Aromatics: Notes of blackberry, blackcurrant, and hints of violets, with subtle leather and earthiness.
Palate: Intense black fruit, earth, and herb notes with good tannins and a refined mineral finish. The 2011 vintage is balanced with good freshness and ageing potential.
About the wine: From a winemaking perspective, grapes are sorted when they join the cellar. Each plot is vinified separately, with gentle pumping over to keep a harmonious structure. Wine is aged for 18 to 24 months in old oak pungent with 40 years old foudre (70hl and 100hl).
When to drink: Now or in the next 20 years after vintage.
Service: 15 - 16 degrees C. Cabernet glass. Decant for 30 min when drinking in its youth.
Food match: Grilled red meats, especially duck.
