About the wine: Top notch sparkling, would easily compare with examples from neighbouring Champagne. Clotilde makes her Cremant de Bourgogne using the "Methode Traditionnel" like the Champenois, and the result is simply beautiful. In the winery, this wine spends 18 months on lees, before being disgorged. No dosage. Serious stuff.
