Aromatics: Complex mix of ripe red fruit (raspberry, strawberry), blackcurrant, blueberry, and spicy notes with hints of floral, violet and cherry.
Palate: Powerful and elegant Cabernet Franc, showing with beauty the concentration thanks to the very old vines (80 years old). Structured and balance palate with fine-grained tannins, delicious notes of ripe blackcurrant, red berry, spices and earthy minerality. Fantastic length and tension.
About the wine: 80 years old vines on limestone and silt from 3 single vineyards in Dampierre sur Loire. These vineyard were given to Jean-Pierre Chevalier from his father. Manual harvesting with small crates used to preserve fruit integrity. Cold maceration for four days prior to fermentation. Fermentation temperature control (25°C). Total vatting time of approximately 28 days. Matured for 14 months, with 50% in 12-hectolitre wooden vats and 50% in 600-litre wooden casks.

Service: 12 to 16 degrees C.
