    In 1992 Olivier was finally attracted back to the land of his ancestors, taking over the vineyard joining his brother Christian. Chitry is located 12 km south-west of the village of Chablis, in the North of Burgundy. Domaine Olivier Morin Chitry, Burgundy Organic non-certified The Domaine Morin has belonged to the Morin family since 1650, and even though the family was deeply rooted in winemaking, after studying wine in Beaune, Olivier pursued his own path far from the vines. He worked ten years as a radio announcer during the day and DJ at night. In 1992 Olivier was finally attracted back to the land of his ancestors, taking over the vineyard joining his brother Christian. Chitry is located 12 km south-west of the village of Chablis, in the North of Burgundy. Both Chitry and Chablis share similar Kimmeridgian limestone soils, as well as the grape variety with Chardonnay, so it's not a surprise that they make wine with a similar style! Domaine Morin is well and truly still a family run operation, with Olivier's wife Nelly joining the brothers in the pursuit of pure, character driven wine. The vineyard has now grown to 12 hectares, planted primarily with Chardonnay (50%), as well a Pinot Noir (25%) and Aligoté (25%). Most of these vineyards grow on picturesque rolling slopes, with old vines roots digging deep to express the minerality of Chitry's unique terroirs. Regarding viticulture, Morin respects a natural approach using natural compost as fertiliser, and a chemical/ herbicide free zone, allowing grass to grow between the vines. Soils are worked regularly, so the roots plunge deeply in the Kimmeridgian limestone soils. Regular cropping, detailed trellising, and systematically removing of buds are a few other manual works done at the vineyard, along with hand harvested of the grapes comes vintage time Additionally, all vinification is done with minimal sulphur added, using only natural yeasts and fermented in tank to preserve freshness and purity. Then the wines ages on lees in tank, and bottled with no filtration. Morin Chardonnay is energetic, precise with bright fruit and truly express the mineral soils found there. His Pinots show purity of fruit, with savoury notes - above all showing great character and value. In short, Olivier Morin produces spectacular wines for the money.     Just 30 mins north of Toulouse, some of France’s rarest vines are painstakingly nursed back from extinction by husband and wife team Diane and Philippe Cauvin. The pair is living their dream, crafting wines from a regional variety: Negrette, which is native to their area of Fronton. Diane took the reigns of the family estate after learning viticulture and completing a tour de force throughout French vineyards including Burgundy. The first and perhaps the most significant change was to step up the effort to preserve these rare vines by farming Chateau La Colombiere biodynamically in 2006. As the vines have been cultivated here in the same way since the 15th century, this was a significant change, to say the least. Add to this hand picking and sorting and you get the base to create something delicious. Terroir is composed mostly of gravel and sandy alluvial soils part of the Tarn river terraces. Colombiere's 25 years old vines share the space with some fantastic 70 year old Negrette vines. Every biodynamic preparation is prepared and dynamised on site, with the focus placed on activating life in the soils by using weeds, cereal cover and ploughing. The Cauvin's prefer a 'hands-off' winemaking style, considering their efforts are best directed at the vineyard. In the cellar, they use gravity to preserve the quality of the grapes.The grapes are hand harvested and hand sorted. For reds, grapes are then partially de-stemmed and lightly crushed before moving straight into cement vats. Diane and Philippe will maintain that it’s not rocket science. We think they’re pretty special though, and can drink these fresh and floral wines morning, noon and night…(responsibly).     Thierry Navarre is a bit of an icon in his region of Languedoc. He is widely regarded as one of the most respected natural winemakers in the area, best known for continuing his family’s dedication to resurrecting lost and ancient grape varietals. Thierry Navarre is a producer we have had in our mind for some years. We would check in every year to see if we might get a response but given he spends so much time in the vineyard, and not so much time in front of the phone or computer, it proved a difficult task. Finally, we saw a chance in March 2023 - Thierry would be at the La Dive a Bouteille Wine Fair, and so would Thomas on a flying trip to France. The trip was almost accounted for by the minute, and as the morning of the wine fair ticked by, Thierry was nowhere to be seen and Thomas needed to leave to go to another wine fair. Of course, just as Thomas was leaving, Thierry arrives already in deep conversation with someone else. Long story short, Thomas decides to be late (not a big drama for the French), and stay until he can finally meet Thierry - an encounter years in the making and instantly worth the wait. Thierry Navarre is a bit of an icon in his region of Languedoc. He is widely regarded as one of the most respected natural winemakers in the area, and his wines are celebrated for their depth, complexity, and terroir-driven flavours. Without question, Navarre is best known for continuing his family’s dedication to promoting diversity of grape varietals in the region, resurrecting lost and ancient grape varietals - most of which are lower in alcohol. Taking over from over the domaine's vineyards in 1988, Navarre is a man who lives in his vines - a patch of 15ha based in and around the picturesque village of Roquebrun (which incidentally is set to become a grand cru of Saint-Chinian). His vineyards are farmed organically and filled with a role call of both popular and yet to be discovered varieties including Œillades, Ribeyrenc, Syrah, Cinsault, Grenache noir, Carignan, Romorantin, Clairette, Grenache gris, Marsanne, Terret and Muscat à petit grains blanc. These vines have a southwest exposure, and combined with soils composed of loose brown schist, generally produce lighter, mineral driven, delicate, more elegant styles compared to the wines from further south in Saint-Chinian. His lower alcohol (11%) and brighter ‘Le Vin d’Oeillades’ (Cinsault’s cousin) and ‘Le Ribeyrenc’ are French sommelier favourites and considered a ‘best kept secret’. The grapes are hand harvested, with some fully or partially destemmed. Following a natural fermentation in cement tanks, some of the cuvees are vinified traditionally, while others are vinified with carbonic maceration. Ageing occurs in a mix of tanks, old 228 litre and 500 litre barrels and foudre for 12 months. The resulting wines are unfined, yet they are filtered and have low sulphur. Navarre’s intuition for winemaking and passion for history translate into wines sought out by true wine lovers, a discovery not to be missed that we couldn’t be more excited to share! These wines are then stored carefully in our temperature regulated warehouse. Up to the final delivery, we prevent the bottles from any possible damage for example light, high temperatures, fluctuation of temperature and vibration. Even though we aim to provide the best possible service, accidents can happen. If during the delivery, a bottle is broken by the courier we will replace it by the same wine or propose an alternative if we no longer stock the same wine or vintage. If the replacement doesn’t suit you, we are happy to refund the total amount of the bottle. If you believe your bottle of wine to be corked, we will need the corked bottle back with at least ¾ of the wine in the bottle and the original cork to assess the fault. If this is the case with your bottle, we will replace it or find the best alternative, if the corked wine is out of stock. The bottle must be sent back within 7 days of it being opened.   • Domaine Raphael Chopin | Beaujolais | Mosaique Wines

    Young Raphael Chopin is rapidly becoming one of the most promissing Beaujolais producer from his vineyard in Lantigné. In conversion to organic Raphael benefits from older vineyards including vines in Regnié and Morgon. Domaine Raphael Chopin Beaujolais Organic, in-conversion Beaujolais represents 18,000 hectares of vines, with this Beaujolais producer only farming 5 of them. Raphael Chopin, as humble as he is, shares an artistic talent just like his namesake. It was perhaps meant to be that he became a winemaker, auspiciously born on November 21st - the celebration of Beaujolais Nouveau. Add to this, winemaking was already in his blood, having a winemaker grandfather. With the encouragement of his mother and grandmother, Raphael proudly and painstakingly revived his grandfather's vineyard, restoring it to something rather special. After studying in France, Raphael dreamed of California, but vintage was at the same time as in Beaujolais, so Australia came naturally as the place to go for a vintage stint. He then returned to Beaujolais, bringing grandfather's estate back to life with the beautiful 2009 vintage. Chopin's original vineyard in Lantignié is a beautiful mix of 28 year old young vines, planted in 1989, as well as some rare older 110 year old vines planted in 1905, with 100% Gamay as the only red grape allowed in Beaujolais. It is from this La Savoye vineyard that the Beaujolais-Villages is made from. This pocket size vineyard produces just 11,000 bottles, with Lantigné’s vintners working on a project with the AOC board to become the 11th Beaujolais, Cru and the first Beaujolais Cru to be 100% certified. Extending the family holdings, Chopin now also own small holdings in Morgon and Régnié, creating wines to express these diverse terroirs. Raphael farm the vineyard organically, working towards certification. This means no use of chemicals, instead he uses essential oils, copper and limited levels of sulphur. He is tilling the soil, hand harvesting and sorting, essentially managing his small vineyard like he would a precious garden. The result is simply delicious, with purity of fruit as the trademark. Located just 20 minutes from Cahors, the estate has been run by generations of Gisbert vignerons since 1778, focused on making wine to be shared amongst good company (and preferably over long lunches). The vineyard is nestled between fields of sunflowers and fruit trees, with vines wrapping around the church of Saint Etienne- its bell tower keeping watch over the grapes. Making the best wine possible from sustainable vinification methods is primary for our family, sticking to tried and tested processes from generations past, in order to create balanced and elegant Cabernet Franc, Merlot, and Côt blends, as well as delicious Cabernet Franc and Rosé. Camille and son Roger knew they were on the right track as the land was cultivated for vines, finding multiple reminders of the Roman ambitions to also make wine on the site. The remnants of amphora, and of course the mosaics, continue to serve as a reminder of simple, yet effective, winemaking. The Coteaux du Quercy AOC is one of France's smallest wine region with only 400 hectares and less than 20 growers. After Phylloxera, Quercy, once 50 000 hectares, was almost destroyed. Roger Gisbert and his brave mates started their appellation from scratch. With high draining slopes of white clay and limestone soils, Cabernet Franc was chosen to blend with the Merlot, and of course the Côt (Malbec). Today, Benoit and Mathieu farm the vineyard sustainably, helped by the geographic situation of parcels on a protected south-east facing amphitheatre. Pruning is done with the moon like generation past, a grassy cover crop is left in every second row to reduce vigour and encourage competition, allowing lower yield. Rosé sec This rosé is dry, revealing notes of stone fruit, raspberry, and strawberry with a lovely texture. Rouge tradition This red blend is showing red fruits as well as darker forest berries and liquorice with generous ripe fruit. DOMAINE DES TROUILLERES Auvergne Organic certified Volcanic soils, it turns out, are destined to follow Mikael Hyvert wherever he goes. Perhaps they have a natural pull that keeps Hyvert coming back. Either way, from the volcanoes of Tahiti that filled his youth, to the dormant rises of Auvergne, there’s no questioning Hyvert’s passion for this landscape. Growing up in Tahiti with a French father, and a family friend in the wine import trade, it was only a matter of time before Mikael would come to discover the pleasures of wine. When looking for a career path after graduating high school, it would only take a gentle nudge to point him in the direction of Bordeaux, and enrolling in Blanquefort viticulture school. And from here, the rest, as they say, is history. The natural wine bug bit hard during this time, as Mikael became more and more focused on these techniques. A friendship forged in Bordeaux with a Loire local then resulted in Mikael seeking out legends from the region, including Olivier Lemasson, Herve Villemade and Thierry Puzelat to work with and learn from. After an eventful vintage experience in Chile, Hyvert made his way back to the fertile learning grounds of the Loire and Bordeaux before an opportunity to make his own wine presented itself. Plans were already brewing to move to Languedoc with his archaeologist girlfriend, Camille, however the right fit was proving hard to find. Fate intervened when Camille was offered a 12 month contract in the Auvergne. The volcanic landscape reminded Mikael of his childhood in Tahiti and it wasn’t long before the winemaking potential of the region became apparent. While finding his feet in Auvergne with different domaines, fate again intervened through a chance meeting with winemaker Jean-Pierre Pradier, founder of the AOC Cotes d’Auvergne and owner of Domaine des Trouilleres. The connection between the two was immediate, with shared views on organic farming facilitating a friendship that would later lead to Pradier finding his successor in Mikael in 2016. The region is technically part of the Loire, where Mikael had already spent much time, and while it’s not as well known as other areas of the Loire, Auvergne has a long, storied history of resistance spirit. In fact, it used to be one of the biggest wine regions in France, with 45,000ha under vine before a combination of Phylloxera and population movement decimated the region. Today, Auvergne is enjoying a renaissance with young, dynamic winemakers making the most of more affordable land and excellent growing conditions for organic wines. The climate tends to be a dry mediterranean one, with continental influence and a mountainous landscape to provide protection from inclement weather - ideal for minimal intervention farming. Domaine des Trouilleres produces gamay, chardonnay and pinot noir in this climate, on a tiny 5.8 ha situated between 380 - 500m altitude. This pocket size vineyard planted at 5,500 vines per ha makes only 35,000 bottles yearly, so we consider ourselves very lucky to get an allocation! In the winery, Mikael follows natural winemaking practices to complement the organic approach in the vineyard. This means no sulphur use during vinification, with a small amount only used during bottling. The resulting wines are honest, lively reflections of their volcanic terroir and highlight the dynamism of this young producer. Established in 2016, their objective is to make great value wines for wine lovers across the world, highlighting the appellations and grape varietals that contribute to the diversity and beauty of the Loire valley. Each of these producers have vineyards in all the corners of the Loire Valley region, they farm their vineyards and vinified each cuvee separately and collectively share the logistics and the sales of the wines. In true collective manner, they also share insights in to winemaking techniques, and seek feedback from each other on their wines. In fact, long lunches often accompany robust tastings - after all this is where their name comes from “Les Athletes du Vin”: the champion of the elbow rising (with moderation of course)! The ‘Athletes’ all share the same philosophy. Maximum care is taken with farming practices, which includes hand harvesting vines from 10 to 120 years old. In the winery, it’s all about minimal intervention, using natural yeast for fermentation, stainless steel, concrete and old oak along with minimum sulphur addition and light or no filtration depending of the cuvee. They aim to make delicious and real wine. What started as only 3 wines; a Sauvignon, Cabernet Franc and a Pinot Noir is now a range of 15 wines including Touraine to Chinon, Grolleau and Pineau d’Aunis. Naturally, a group of dynamic winemakers were set on creating wine labels to reflect the spirit of their endeavours. And when the time came, only one name would do - Michel Tolmer. Who else than Tolmer, brilliant cartoon creator of ‘Mimi, Fifi et Glouglou’, and leading illustrator for the French “Natural Wine” movement. His style and imagination made him the perfect choice to capture each of the grapes and appellations of the Loire Valley. The collective of “Athletes” include: Gérald is based in Saint Nicolas de Bourgueil, where he makes AOC wines Cabernet Franc from Chinon and Saint Nicolas de Bourgueil. He also produces Sauvignon Blanc, Chenin Blanc and Pinot Noir from Touraine. Florent in the Saint-Pourçain area produces Chardonnay and Gamay, an area stylistically close to Beaujolais. Jean-Pierre in the Côte de Grand-Lieu in Muscadet area produces ‘Mumu-Chardonnay’, a blend of Melon de Bourgogne and Chardonnay. Antoine is based in Menetou-Salon and produces a Pinot Noir and a Sauvignon Blanc Sylvain makes the Coteaux du Layon Marius the Pouilly-Fumé Jean-François in Touraine makes the Pineau d’Aunis Nicolas the Saumur-Champigny Victor the Grolleau.     Jean-Marc and his mother run the show and farm 'their hill' together. The 9 hectares of vines and farm have been owned by the family since the early 1900s. Organic farming has been the norm here from 2007, certified biodynamic since 2010. camin larredya Jurancon, South-West France Organic and biodynamic certified Jurançon near the city of Pau is a special place for many reasons. It’s simply one of the most beautiful French vineyards, with steep slopes and scenic landscape, including the towering, often snow-covered, Pyrenees in the background. Jurançon is a pocket-size appellation of about 1,000 hectares farmed by 100 producers. Producing only white wine, it is historically known for late-harvest sweet wine or 'moelleux'. However dry white Jurançon wine was recognised with a separate AOC in 1975, known as 'Jurançon sec'. Dry Jurançon can be among the best whites you'll ever taste, particularly in the hands of a legend like Didier Dagueneau who helped to put Jurançon on the map. Today Jean-Marc Grussaute from Camin Larredya is one of the leading force and gaining plenty of fans among the sommelier community in France. Jean-Marc and his mother run the show and farm 'their hill' together. The 9 hectares of vines and farm have been owned by the family since the early 1900s, with most of the current vines were planted in 1970s by Jean-Marc’s father. Organic farming has been the norm here from 2007 onwards, certified in 2010 and turning to biodynmaic farming in 2016. The vineyard is classically local in varietal plantings: 65% Petit Manseng, 27% Gros Manseng, 8% Petit Courbu and Camaralet. The vineyard sits at 300m altitude, with soils of silica-clay and subsoils of puddingstone. Precision is life here, every action serves the "purpose of the terroir and its continuity", according to Jean-Marc, who respects the soil’s health and its life. It's essential for him that the roots go deep to express the terroirs in the final wine. Jean-Marc works the soils, grow cereals or pulses in between the rows, and uses natural compost when needed. The singularity and honesty of his wines come from permanent attention. "La Part Davant", or oriental part is a Jurançon Sec blend of Gros Manseng, Petit Manseng and some Petit Courbu. Skin contact at first, the must ferments with natural yeast, moving with the temperature of the cellar and vitality of the fermentation. Then fermentation and ageing on lees for at least 8 months in barrels and foudres. Ageing takes place in barrel and foudres, with batonage to snap the lees back in suspension. The wine is then left to rest and evolve in the cool cellars. Intense on the nose, with beautiful notes of white peach, yeasty and toasty character. On the palate, it's all about the lively texture and fleshy white fruits as well as orange and citrus notes, with an elegant driven acidity and long mineral finish.     Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of Petit Manseng. Clos Joliette is truly a myth, some said of Joliette it's “better than Yquem”. Clos Joliette is considered one of those wines one must try in a lifetime, and we are honoured to bring them to Australia. CLOS JOLIETTE Jurancon, South-West France Organic We won’t deny it, wine folk from the South West of France, like Mosaique founder Thomas, will always champion the region and consider its producers as the best. In the case of Clos Joliette, however, it’s hard to disagree - especially when it’s been lauded as “better than Yquem”, by La Revue des Vins de France. Regarded as one of the premier producers in Jurançon, Clos Joliette was founded in 1929, when the Migne family cleared forest in a natural southeast-facing amphitheater to plant a hectare of vines. Going against the grain at the time, the Mignes planted Petit Manseng, rather than the more popular Gros Manseng, and slowly built a modest local following selling their wines for little more than two francs in the old money. Like all good things, it’s hard to keep a lid on it, and before long this niche producer became known as the best in the region and is still revered by some of the world’s best winemakers (in fact, legend has it the late Didier Dagueneau trespassed into the vineyard in the middle of the night to take cuttings to propagate for his own Jurançon estate, Les Jardins de Babylone). Still, with limited income due to the inexpensive bottle price, investment in the property and the vines was minimal. When Maurice Migne, Clos Juliette proprietor throughout the 1960s and 1970s passed away, his widow Jeanne continued production of the wines - although it must be noted that no records exist of how the Mignes farmed the land or made their wine. She was known to be the archetypal picture of a French paysan, always attired in her traditional black apron, under which she tied her leather satchel stuffed with wads of money. In 1989, Jeanne Migne passed away, and with nobody in the family interested in continuing the estate, the vineyard was auctioned off around 1990 or 1991. The Mignes’ son, who was in the car business, sold off the cellar of old vintages, which is why old bottles are incredibly rare (and those you can find now fetch hundreds of euros whenever they come up at auction). There were a few interested parties, including fellow Jurançon winemaker Charles Hours and actor Gérard Depardieu, who had visited the domaine several times and was suitably charmed. Most predicted that Hours would buy the estate; however, the successful bidder was Parisian caviste Michel Renaud. Rather than continuing the legacy, Renaud treated Clos Joliette as a part-time hobby, using pickers from his Armagnac vineyard to conduct the harvest; leaving barrels for five years without racking and topping them up only if necessary; then selling only a fraction of the production to a few friends and cellaring the remainder. Renaud died in 2015, leaving a wife, a daughter and her half-brother. As with all things administrative in France, inheritance laws are complicated so once again the fate of the domaine was in jeopardy. It became widely known that Clos Joliette was for sale, though despite its niche fame, there was no queue of prospective buyers - a situation that remains today. But what of the grapes? Vines don’t just stop growing! Once again, the spirit of the South West has prevailed. Our dear friend Jean-Marc Grussaute from Camin Larredya, also Jurançon, was offered the chance to farm and vinify Clos Joliette 2016 and 2017 vintages, side by side with his wines. Jean-Marc and his winemaker friends from the collective “A Bisto de Nas” (including Christine Dupuy who we represent) were able to buy all the barrels from 2010, 2012, 2013 in addition to the 2016 and 2017, all farmed and vinified themselves. The result has been an incredible selection of complex and aromatic off-dry wines, reflecting the reputation Antoine Gerbelle bestowed on the domaine as “the Romanee Conti of the South-West France”. What makes these wines so sought after is the combination of three unique aspects. First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). The vines were planted in 1929 by Madame Migné and exposed to the East and South-East in a natural amphitheater, allowing the grapes to capture the gentle morning sun, rather than afternoon heat. Second, an atypical terroir made of clay-silica, pudding stones, Ponto-Pliocene pebbles and crossed through by a vein of iron. Third, the wine itself - a single varietal 100% Petit Manseng, treated with minimal intervention throughout vinification, no fining or filtration, and long aging in oak barrels for 4 to 6 years. We might add a fourth aspect, being the mystic. There’s little to be said about this wine across the vastness of the internet. They are prized wines, with only 1000 bottles produced each year, sitting firmly in the ‘if you know, you know’ category.     The Domaine is run by Jean’s son Bernard Duseigneur, who commands a total of 28 hectares, including nine in Chateauneuf with the remainder spread across the right bank in Lirac and Laudin. The vines are considerably aged across the board, averaging 50-60 years old, with some 135 year old beauties producing a tiny 800 bottles a year. Domaine DUSEIGNEUR Chateauneuf-du-Pape, Lirac, Cotes du Rhone Organic and Biodynamic certified ‘To receive and to pass on’, this is the mission statement driving Bernard Duseigneur and the team at Domaine Duseigneur. And walk the walk they do. The Duseigneur family relocated from Algeria in the 1960s, starting over in the Rhone Valley with ambition, with the patriarch Jean taking over abandoned plots and planting vines in Lirac. With not much money and children to feed, he set about working the land to improve the health of the soil and therefore the vines. It was this traditional approach to farming, coupled with a lack of funds to purchase chemicals, that set the Domaine out on an organic pathway from its inception. As per the family’s mission statement, the whole operation is driven by a desire to function harmoniously with their environment, honour the terroir and pass on the knowledge to future generations. Today, the Domaine is run by Jean’s son Bernard Duseigneur, who commands a total of 28 hectares, including nine in Chateauneuf with the remainder spread across the right bank in Lirac and Laudin.
