Aromatics: Notes of white flowers (hawthorn, acacia) mixed with citrus and grapefruit with a mineral, flinty edge.
Palate: The palate is lively, crisp with aromas of peach, white fleshy fruit and lovely roundness. Salty and mineral, this Petit Chablis has plenty of length and vibrancy.
About the wine: No one wanted to buy this land in the 90's: it was far too steep! Clotilde knew this place had potential because of the kimmeridgien limestone terroir usually reserved to higher level Chablis and 1er Cru. The only reason it's considered Petit Chablis is due to its northern exposition, however full ripening is not an issue these days! This is truly a unique flavourful Petit Chablis amongst the very best at this level. On lees until bottling. Unoaked.
When to drink: Drink now or in the next 3-4 years.
Service: 8 to 10 C degrees in large burgundy glass.
Food match: Enjoy with a cheese platter with goat cheese and washed-rind cheeses.
