Palate: Medium bodied red, ripe black fruits, this is a vibrant Cabernet Sauvignon like no other, with soft velvety tannins and a hint of mint on the finish.
About the wine: Sister winemakers Sylvie and Marie Courselle took their time to put their feet up, to look up, and ponder the moon and the stars, exploring the mysterious yet natural universe and its cyclical timing. Temps de Lune is harvested and vinified while taking into account the biodynamic lunar calendar and favouring ‘Fruit Days’. This is said to emphasize the aromatics of the wine. In every other respect, they have crafted this 100% Cabernet Sauvignon with minimal intervention, in small concrete vats, without adding any sulphur.
When to drink: Drink now in the next 3 years after vintage.
Service: 12 degrees or slightly chilled.
Food match: Marie suggests cured meats, shoulder of lamb, or vegetable lasagne. Sylvie enjoys this wine with red meats accompanied by a bilberry sauce, and perhaps even try the combination of a chocolate fondant and blackcurrant ice cream.
