Aromatics: Fresh and vibrant Bourgogne blanc, with notes of citrus, apple, white flowers; acacia and hawthorn.
Palate: Elegant and mineral Chardonnay, expect a lovely roundness and tension without the creaminess of some white Burgundy. White fruits and citrus notes on the palate with an energetic mineral finish.
About the wine: 35 years old vines, 10,000 vines per hectare, 35 hl per hectare. An average of 2,500 bottles are produced each year. The grapes are hand harvested, natural yeasts, alcoholic fermentation and malolactic fermentation in old French oak barrels (2 to 4 years old) Bottled after at least 10 months aging on the lees, no batonage.
When to drink: Ready to drink now or after 4 years.
Service: 10 degrees, Chardonnay glass.
