About the wine: A naturally made wine. Fifteen days of maceration, with pumping over and manual punching down. A percentage of 20% press wine aged in Amphora is blended with the final wine, before ageing in concrete for 18 months. No filtration and low sulphur at bottling.
Aromatics: Bright red fruits, strawberries, blueberries and fresh blackberries.
Palate: A medium bodied red, with a beautiful mid palate filled with strawberries and blueberries. No rusticity here just purity and full expression of Gaillac’s lesser known grape varietals. This is a vibrant wine filled with happiness!
When to drink: Now or in the first 3-4 years.
Service: Slightly chilled or 10-12 degrees C.
Food match: Burger, classic spaghetti bolognese, charcuterie or grilled red meats.
