surrounding the village make the shape of a star or, because of the many fossils of ancient starfish that you can find in the soils of this appellation. Either way, it is one of the smallest in the Jura with only 52 hectares. The vineyard was planted in 1920, by Nicole Deriaux's grandfather, and has produced traditional Jura wines since. In 1956 Nicole’s father, Jean Gros, became the head of the family and taking his turn to develop the vineyard and the cellar. Then some thirty years later in 1986, it was finally time for Nicole to take part in the operation of the Domaine. Continuing the family tradition, she is now helped by her son Cesar. They Deriaux's are hard-working people, with their efforts reflected in bottle. The wines are precise, straightforward, and with superb intensity. The ten hectares of vines are composed primarily of Chardonnay and Savagnin, as well as some reds with a small planting of Trousseau and Poulsard. The vineyard is organically farmed, and the vinification is very traditional, respecting the ancient practices of this region. Nicole Deriaux through her natural approach to viticulture and winemaking aims to retain and fully express the purity of l'Etoile terroir. When harvest time comes, the grapes are pick by hands and then vinified in the cave underneath Deriaux's home. Fermentation takes place in stainless steel tanks using strictly indigenous yeasts. Then all the wines are racked into a mix of old foudres, demi-muids and smaller barrels. The whites are matured in barrel; they are never racked; they are not topped off. The small quantity of wines produced is then bottled, with no fining and a light filtration. The L'Etoile signature style, crafted by talented Nicole Deriaux, are wines of unique purity and elegance that we are proud to import. "2012 Cuvee Speciale Chardonnay: One of those Jura producers that seems to get overlooked for the Instagrammable ones, and by virtue of that, leaves us, the righteous, opportunity to access the wines! Hurrah! Meanwhile, sustainable farming is the ticket here, as is 20 to 90 year old vines. It is chardonnay that matures for four years, on lees, under a yeast flor. And so fresh out of these bottles. Many of the estates Mosaique Wines features have been in the same family for generations, acting as a loving custodian of their lands, passing on the knowledge of these ancient varietals to the winemakers who follow.
