Aromatics: Fresh green apple, white peach, and a subtle spiciness or floral notes as well as a yeasty or "sourdough bread" notes. 

 

Palate: This wine is crisp and lively with fine bubbles. The flavors on the palate mirror the aromas on the nose, with a focus on green apple and citrus. The texture is soft and delicate with a vibrant clean and refreshing finish. 

 

About the wine: Mauzac and Ondenc, two unique and native varieties of the Gaillac region. This sparkling wine from the Gaillac region, is made using the ancestral method. This means the wine is bottled before the first fermentation is complete, allowing the remaining natural yeasts to create the bubbles in the bottle. Handpicked, natural fermentation and ageing in tanks on lees.

 

When to drink: Drink now or in the next 3-4 years.

 

Service: 10 to 12 degrees C.

 

Food match: Fish dishes, yum cha, white meats or fresh goat cheese.
