Aromatics: Yeasty lees character with lovely notes of apple, pear, quince, hazelnut and brioche.
Palate: Vibrant and textural Chenin sparkling with a generous mouthfeel and a delicious tension. Notes of quince, pear and apple with a long driven mineral finish.
About the wine: Julien Pinon is renown for his sparkling wines which represent 1/3 of his production. From vines averaging 45 years old on clay and limestone, 6,600 vines per hectare, low yield 20hl per hectare, the grapes are hand harvested, fermentation last for 4 to 5 weeks with natural yeast and no chaptalisation. The based wine is aged on lies for 2 to 3 months in tanks and old barrels. This beautiful Brut Nature vintage sparkling (Methode traditionelle) is then aged 3 years in bottles on lattes before being disgorged with no added dosage. This is as good as a number of Champagne. A must try for all French sparkling lovers!
When to drink: Ready to drink now or 6-8 years after vintage.
Service: 10-12 degrees.
Food match: Great for aperitif with a few cheesy gougere, with grilled fish or poultry. Also nice with a brioche. It would also pair well with fresh cheese.
