Appellation: Sancerre (Loire region)
Grapes: Sauvignon Blanc (100%)
Farming: Organic and Biodynamic certified.
Aromatics: Stony mineral notes, spices mixed with ripe pears and quinces.
Palate: A powerful and authentic Sancerre Sauvignon Blanc. Spices, rich fleshy texture, and white fruits matching the aromatics. This wine has an impressive drive and energy. The finish is long and saline.
About the wine: Massal selection vines planted on flint terroir (Silex). The wine is made traditionally, aged in small old foudres for no specific length of time, with regular tasting and know-how from the ancestors dictating when to rack the wine and bottle. Low intervention.
When to drink: Drink now or in the next 6-8 years.
Service: 8 degrees C.
Food match: Fish in sauce, white meats and fresh Loire-style goat cheese.
