Jeb Dunnuck: Review
Category: Medium bodied red.
Appellation: AOC Cote-Rhotie (Northern Rhone region)
Grape: Syrah (100%)
Farming: Organic (Not certified)
About the wine: La Sybarine is a blend of 25 years old Syrah from plots on decomposed granite from the “Cote Rotie Blond area” (Lieu dit Goutay and Mollard), 9 000 vines per hectares. Handpicked, temperature controlled, 80% destemmed. Daily punching down and pumping over during alcoholic fermentation. 15 days maceration. Aged 14 months in old French oak barrels.
Taste like: Aromas of blackberry and strawberry with violet, citrus notes as well as grilled bacon. Palate; high tone vibrant fruit, rich and round with lush red fruits, blood orange and floral notes, lifted by good acidity. Approachable power, spice, the finish is long with deep red fruit ending with a dark earthy minerality. Drink young and over the next ten years.
When to drink: Drink now or in the next 10 to 15 years.
Service: 14-15 degrees. Cabernet glass. Decant for 30 min to 1 hour.
Food match: Slow cooked meat dish, grilled meat with roast vegetable, meat stew.
