  • Domaine de l'Alliance | Sauternes | Mosaique Wines

Domaine de l’Alliance is a testament to meticulous craftsmanship. The cooler terroir of Barsac ensures a freshness and energy that set these wines apart, making them a favorite among France’s finest Michelin-starred restaurants and the press. La Revue des Vins de France hails Daniel as “a rising figure in the Sauternes vineyards,” praising his wines for their “balance, energy, and quality on par with many classified growth Châteaux.” DOMAINE DE L'ALLIANCE Sauternes Organic certified The journey from Atlantic fisherman to deeply respected Sauternes producer is not a common one, however for one half of Domaine de l’Alliance, it was one fueled by love (we know, so French). Nestled in the prestigious Sauternes appellation of Bordeaux, Domaine de l’Alliance is the passion project of Valérie and Daniel Alibrand. Their journey into winemaking began long before they established the estate, first meeting while studying at Château La Tour Blanche, a Premier Grand Cru Classé de Sauternes 1855 and renowned School of Viticulture and Oenology. Unlike the grand châteaux that dominate the Sauternes region, the Alibrands have charted their own path, crafting extraordinary wines with precision, dedication, and a deep respect for nature. The pair took over vineyards from Valerie’s family in their hometown in 2005, bringing their shared expertise and passion to every bottle. From the outset, Domaine de l’Alliance has been committed to organic farming, solidifying this with organic certification in 2015. Their holistic approach extends beyond the vineyard, with minimal intervention in the cellar and a deep respect for the land they cultivate. To promote biodiversity and soil health, the Alibrands employ Solognot sheep, which naturally graze between the vines, managing cover crops without the need for machinery or herbicides. Their seven-hectare vineyard, situated in Fargues between the esteemed Château Rieussec and Château de Fargues, benefits from Fargues’s unique and cooler microclimate. The confluence of the Garonne river and Ruisseau de Fragues stream creates the perfect conditions for noble rot (Botrytis cinerea), essential for producing the region’s world-renowned sweet wines. With old vines of 80% Sémillon, 18% Sauvignon Blanc and Sauvignon Gris, and 2% Muscadelle, planted on gravels, sand, clay and limestone, their low yields (10-13 hl/ha, comparable to Yquem) result in wines of remarkable intensity and complexity. Domaine de l’Alliance is a testament to meticulous craftsmanship. Harvesting is done entirely by hand in up to seven vineyard passes to select only the finest botrytised grapes. In the winery, they prefer to be as hands off as possible, letting the grapes and the terroir reveal themselves in the final wine. Grapes undergo rigorous sorting and slow pneumatic pressing (4-5 hours), followed by fermentation with natural yeasts in carefully chosen barrels. The cooler terroir of Barsac ensures a freshness and energy that set these wines apart, making them a favorite among France’s finest Michelin-starred restaurants, including Anne-Sophie Pic, Troisgros, Gagnaire, and Bras. La Revue des Vins de France hails Daniel as “a rising figure in the Sauternes vineyards,” praising his wines for their “balance, energy, and quality on par with many classified growth Châteaux.” The wines have also captured the attention of Decanter and Vinous along the way. This recognition underscores the Alibrands’ ability to push beyond tradition, crafting exceptional wines that capture the essence of Sauternes’s terroir. While best known for their beautifully balanced Sauternes, the Alibrands have also garnered acclaim for their Bordeaux Blanc (Which may become Sauternes Sec?), showcasing the untapped potential of the region. At Mosaique Wines, we believe in championing vignerons who create wines with soul, and from our very first conversation with Daniel, we knew Domaine de l’Alliance belonged in our portfolio. Established in 2016, their objective is to make great value wines for wine lovers across the world, highlighting the appellations and grape varietals that contribute to the diversity and beauty of the Loire valley. Each of these producers have vineyards in all the corners of the Loire Valley region, they farm their vineyards and vinified each cuvee separately and collectively share the logistics and the sales of the wines. In true collective manner, they also share insights in to winemaking techniques, and seek feedback from each other on their wines. The ‘Athletes’ all share the same philosophy. Maximum care is taken with farming practices, which includes hand harvesting vines from 10 to 120 years old. In the winery, it’s all about minimal intervention, using natural yeast for fermentation, stainless steel, concrete and old oak along with minimum sulphur addition and light or no filtration depending of the cuvee. They aim to make delicious and real wine. Naturally, a group of dynamic winemakers were set on creating wine labels to reflect the spirit of their endeavours. And when the time came, only one name would do - Michel Tolmer. Who else than Tolmer, brilliant cartoon creator of ‘Mimi, Fifi et Glouglou’, and leading illustrator for the French “Natural Wine” movement. His style and imagination made him the perfect choice to capture each of the grapes and appellations of the Loire Valley. The collective of “Athletes” include: Gérald is based in Saint Nicolas de Bourgueil, where he makes AOC wines Cabernet Franc from Chinon and Saint Nicolas de Bourgueil. • Domaine Vincent Gaudry | Sancerre | Mosaique Wines

Vincent Gaudry lives in the tiny vintners' hamlet of Le Petit Chambre in Sury en Vaux, 3 kilometres from Sancerre. Sury en Vaux means “the smiling valley”, and it makes much sense when you reach this place. Vincent took over the vineyard from his family in 1993, introducing organic and biodynamic. Domaine Vincent Gaudry Sancerre, Loire Valley Biodynamic certified Vincent Gaudry lives in the tiny vintners' hamlet of Le Petit Chambre in Sury en Vaux, 3 kilometres from Sancerre. Sury en Vaux means “the smiling valley”, and it makes much sense when you reach this place. Vincent took over the vineyard from his family in 1993, introducing the start organic and biodynamic farming. In 2002, the vineyard was certified organic, before full biodynamic Demeter certification in 2004. Organic and Biodynamic were essential for two reasons: first for his health and then to respect his terroirs. As a true minimalist Vincent’s guiding principle is “Trust in Nature”. He makes wine in tune with the power of the elements, with a feeling of being profoundly connected to the land. Inspired by local vignerons of the past from the village, insiders considering Gaudry's wines to be the most authentic expression of Sancerre. Although biodynamics is one of his pillars, Vincent continues to push boundaries by mixing pragmatism and intuition to pioneer new methods, which has earned him a following. The 9 hectare vineyard is composed of limestone and marl, 90% planted with Sauvignon Blanc and 10% with Pinot Noir. The vineyard averages vines of 40 years of age, planted by massal selection from a plot of 90 year old vines of old Sauvignon varieties. It gives berries of different size and maturity, which Vincent believes brings complexity in his wines. The grapes are all hand harvested in small baskets. In the winery, Vincent remains a traditionalist, shying away from trends he looks for balance between both varietal and terroir. The wines are fermented in temperature controlled stainless steel tanks, with native yeasts to allow the terroir and varietal expression to shine through. The wines are then aged on lees and are bottled unfined and unfiltered with the bottling date according to the lunar calendar. The result is precisely delineated wines with stony minerality, concentration, texture, weight, complexity and lengthy vibrant finish. Le Tournebride Sancerre This 30 years old vineyard is representative of the 3 Terroirs of Sancerre: the stony, rubble-like Kimmeridgian limestone (Caillottes) brings the aromatics, the clay-limestone or marl (Terres Blanches) brings the structure in the mouth and the flint (Silex) the length. The wines are vinified with natural yeast in stainless steel and oak. Each batch moves from one vessel to the other, before final blending and ageing on fine lees. The result is a wine with spice, texture and impressive length, with a mineral finish. Constellation du Scorpion Sancerre This wine is dedicated to the biodynamic memories of the elements and named for the scorpion sign, which is sharp like the Silex’s terroir where the vine are planted. The wine is vinified in oak, with time varying each year based on vintage conditions. Scorpion is best enjoyed after a few moments of air - after which it opens to a textured palate of almond, lime-flower and grapefruit. The mineral attack persists, with flint and earth flavours, grilled almond, dried pear, blood orange and apricot. The finish is saline, elegant, clean and long, with lingering white fruits. • Domaine Ludovic Bonnardot | Côte de Beaune | Mosaique Wines

Today, Domaine Bonnardot is farmed organically, Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. Their vineyards are located in Hautes Côtes de Beaune, Santenay, Maranges, Pommard, Chassagne Montrachet and Puligny Montrachet. DOMAINE LUDOVIC BONNARDOT Côte de Beaune, Burgundy Organic There are not too many teenagers who would choose to spend their days in the vineyard, let alone experimenting on their grandfather’s grapes with natural winemaking. But then again, Ludovic Bonnardot was not your average teenager. Burgundian born and bred, Ludovic now guides the winemaking at the family estate - Domaine Bonnardot, taking over from his parents in 2006. The estate covers 15-hectares with two operations: one centered in Santenay, the wine-growing focuses on Côte de Beaune and Hautes-Côtes de Beaune appellations, while blackcurrants (cassis), asparagus and cereals are grown in Bonnencontre near the family home, just south of Dijon. The polyculture approach is a reflection of the long heritage of winemaking in the family, which dates back to 1470. Throughout the centuries, it was (and arguably still is) essential to have year-round agricultural output to spread the risk of crop failure and ensure a source of income for the family. Ludovic’s interest in natural winemaking at an early age was influenced by his mother Elisabeth, the Domaine’s winemaker while he was growing up. Elisabth graduated her enology studies in Beaune, studying alongside and eventually interning with Jules Chauvet - who is considered to be the father of natural winemaking. As a result, Elisabeth’s approach to winemaking was very much shaped by Chauvet, and she began to practice more natural approaches to her winemaking with her Burgundies. Today, Domaine Bonnardot is farmed organically, with the conversion starting when Ludovic returned to the family lands after graduating his winemaking education. Ludovic believes this approach is key to revealing the best nuances of each site across 18 appellations and 50 plots, along with the practice of natural vinification with no addition of sulfur or oenological products during vinification and low to no addition at bottling. The vineyards include Hautes Côtes de Beaune ‘En Chaignot’ and ‘Sur Evelle’, Bourgogne Côte d’Or ‘Clos Botaveaux’ Monopole, Bourgogne Aligoté, Santenay ’Saint Jean’, Santenay 1er cru ‘Clos Rousseau’, Maranges ‘Sur le Bois’, Pommard, Chassagne Montrachet and Puligny Montrachet 1er ‘La Garenne’, with vineyards average age of 45 years old. Before the beginning of Spring, natural fertiliser made from vegetal or animal matter is added to the soils to bring life. Then all the vines are plowed to encourage the decomposition of the organic matter and aeration of the earth. From here until vintage, Ludovic and his brother Emilien tend to the vines with debudding, relevage and trimming. Once vintage arrives, plots are harvested by hand at their best maturity and bought into the winery for hand sorting. Vinification of the white grapes includes slowly pressing the whole bunches, with the must then put into oak barrels for a 12-18 month fermentation. The fermentations are natural, with no addition of sulfur or addition of oenological product. After natural settling in the barrel and light filtration, the whites are ready for bottling. The red wines range between 30% and 100% whole bunch inclusion, with the berries macerated in oak tanks between 20 and 180 days. Again there is no addition of sulfur or product, and fermentation occurs with indigenous yeast. After the pressurage the wines are put into oak barrels for up to 12 - 18 months aging. The reds are not fined or filtered before bottling, with low or no addition of sulfur. This sometimes generates a light deposit however doesn’t alter the quality of the wine. Domaine Bonnardot wines are fresh, vibrant and pure, reflecting the considered approach to farming and vinification to ensure transparency of place. We love how they express each site with a very minimal extraction or oak influence. Most of all we appreciate the rare value for money these wines offer - something we don’t see much of in Burgundy these days. We’ll drink to that! • Domaine Garon | Cote-Rotie | Mosaique Wines

Kevin and Fabien Garon farmed organically their vineyards and produce a range of spectacular Cotes du Rhone, IGP Collines Rhodaniennes Syrah, Cote Rotie, Saint Joseph as well as Condrieu and IGP Viognier. Domaine garon Cote-Rotie, Cotes du Rhone Organic non-certified We can all agree, Cote-Rotie in northern Rhone is one of, if not the spiritual home of Syrah. The Garon family certainly thinks so, having based themselves here, in Ampuis, since the 15th century. The family patriach Jean Garon was born here in 1475, battling hard times and growing grapes for a merchant (Guigal), along with farming fruit. Fast forward a few centuries to 1982, when Jean François and Carmen Garon replanted vines in the abandoned slopes of Cote-Rotie. "It wasn't bad for the vineyards to rest a hundred years between plantings" according to, Jean-Francois! In 2003, Jean-Francois' sons Kevin and Fabien joined the estate, taking the wines to yet another level. Kevin said “every year, the wine is different. A vintage is often full of memories, a bottle always captures a little bit of the story. In the Cote Rotie more than anywhere we can say that the wine is made in the vineyard, in the middle of the steep and dangerous terraces.” With about 8.3 hectares, the Garons farm the land organically and even use the horse. Weeding, like most of the vineyard work, is done by hand. This care taken in the vineyard is reflected in wines of great expression and personality. There is no over extraction, with gentle and long vinification bringing finesse. They are seeking a more Burgundian style of Côte-Rôtie. Cotes du Rhone “La Part des Vivants” A name which means the wine left for us to drink after the angel share. The grapes come from Ampuis area, declassified Cru Cairanne and also Rasteau fruits. Mostly de-stemmed, traditional vinification. 70% Syrah, 20% Grenache, 10% Carignan. Aged in very old barrels of 228 litres. Low sulphur. Black fruits, concentrated wild berries, spices, dark chocolate and a slight earthiness. Beautiful acidity and pure with a saline finish. “Les Grandes Parcelles” IGP Collines Rhodaniennes 100% Syrah, affectionately referred to as ababy Cote Rotie, sometimes including an amount of declassified fruit. Hand harvested, followed by traditional vinification. Elegant, intense with dark cherry, small berries, fine tannins, long balanced finish. La Sybarine A blend of 25 year old Syrah from plots on decomposed granite from the “Cote Rotie Blond area” (Lieu dit Goutay and Mollard). Handpicked, temperature controlled ferment ans roughly 80% destemmed. Daily punching down and pumping over during alcoholic fermentation, followed by 15 days maceration and 14 months in old French oak barrels. Aromas of blackberry and strawberry with violet, citrus notes as well as grilled bacon. Vibrant fruit on the palate, with rich and round with lush red fruits and blood orange notes lifted by good acidity. Approachable power, the finish is long with deep red fruit ending with a dark earthy minerality. Drink young and over the next ten years. The Garon also farm: Les Triotes (schist blond area), Les Rochins (Brune area next to La Landonne), Lancement and delicious white IGP Viognier and impressive Condrieu. "As I wrote last year, the running of Domaine Garon has passed largely to sons Kévin and Fabien Garon, who came on board at the domaine starting in 2003. While quality was reliable in the 2000s, since 2010, everything appears to have been on a steady upward trajectory, with the 2015 being the finest wines I've tasted from the estate, and magical wines produced in both 2017 and 2018. Lovers of pure, classical Côte Rôtie need to get on this estate's bandwagon ASAP!" - Jeb Dunnuck . Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Christine Dupuy was a game changer in the region. Domaine Labranche Laffont Madiran & Pacherenc du Vic Bilh, South-West France Organic certified Domaine Labranche Laffont is living proof that a tannic beast can be tamed by a woman’s touch. The wines of Madiran are often thought of as robust, with the Tannat grape throwing its significant weight around the palate. Enter Christine Dupuy, a game changer in the region, with a mission to fight the Tannat stereotype. Dupuy took over Domaine Labranche Laffont in 1993, becoming the youngest female winemaker in the region. The vineyard, located in the small commune of Maumusson-Laguian, has grown from 6 to 20 hectares under Dupuy’s guidance, with organically grown native varieties- including Tannat, Gros Manseng and Petit Manseng as well as Cabernet Franc and Cabernet Sauvignon. The estate is known as the keeper of hidden gems, as Christine is one of two winemakers in Madiran to own Tannat vines that date back to the pre-phylloxera era at the end of the 19th century (1870's). Trust us; they are a big, gnarly deal. The vines benefit from the silty clay and limestone soils, along with south - southeast facing, gentle hillsides around the domaine. The vineyard is certified 'ecocert', with Christine working mostly by hand in the vineyard. Soils are ploughed in Spring and Autumn; vines are fertilised using compost in the Autumn, and grass is left to grow between every second vine. Grapes are hand-harvested at perfect ripeness, before being sorted and de-stemmed. Fermentation is conducted in a temperature controlled vat with gentle pumping over for the reds. Malolactic and ageing occurs in old barrel, with a focus on minimal sulphites and lightly filtered (unfined) bottling. The red Madiran is deep, with aromas of spices, leather, and dark chocolate. The palate brings ripe, soft fruits and liquorice, and an elegant framework with fine tannins. It’s safe to say Dupuy has nailed her aim to produce approachable, elegant Tannat. These wines, much like their maker, have a natural ability to charm and leave you with a smile. In 1989, Davenne's journey in Chablis started, working for one of the region's star producers during 17 years, she gained an intimate knowledge of Chablis unique terroir and understanding of vintage styles. Then in 2005, Davenne set off on her own path to producing fantastic Chablis wines. clotilde davenne Chablis, Burgundy Organic non-certified Meeting Clotilde Davenne and trying all her wines from the Petit Chablis to her best Grand Cru vineyards made things very clear: she knows what she is doing. Clotilde was not from a wine family; her father was a humble farmer near the Morvan mountains. She learned how to make wine at school in 1986 and later travelled to California for vintage. In 1989, Davenne's journey in Chablis started, working for one of the region's star producers: Jean-Marc Brocard. During a incredible 17 years with mentor Brocard, she gained an intimate knowledge of unique terroir and understanding of vintage styles. Then in 2005, Davenne set off on her own path, starting with the 1.9-hectare plot of Petit Chablis called “Les Temps Perdu” (which mean the lost time). Despite locals telling her that this land was a waste of time, Davenne knew this vineyard had potential. The vines were lying on Kimmeridgian soils just like AOC Chablis terroir, only called “Petit” because of its exposition to the North. With growing self confidence, she started putting together a patchwork of vineyard expressing different grapes and terroirs, one plot of land at a time. It now includes a mosaic of beautiful vineyards: Bourgogne AOC, Petit Chablis, Chablis, Chablis 1er Cru (Vaucoupin, Montmains, Fourchaume, Vaillons) and Chablis Grand Cru (Bougros, Les Clos, Blanchots), as well as 100 year old Sauvignon Blanc from Saint-Bris and Pinot Noir from Irancy. Her gamble paid off, becoming one of Chablis rising stars thanks to her hard work and the purity of her wines. Clotilde was hugely honoured to be included in Jancis Robinson and Hugh Johnson 's "The World Atlas of Wine" for one of her best vineyards: Montmains 1er Cru Chablis. Now Davenne's 40 year old Chablis vines are located in the village of Courgis, south of Chablis. The vineyard is sheltered from winds, on a steep slope of Kimmeridgian with soil, peppered with fossilised oysters from when the sea covered the Paris basin150 million years ago. Clotilde farms her vineyard naturally, without the use of chemicals, with almost all of her production is harvested by hand. You won't find any oak barrel in her cellars however, as Clotilde is a big believer of stainless steel vinification for her Chablis, focusing on purity and terroir expression. All Davenne's wines undergo malolactic fermentation for complexity, with use of the lunar calendar for racking and bottling, then light filtration. The wines of Clos de Gamot are the humble benchmark of Malbec from this area, with the Jouffreau family passing winemaking traditions from father to son since 1610. There have been more than a few bumps along the way, yet the Jouffreau's had remained true to their vines, never abandoning their traditional grapes for trends and continuing to bottle wines when others in the region had defaulted. The philosophy of the Jouffreau family is simple: be good farmers. give things time, observe nature, be respectful. This approach has seen vines ageing back to 1885 still producing intense, great fruit. The vineyard is located on the second and third of the Lot river's terraces, composed of pebbles, gravel, and quartz mixed with alluvium of the Lot. With no use of herbicide, the workload on the vineyard is enormous. From a winemaking perspective, grapes are sorted when they join the cellar. Each plot is vinified separately, with gentle pumping over to keep a harmonious structure. Wine is aged for 18 to 24 months in old oak pungent with some 40 years old foudre (70hl and 100hl). Jean Jouffreau’s daughters and his son-in-law Yves Hermann have continued to lovingly care for the family vines, with Yves' son now joining the legacy. The tradition continues, with the focus on bottle maturation remaining. “A wine, like a person,” says Yves, “should have a personal story to tell over time.” With the range of vintages the estate offers, it is possible for consumers to affordably capture history in a glass. We’ll drink to that! Clos de Gamot is vibrant. Violet notes lead, with pure and fresh dark fruits, and approachable crunchy tannins. Skillful use of oak rounds out the package, with a long, persistent finish. Produced only for outstanding vintage, the Cuvee des Vignes Centenaires is made from +100 years old vines. After careful decanting, notes of plum abound, with generous concentrated ripe black fruits and subtle leather aromas. A wine to induce goosebumps on first sip. Old vintages from Gamot are bucket list wines. Older vintages such as 1978, 1988, 1990 are outstanding. The ability of Clos de Gamot wines to age and transform over time is exceptional. The vines are considerably aged across the board, averaging 50-60 years old, with some 135 year old beauties producing a tiny 800 bottles a year. Domaine DUSEIGNEUR Chateauneuf-du-Pape, Lirac, Cotes du Rhone Organic and Biodynamic certified ‘To receive and to pass on’, this is the mission statement driving Bernard Duseigneur and the team at Domaine Duseigneur. And walk the walk they do. The Duseigneur family relocated from Algeria in the 1960s, starting over in the Rhone Valley with ambition, with the patriarch Jean taking over abandoned plots and planting vines in Lirac. With not much money and children to feed, he set about working the land to improve the health of the soil and therefore the vines. It was this traditional approach to farming, coupled with a lack of funds to purchase chemicals, that set the Domaine out on an organic pathway from its inception. As per the family’s mission statement, the whole operation is driven by a desire to function harmoniously with their environment, honour the terroir and pass on the knowledge to future generations. Today, the Domaine is run by Jean’s son Bernard Duseigneur, who commands a total of 28 hectares, including nine in Chateauneuf with the remainder spread across the right bank in Lirac and Laudin. The vines are considerably aged across the board, averaging 50-60 years old, with some 135 year old beauties producing a tiny 800 bottles a year, Under Bernard’s stewardship, the Domaine began practising biodynamic techniques in 2002, with Ecocert certification three years later, furthering the dedication to the health of their vineyards. • Domaine Nicolas Mariotti Bindi | Corsica | Mosaique Wines

Nicolas Mariotti Bindi farmed organicaly fifteen hectares across several vineyards in Patrimonio, idyllically nestled between the Mediterranean sea and the Corsican mountains. The vineyards produce Niellucciu (aka Sangiovese) and Vermentinu (aka Vermentino), making wines for his premium Nicolas Mariotti Bindi Vin de France wines, along with the excellent entry level Cantina Di Torra AOP Patrimonio wines. DOMAINE nicolas Mariotti bindi Corsica Organic certified It’s all very well to leave Corsica for the bright lights of big city Paris, but once Corsica is in your veins, it’s only a matter of time before it calls you home. Such is the case for Nicolas Mariotti Bindi, who, while studying law decided that a life among the vines, and not the courtroom, was his true calling. Nicolas slowly made his way back to Corsica via a winding wine route, including Beaujolais. Once back on home soil, he sharpened his winemaking skills with local legends Antoine Arena, Domaine Leccia and Domaine Giudicelli. In 2007, he was fortunate to farm his first 5ha patch of vines thanks to the generosity of another local producer. Today, that patch has grown to fifteen hectares across several vineyards in Patrimonio, idyllically nestled between the Mediterranean sea and the Corsican mountains. The vineyards produce Niellucciu (aka Sangiovese) and Vermentinu (aka Vermentino), making wines for his premium Nicolas Mariotti Bindi Vin de France wines, along with the excellent entry level Cantina Di Torra AOP Patrimonio wines. Against normal convention, the Vin de France wines from this producer are more premium, with the classification due to high density vineyards, planted at 7,600 vines per hectare, which is outside AOP laws but provides more freedom in the vineyard. The climate in this region is quite unique, making for frosty mornings, early winters and humidity in the valley, all impacting the vineyards in different ways as they vary from 50 - 200m above sea level. This diversity in climate also extends to the vineyard terroir. The founding Porcellese massal vineyard planted in 1966 consists of old, low yielding (25lh/ha) Niellucciu bushvines, and sits on old alluvial and pebbles. The Mursaglia and Lumiu vineyards sit on clay and limestone terroir, with the Carcu vineyard a clay and limestone slope, facing north east with vines planted in 1970, 1995 and 2009. This last terroir is used for the Cantina di Torra wines. Bindi goes gently in his vineyards, careful not to overwork to avoid soil erosion, with low input of copper and sulphur in the vineyard. The care extends to handpicking the grapes, going into 500L boxes to preserve the berries, many of which are picked early to ensure signature liveliness in the end wines. In the winery, the white grapes are pressed in whole bunches before allowing to naturally ferment for up to one month. The wines are then held in stainless steel for 12 months on fine lees. Unusually for Corsica, the white wines also go through malolactic fermentation. The red grapes are de-stemmed in order to avoid bitterness, with cold maceration for 48 hours and a natural fermentation never exceeding one month. During this time, the juice will see light pumping over daily to wet the top of the tank, avoiding over extraction to create wines with finesse. None of the wines are filtered given the natural clarification over time. Perhaps it’s Mariotti’s training in law that has fostered a precision from the vineyard right through to the labelling - each wine has the exact percentage of alcohol and sulphur written on the label. The wines are also certified organic, however Bindi chooses not to advertise this on the bottles.. Nicolas’ wines are lively and incredibly pure. Delicious in their youth and also capable of ageing brilliantly, we recommend buying some for now, and some for later!
