Aromatics: White flowers, green apple, ripe quince, pear and lime, as well as complex smoky and slightly oxidative notes.
Palate: The palate is energetic and vibrant with a beautiful texture, notes of ripe green apple and stone fruits. The minerality of ‘Pierres Blanches’ terroir (limestone) is showing on the finish as well as a certain saltiness and savouriness calling for more.
About the wine: Clay and limestone terroir. Low yield. Hand-picked. In the winery, aged in barrel and foudre for 8 to 12 months on the lees, with malolactic fermentation. Natural winemaking. Low sulphur at bottling.
When to drink: Drink now and in the next 4 years.
Service: 10 to 12 degrees.
Food match: Seafood, salads, roasted poultry, raclette, alpine cheeses!
