About the wine: South facing, 38 year old vines planted in 1983 in the village of Courgis next door to the winery in Prehy. Terroir of Kimmeridgien from Jurassic era, full of small fossilized oysters from the time when the sea covered the Paris Basin. Aged in tanks 8 to 12 months on lees. No oak.
When to drink: Drink now or in the next 10 years after vintage.
Service: 8 to 10 C degrees in large Burgundy glass.
Food match: Oyster, sushi, goat cheese, smoked trout or pungent washed-rind cheeses.
