About the wine: This wine is a blend of several grapes, grown across two vintages. Handpicked, the Gewurztraminer and Auxerrois grow on clay and limestone, with the Riesling, Muscat and skin contact Sylvaner grown on marl and limestone. In the winery, natural yeast is used, along with malolactic fermentation. The finish wines are then blended and aged on lees in old foudres. Rohrer always keeps some wine from previous vintage for this cuvee to mimic a solera like perpetuity.

When to drink: Drink now or in the next 5-6 years.

Service: 10 to 12 degrees C.

Food match: Fish dishes, yum cha, white meats or fresh goat cheese.
