About the wine: Mauzac and Ondenc, two unique and native varieties of the Gaillac region. This sparkling wine from the Gaillac region, is made using the ancestral method. This means the wine is bottled before the first fermentation is complete, allowing the remaining natural yeasts to create the bubbles in the bottle. Handpicked, natural fermentation and ageing in tanks on lees.
